JAPANESE-STYLE SESAME GREEN BEANS
I discovered this dish at my mother-in-law's house during a family holiday buffet. Her being Japanese, she had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

GREEN BEAN AND TOMATO SALAD
This simple summer salad pairs beautifully with practically any grilled meat or fish, and it's quite easy to make. Just blanch the green beans until crisp tender, then toss with wedges of ripe tomato and a bright vinaigrette of Dijon mustard, red wine vinegar, garlic, shallots and olive oil. A shower of chopped fresh basil across the top finishes it off.

SESAME GREEN SALAD
This is from Everyday with RR. I'm typing it up for ZWT II. This is a great blend of flavors. It makes a thin dressing. This would also be good with plain rice.

SESAME GREEN BEANS
I had always been indifferent to green beans... until I tried this recipe, given to me by a friend. For such a simple dish, you will be surprised at how much flavor this has! Broccoli is equally delicious prepared this way.

LEMON-SESAME GREEN BEANS
There's a kabob shop in Charlottesville, Virginia, called Sticks and it has wonderful sides, including sesame beans. I love them so much that I had to make my own version. You can use fresh or frozen green beans; haricots verts (French green beans) work well, too. This salad only gets better as it sits, so it's great (and convenient!) to make a day or two in advance. -Dyan Carlson, Kents Store, Virginia

- Boil water in a medium or large sauce pan. The water will be used to blanch the beans. While waiting for water to boil, prepare all the other ingredients.
- Wash the beans thoroughly. Trim the tough ends if using regular green beans. Cut the beans into 1-inch (2.5 cm) long pieces.
- Mince the garlic. Use the back of a chef’s knife or a cleaver to first crush or smash the garlic to loosen the skin. After removing the skin, use two hands to gently rock the chef’s knife back and forth across the pile of garlic to mince it. Alternatively, you can use a garlic press to make garlic mince.
- Make the sesame dressing. In a small bowl, add the 1 tablespoon of Chinese sesame paste (or Tahini) and the 1 teaspoon of table salt. Add approximately 1 tablespoon of room temperature water at a time, immediately mixing the paste and the water until the paste fully absorbs the water. Add another 1 tablespoon of water and mix it again. Repeat the same process a few more times until the paste becomes much thinner and more liquidly. Set aside.
