  • Cook 10 ounces chopped white mushrooms in olive oil in a large nonstick skillet over medium-high heat until golden, 8 to 10 minutes, stirring halfway through. Stir in 1 teaspoon soy sauce, 2 grated garlic cloves and 1/2 teaspoon lemon zest; transfer to a bowl. Add 1 tablespoon olive oil and a 12-ounce package refrigerated gnocchi to the skillet. Cook, stirring, until crisp, 5 minutes. Stir in the mushrooms and 1/4 cup chopped parsley. Season with salt and pepper.

Steps:

  • Cook gnocchi according to package directions. Meanwhile, in a large cast-iron skillet, saute mushrooms and onion in butter until tender., Drain gnocchi. Add the gnocchi, salt, Italian seasoning and pepper flakes to the skillet; heat through. Sprinkle with cheese.

2 cups all-purpose flour, plus more for dusting
2 pounds Yukon Gold or russet potatoes
3 tablespoons coarse salt
2 large eggs
1/4 teaspoon freshly ground black pepper
Olive oil, for brushing
3 tablespoons extra-virgin olive oil, plus more for brushing
1 tablespoon coarse salt, plus more for seasoning
1 cup heavy cream
1 cup homemade or store-bought low-sodium vegetable stock
4 ounces Gorgonzola cheese
Pinch of freshly grated nutmeg
Pinch of cayenne pepper
12 ounces assorted mushrooms, such as chanterelle, cremini, and portobello, stemmed and coarsely chopped

Steps:

  • Make the gnocchi: Lightly flour a baking sheet. Put potatoes in a large saucepan; cover with cold water by 2 inches. Bring to a boil; add 1 tablespoon salt. Reduce to a simmer; cook until potatoes are very tender when pierced with a sharp knife, about 25 minutes.
  • Drain potatoes. When they are just cool enough to handle, peel, and then pass through a ricer or food mill into a medium bowl. Sprinkle with flour, and add eggs. Season with black pepper and 1 tablespoon salt. Stir mixture with a fork to combine.
  • Turn out dough onto a lightly floured surface; gently knead until it is soft and smooth, about 3 minutes. Divide dough into 4 to 6 equal pieces. Roll each piece into a long rope about 3/4 inch thick. Cut ropes crosswise into 1-inch gnocchi.
  • Roll a cut side of each dumpling against the tines of a fork with your thumb so each piece has ridges on 1 side and an indentation on the other. Place on the floured baking sheet until ready to cook (up to 12 hours in the refrigerator, uncovered).
  • Lightly brush a rimmed baking sheet with oil. Bring a large pot of water to a boil; add 1 tablespoon salt. Add half the gnocchi; when they rise to the top (after about 2 minutes), continue to cook until tender, about 15 seconds more. Transfer gnocchi with a slotted spoon to the oiled baking sheet. Repeat process with remaining gnocchi. (The cooked gnocchi can be tossed in oil and stored, in an airtight container, in the refrigerator up to 24 hours.)
  • Make the sauce: Bring cream and stock to a boil in a large saucepan over medium-high. Reduce heat, and let mixture simmer until slightly thickened and reduced by 1/3, about 10 minutes. Add Gorgonzola; stir until melted. Stir in nutmeg and cayenne. Season with salt and black pepper. Remove from heat; cover to keep warm.
  • Heat oil in a large skillet over medium until hot but not smoking. Add mushrooms, and cook, stirring occasionally, until they are tender and their released liquid has evaporated, about 4 minutes. Add gnocchi; cook, stirring gently, until just heated through. Pour cheese sauce over gnocchi and toss gently to coat evenly. Serve immediately.

Gnocchi:
1 1/2 pounds russet potatoes (about 2 medium)
1 large egg yolk
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Pinch of grated nutmeg
7 tablespoons (about) all purpose flour
Mushroom Sauce:
2 tablespoons (1/4 stick) butter
2 tablespoons olive oil
12 ounces fresh shiitake mushrooms, stemmed, sliced
1/2 cup sliced shallots
1 3/4 cups chicken stock or canned low-salt chicken broth
1 tablespoon chopped fresh sage
3 cups coarsely chopped arugula
1/2 teaspoon (about) white truffle oil (optional)*
1/3 cup grated Parmesan cheese
*Available at Italian markets, specialty foods stores and some supermarkets.

Steps:

  • For gnocchi:
  • Preheat oven to 450°F. Pierce potatoes with fork. Bake until tender, about 1 hour. Cool slightly; cut potatoes in half and scoop pulp into large bowl. Mash potatoes well. Mix in egg yolk, salt, pepper and nutmeg. Mix in enough flour to form firm, slightly elastic dough. Turn out onto lightly floured surface. Divide dough into 4 equal portions. Gently roll 1 portion between hands and work surface to form 1/2-inch-thick rope about 18 inches long. Cut crosswise into 1/2-inch pieces. Roll each piece over tines of dinner fork to make grooves in gnocchi. Arrange gnocchi in single layer on floured baking sheet. Repeat with remaining 3 portions of dough.
  • Working in small batches, cook gnocchi in large pot of boiling salted water until gnocchi rise to top and are tender, about 5 minutes. Using slotted spoon, transfer gnocchi to large baking pan. (Gnocchi can be prepared ahead. Let stand 1 hour at room temperature, or cover and refrigerate up to 2 days.)
  • For mushroom sauce:
  • Cook butter and olive oil in heavy large skillet over medium heat until butter begins to brown, about 2 minutes. Add mushrooms and shallots and sauté until golden brown, about 10 minutes. Add stock and sage; simmer until liquid is slightly reduced, about 8 minutes. Season to taste with salt and pepper.
  • Add gnocchi to sauce in skillet and cook until heated through, about 1 minute. Add arugula and stir until wilted. Divide equally among bowls. Drizzle with truffle oil, if desired. Sprinkle with cheese.

Beautiful golden gnocchi stuffed with tender shiitake mushrooms, caramelized onions and shaved truffle, served in a quick white wine and coconut cream sauce. Need I say more? Oh, and they're vegan!

Number Of Ingredients 18

½ cup dry white wine
Coconut milk full fat 120ml
Splash of balsamic vinegar
5 g truffle
Salt to taste
Black pepper, freshly ground, to taste
2 tbsp olive oil
3 finely sliced medium onions, slices chopped into four
2 pinches of baking soda, about 1/8th teaspoon
300 g shiitake mushrooms
2 cloves minced garlic
¼ tsp salt
10 g truffle
500 g potatoes, peeled and cooked
1 cup plain white flour, scant (100 - 120 grams)
1 tsp salt
½ tsp garlic granules/powder optional
1 tbsp olive oil

Steps:

  • Rice or finely grate the potatoes. Add in the salt and garlic powder.
  • Add the flour in 1/4 cup at a time and incorporate, 100g minimum and up to 20g more if needed to make the dough come together.
  • Roll out handfuls of the dough to 3/4 inch thickness.
  • Cut the dough into sections of about 3/4 inch to 1 inch.
  • Finely chop the shiitake mushrooms. I reserve two or three and slice and fry separately for garnish.
  • Cook the onions with the baking soda in the olive oil over a medium-high heat for 7 minutes.
  • Add the mushrooms, garlic and salt. Cook for ten minutes until the onions are brown.
  • Roll the sections of dough into balls and then flatten.
  • Place half a teaspoon of filling in the center of the dough and fold the filling around it.
  • Place the filled gnocchi on a sheet of baking paper while you stuff the rest of the gnocchi. They're should be leftover filling.
  • Place around 12 gnocchi at a time into a large wide pot of boiling salted water.
  • When the gnocchi float to the top, cook for two minutes and remove with a slotted spoon.
  • Place on baking paper again and cook all the gnocchi.
  • Heat the tablespoon of oil in a pan and fry the gnocchi in batches on two sides until golden.
  • Take the pan with the leftover filling and heat on high.
  • When the filling is sizzling, add the balsamic vinegar and white wine and cook for two minutes.
  • Remove from the heat, add in the coconut cream, salt and black pepper to taste. Shave the remaining 5g of truffle and add in.
  • Serve the gnocchi gently tossed in the sauce or with the sauce drizzled over.

This easy dish is a great way to make gnocchi go further, with lots of tasty, earthy flavor. Quick and comforting.

4 oz mushrooms (110g, suggest crimini or a mix (see above))
1/4 onion
1 clove garlic ((small))
4 1/2 oz gnocchi (125g, approx (or more to taste/as have))
1 tbsp butter (14g)
1/4 tsp dried oregano
1 pinch salt
1 pinch pepper
1/4 cup vegetable stock (60ml (or chicken stock, but clearly no longer vegetarian if so))
1 tbsp chopped parsley

Steps:

  • Wipe clean the mushrooms and trim off the end of the stem. Cut into slices, halved if large. Finely chop the onion and crush or finely chop the garlic.
  • Fill a wide pot with boiling water and add the gnocchi, part at a time if making more than one serving. Increase the heat, if needed, to bring water back to a simmer. Once the gnocchi float to the top, remove from the water, draining as you do so, and set aside in a bowl.
  • Meanwhile, warm half of the butter in a small-medium skillet/frying pan. Add the onion and cook a couple minutes, stirring regularly, until onion is softened.
  • Add the rest of the butter and part of the mushrooms. Stir to soften the mushrooms then add the rest once there is a bit more space (they reduce in size as they cook). Add the garlic, thyme and a little salt and pepper.
  • Cook for a couple minutes until the mushrooms have released their liquid, this evaporates off and the mushrooms start to brown slightly. Add in the cooked gnocchi, stir then add the stock. Simmer for a minute or two to reduce slightly then add the parsley, stir through and serve. Optionally, add some cheese on top.

1 cup skim milk
2 tablespoons cornflour

Steps:

  • In a large saucepan melt 2 tbsp vegan margarine.
  • Add onion and garlic, cook until the onion is transparent, then add mushrooms, basil, salt & pepper.
  • Cook until the mushrooms are just tender.
  • Add remaining margarine and olive oil and combined well.
  • in a seperate bowl/container combine the soy milk and corn flour well and add to the mushroom mixture.
  • Stir until thick and then remove from heat.
  • Cook gnocchi as per instructions and add to the sauce.

2 x 400g packs fresh gnocchi
1 tbsp olive oil
knob of butter
1 large onion, roughly chopped
500g small Forestière or Portobello mushrooms, sliced
2 large garlic cloves, chopped
150g pack creamy blue cheese (we used Danish blue)
small pack parsley, chopped

Steps:

  • Bring a large pan of water to the boil and cook the gnocchi following pack instructions. When they float to the top of the pan, they are ready. Drain and set aside.
  • Meanwhile, heat the oil and butter in a large lidded frying pan. Add the onion and mushrooms, cook for 1 min over a high heat, then turn down the heat to medium, put the lid on and cook for 5 mins, stirring a few times.
  • Remove the lid and add the garlic, cook for 1-2 mins, then stir the gnocchi into the pan. Scatter over blobs of cheese and the parsley.

Inspired by panzanella, the beloved Tuscan bread salad, this dish swaps out stale bread for pan-fried gnocchi. The plump, crusty dumplings do a surprisingly good job at soaking up the summery combination of tomatoes, balsamic vinegar and olive oil, while still maintaining their crisp edge. Shelf-stable gnocchi work best, as they are sturdier and crisp up well, but you could use frozen gnocchi, taking extra care not to move them around too much in the pan so they don't break apart. Top with a sharp cheese such as Parmesan, pecorino or ricotta salata, for a hit of saltiness, if you like. This meal is best eaten immediately while the gnocchi remains crispy, but it can sit for up to 30 minutes, giving the flavors time to mingle. (However, don't let it sit too long, as the gnocchi will turn mushy.)

  • Heat a large (about 12-inch), well-seasoned cast-iron or nonstick skillet over medium-high; add 2 tablespoons of olive oil. Add the gnocchi to the pan, breaking up any that are stuck together. Cook for 8 to 10 minutes, tossing every 1 ½ to 2 minutes so they get golden and crispy all over.
  • Meanwhile, prepare your tomatoes: If you are using small ones like cherry or grape varieties, simply slice them in half. For larger tomatoes, quarter them or slice into bite-size chunks. 4 scallions, cut into 1-inch lengths
1 large shallot, thinly sliced

5 ounces baby spinach (about 5 packed cups)

1 tablespoon unsalted butter

Steps:

  • Heat the oven to 425 degrees. On a sheet pan, toss together the mushrooms, gnocchi, 5 tablespoons olive oil, scallions and shallot. Season with salt and pepper, shake into an even layer, and roast without stirring until the gnocchi and mushrooms are golden and crisp, 20 to 25 minutes. Add the spinach and remaining tablespoon of oil, season with salt and pepper, and stir to combine. Spread in an even layer, then return to the oven to roast until the spinach is tender, another 5 to 7 minutes.

160g bag spinach
100g blue cheese

Steps:

  • Heat oven to 220C/200C fan/gas 7. Slice the mushrooms and put in a roasting tin with the gnocchi, then drizzle over 3 tbsp olive oil. Roast for 25-30 mins or until the gnocchi are golden, stirring occasionally to stop them sticking.
  • Once the gnocchi are ready, stir half the spinach into the tin to wilt it, then crumble the blue cheese over the top. Put it back in the oven just to melt the cheese, then serve with the remaining spinach, drizzled with a little olive oil.
