SWEET POTATO SPOON BREAD
This is an old favorite that I've started making again. Once you get past baking the sweet potatoes (you can also do this in the microwave to save time), it's very easy. One of my favorite comfort foods!

Steps:
- Heat oven to 400 degrees.
- Bake sweet potatoes until soft when pierced with a knife, 40 to 45 minutes.
- Let cool.
- Peel, and discard skins.
- Reduce the heat to 350.
- In a medium saucepan over medium heat combine cornmeal, milk, butter, brown sugar, spices, salt, and 1 cup water.
- Cook, stirring, until slightly thickened, about 10 minutes.
- Let cool.
- Butter a two-quart baking dish.
- Place cornmeal mixture, sweet potatoes, flour, honey, eggs, and cream in a food processor.
- Process until smooth, then pour into the dish.
- Bake until golden brown, about 45 minutes.

Another twist on sweet potatoes, who doesn't like sweet potatoes? My other recipe "Rosie's Sweet Potatoes" is very good and I am hoping you like this one as well.

Steps:
- 1. Preheat oven to 400*F. Generously grease 2-quart souffle' or casserole with 1 tbsp. butter.
- 2. Wrap potatoes in foil. Bake 45 to 55 minutes until soft to touch. Remove from oven. Discard foil; cool. When cool enough to handle, remove and discard peels. In large bowl mash potatoes.
- 3. Reduce oven to 350*F. In large saucepan, bring milk, thyme, sugar, salt, and pepper to low boil over medium heat. In slow steady stream, whisk cornmeal into milk mixture. Cook, whisking cornmeal, 4 to 5 minutes, until mixture is thick and pulls away from bottom of pan. Remove from heat, cool slightly. Add potatoes, egg yolks, remaining 3 tbsp. butter and baking powder to milk mixture; stir to thoroughly mix.
- 4. In large mixing bowl beat egg whites with electric mixture until soft peaks form. Gently fold whites into the potato mixture.
- 5. Spoon batter into prepared dish. Bake 35 to 40 minutes, until internal temperature reaches 165*F. Edges will be firm, and center a little soft. Remove from oven, Let stand 10 minutes. Serve warm
GRANNY'S SWEET POTATO BREAD
One of my favorite recipes made by my grandmother and handed down to me. My Granny made this bread as a sweet treat, but it was great for breakfast.

- Preheat oven to 375 degrees F (190 degrees C). Wrap sweet potato in aluminum foil.
- Bake sweet potato in the preheated oven until easily pierced with a fork, about 1 hour. Set aside to cool.
- Whisk white sugar and canola oil together in a bowl. Add eggs; mix well. Sift flour, cinnamon, and nutmeg into sugar mixture. Slowly whisk water into flour-sugar mixture until incorporated.
- Peel sweet potato; mash into the batter. Fold in 1/2 cup chopped pecans.
- Reduce oven temperature to 320 degrees F (160 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Pour batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.
- Heat brown sugar and butter in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Add 1/2 cup chopped pecans and stir to combine. Remove from heat. Pour glaze over bread.

SWEET POTATO SPOON BREAD
Spoon bread is like a cross between grits and cornbread, with a lovely, dense, puddinglike texture set off by cornmeal's fine grain. I don't need an excuse to bring sweet potatoes into the mix-I've been known to add them to just about everything-but in this case they reinforce the silky texture of the spoon bread in addition to adding their characteristic orange color and mild, sweet flavor.

- Preheat the oven to 400°F. Generously grease a 2-quart soufflé dish with about 1 tablespoon of the butter.
- Wrap the potatoes in foil and bake for 45 to 55 minutes, until soft to the touch. Remove from the oven and discard the foil. When the potatoes are cool enough to handle, remove and discard the potato peels, transfer the potatoes to a large bowl, and mash.
- Reduce the oven temperature to 350°F.
- Bring the milk, thyme, brown sugar, salt, and pepper to a low boil in a saucepan over medium heat. Whisk the cornmeal into the milk mixture in a slow, steady stream. Cook, whisking constantly, for 4 to 5 minutes, until the mixture is thick and pulls away from the bottom of the pan. Remove from the heat and let cool slightly.
- Add the potatoes, egg yolks, remaining 3 tablespoons butter, and the baking powder and stir to thoroughly combine.
- Place the egg whites in a large bowl and beat with an electric mixer until soft peaks form. Gently fold the whites into the cornmeal-potato mixture.
- Spoon the batter into the prepared dish and bake until golden brown and puffy, 35 to 40 minutes. The edges will be firm and the center will still be a little soft. Remove from the oven and let sit for about 10 minutes before serving warm.
