I love bread, but am gluten-intolerant. This recipe gives you all the taste and none of the gluten!

- Preheat oven to 400 degrees F (200 degrees C). Grease an 8-inch square pan.
- Mix cornmeal, sugar, flour, and baking powder together in a bowl.
- Whisk milk, butter, and egg together in another bowl. Stir into cornmeal mixture just until combined and some lumps remain. Fold in corn. Pour batter into the pan and smooth out the top.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

- Preheat the oven to 400 degrees F.
- For the chorizo: In a large cast-iron skillet over medium heat, add the butter, chorizo, onion and garlic. Cook, stirring to keep the onions from browning, until the chorizo is cooked through and broken down to resemble ground meat, about 10 minutes.
- For the cornmeal: Into the skillet with the chorizo, add the milk, buttermilk and cornmeal. Bring to a simmer while whisking, to keep the cornmeal from clumping or sticking in the corners. When the liquid begins to thicken, turn off the heat and continue to stir until the mixture is the texture of loose grits.
- In a medium bowl, whisk the eggs while very slowly adding a bit of the cornmeal mixture. Whisk vigorously to combine and then feel the outside of the bowl. If it's not warm, add a bit more of the cornmeal mixture while continuously whisking; keep adding the cornmeal mixture until the eggs are just as warm as the cornmeal mixture. Then, reversing the order, slowly pour the egg mixture into the cornmeal mixture, whisking vigorously. Add the Cheddar, mozzarella, corn, chopped tomatoes and chiles and scallions to the skillet and stir to combine.
- Bake until the edges are golden brown and the center is set, 35 to 40 minutes.
GLUTEN FREE CORN SPOON BREAD RECIPE - (3/5)

- 1.Preheat the oven to 375F. Butter a 9″ x 6″ or equivalent baking dish and set aside. 2.Heat the butter in a 4-quart saucepan over medium low heat. Cook the onions for 5 - 8 minutes, until soft. 3.Add the salt, pepper, milk, and corn. Heat until very hot but not boiling. 4.Add the cornmeal and whisk constantly until thick. Remove from heat and let cool for 10 minutes. 5.Once cool, transfer to a medium bowl and whisk into the egg yolks. 6.In a separate bowl, beat the egg whites until they reach the soft peak stage. 7.Stir 1/4 of the egg whites directly into the cornmeal mixture. 8.Fold the remaining egg whites into the cornmeal mixture in 2 to 3 additions. 9.Transfer to the prepared baking dish. 10.Bake for 30 - 35 minutes, until the center of the spoon bread is set. 11.Let cool for several minutes before serving.
GLUTEN FREE CORNBREAD
This cake like corn bread is so delicious, you won't be able to stop at one piece. This recipe is a favorite in my family. It adds a special touch to any lunch or dinner. One of my favorite lunches is soup with a piece of this cornbread. It is just as good and in my opinion better than the wheat containing corn breads that I have tried, before becoming diagnosed with Celiac Disease. It will definelty help add a special touch to your families favourite gluten free dinner!

- Preheat oven to 400 degrees. Grease 8" square pan.
- In a mixing bowl, whisk together the dry ingredients. Set aside.
- In a smaller bowl, blend the yogurt, beaten eggs, melted margarine, and orange juice.

- Heat oven to 350°F. Grease 12 (6-oz) ramekins (individual baking dishes) with butter.
- In large bowl, stir together cornmeal mix, flour, sugar and salt; make well in center of mixture. In another bowl, stir together corn, yogurt, melted butter, 1/4 cup chives, the parsley, thyme and eggs; add to cornmeal mixture, stirring just until dry ingredients are moistened. Divide mixture evenly among ramekins. Place ramekins on large cookie sheet.

- Preheat oven to 300 degrees fahrenheit. Lightly grease a 9x13-inch baking dish or, better yet, a 12-inch cast iron skillet. In a large bowl, beat together butter and sugar. Beat in eggs one at a time. Blend in creamed corn, chiles, Monterey Jack and Cheddar cheese. In a separate bowl, stir together flour, cornmeal, baking powder, and salt. PERFECT GLUTEN-FREE CORN BREAD
This recipe was adapted from one of my favorite cookbook authors, the late Sheila Lukins. I converted her recipe to gluten-free. It is creamy on the inside, but with a crispy crust, and an intense corn flavor.

- Preheat oven to 400°F Grease an 8-inch square pan.
- Combine the cornmeal, millet flour, potato starch, cornstarch, sugar, baking powder, salt, xanthan gum in a mixing bowl. Stir well.
- In another bowl, combine the milk, yogurt, melted butter, oil and eggs. Add this to the cornmeal mixture and stir until just combined. Then stir in the creamed corn.
- Scrape the batter into the prepared pan, and bake in the center of the oven until the top is golden brown and a toothpick inserted in the center comes out clean, 45 minutes.
- Cool in the pan on a rack for 15-20 minutes. Then remove the cornbread from the pan and let it cool completely on a wire rack. Cut into squares and serve.

- Start by heavily greasing either a 9x9x2 inch baking pan or a 9 inch round glass baking container. Preheat oven to 425 degrees F.
- In mixing bowl stir together everything, but the milk and eggs. Beat together the eggs and milk in a separate bowl.
