Sauteed vegetables with a spicy green curry sauce. Yum! Serve over cooked white or jasmine rice.

Provided by Sarah Dipity

Categories     Main Dish Recipes     Curries     Vegetarian

Time 1h

Yield 6

Number Of Ingredients 18

2 (14 ounce) cans unsweetened coconut milk
2 medium yellow squash
1 medium zucchini
3 tablespoons sesame oil, divided
1 large sweet onion, sliced
1 cup snow peas
½ cup sliced fresh mushrooms
1 tablespoon garlic, minced
1 tablespoon green curry paste, or more to taste
1 cup frozen peas
1 cup vegetable broth
½ cup baby corn, drained
½ cup sliced bamboo shoots, drained
1 tablespoon white sugar
1 tablespoon soy sauce
1 (12 ounce) package extra-firm tofu, cubed
1 cup fresh bean sprouts
10 leaves fresh basil

Steps:

  • Skim cream off the top of the coconut milk; set both cream and milk aside. Slice yellow squash and zucchini lengthwise, then cut each slices into quarters.
  • Heat 1/2 of the sesame oil in a large skillet over medium-high heat. Saute squash, zucchini, onion, pea pods, mushrooms, and garlic until tender, 5 to 7 minutes. Do not brown.
  • Heat remaining oil in a separate large frying pan over medium heat. Fry curry paste with coconut cream in the hot oil for 1 minute to take the bitterness off of the spice. Add coconut milk, frozen peas, vegetable broth, baby corn, bamboo shoots, sugar, and soy sauce; bring just barely to a boil. Reduce heat and simmer, 20 to 30 minutes.
  • Just before serving, stir in tofu, sprouts, and basil. Cook until heated through, about 5 minutes.

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 14

Kosher salt
2 cups small broccoli florets (1 small crown)
2 cups small yellow cauliflower florets (1/2 head)
2 cups sugar snap peas (6 ounces)
1 tablespoon canola oil
1/4 cup thinly sliced scallions, white and light green parts only, plus dark green part, thinly sliced, for garnish
1 tablespoon minced garlic (2 to 3 cloves)
1 tablespoon finely grated fresh ginger (a 2-inch knob)
One 13.5-ounce can coconut milk
1 to 2 tablespoons green curry paste
1 cup shredded carrots
2 cups finely shredded Napa cabbage
3 tablespoons fresh lime juice (1 1/2 limes)
1 large avocado, cut into 1/2-inch pieces

Steps:

  • Bring a pasta pot filled with salted water to a boil. Set up a large ice bath alongside. Blanch the broccoli and cauliflower in the boiling water until they have softened slightly and the broccoli is bright green, 2 minutes. Remove the vegetables to the ice bath. Add the snap peas to the boiling water and blanch until bright green, 1 minutes. Remove to the ice bath.
  • Drain the blanched vegetables on a large baking sheet lined with paper towels, patting them dry to remove excess water. Cut the snap peas in half crosswise, put them in a large bowl and set aside.
  • Heat the canola oil in a 12-inch sauté pan over medium-high heat. Add the scallions, garlic and ginger and cook until fragrant but not browned, 1 to 2 minutes. Add the coconut milk and 1 tablespoon green curry paste and bring to a simmer, stirring to dissolve the paste. Stir in the broccoli, cauliflower and carrots and simmer for 7 or 8 minutes, to meld the flavors and finish cooking the vegetables.
  • Next, stir in the cabbage and lime juice; cook until the cabbage is wilted, 2 to 3 minutes. Taste the sauce and adjust the seasoning with salt. If you prefer more spice, add another tablespoon of curry paste and cook another 3 minutes, stirring. When you are happy with the flavor, remove the pan from the heat and let cool for 10 minutes.
  • To serve, gently fold in the avocado and garnish with scallion greens. Serve at room temperature.

GREEN CURRIED FISH

Green Curried Fish image

We ate this green curry last night. I'm putting this on here, so's Tomoko who's living with us can have a copy of the recipe.

Provided by JustJanS

Categories     Curries

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 15

2 tablespoons oil
1 large onion, sliced into wedges
1 clove garlic
2 teaspoons grated fresh ginger
1 (50 g) packet green curry paste
1 (400 ml) can coconut milk (I use light)
1 cup water
1 tablespoon lime juice
1 tablespoon fish sauce
600 g fish, a white firm, strong flavoured fish is best, cut into about 2 1/2 cm chunks (we used trevally)
1 green chili, sliced
400 g assorted green vegetables (we used capsicum, snow peas, bok choy, green beans. You could also use zucchini, asparagus, brocolli)
3 spring onions, finely sliced
1/2 cup chopped fresh coriander (cilantro)
1/2 cup basil leaves (packed)

Steps:

  • Heat the oil in a large wok, and fry the onion, ginger and garlic for about 5 minutes or until softened.
  • Add the green curry paste, and fry for another 2 minutes.
  • Add the coconut milk, water, lime juice and fish sauce and bring to the boil.
  • Reduce to a simmer and add the fish, and any of the longer-to-cook vegetables you have chosen and cook for about 5 minutes (I added the beans along with the fish).
  • Also add about half the fresh coriander.
  • Add the remaining softer vegetables, and cook for a further 2-3 minutes, being careful not to overcook the fish, or knock it around too much as you stir through the vegetables.
  • Stir through the fresh herbs gently.
  • Serve in deep bowls over steamed rice, scattered with the fresh spring onions.

GRILLED VEGETABLES WITH GREEN CURRY MARINADE

Grilled Vegetables With Green Curry Marinade image

A mix of fresh veggies in a tangy marinade. It helps to have a grill basket for this, or really small openings on your grill grates. Orange bell peppers and green beans (instead of asparagus) can also be used. This serves 4 as a side or salad topping, or 2 as a main dish. My green curry paste is fairly mild, so if yours is hot, adjust amount according to tastes.

Provided by Outta Here

Categories     < 60 Mins

Time 1h

Yield 4 serving(s)

Number Of Ingredients 13

1/2 lime, juice of (fresh)
1 orange, juice of (fresh)
2 tablespoons olive oil
1 tablespoon fresh cilantro, minced
1/4 teaspoon ground ginger
1/2 teaspoon ground cumin
2 tablespoons green curry paste
1 medium zucchini, unpeeled and cut into 1/4-inch rounds (cut at an angle)
4 -6 large cremini mushrooms, quartered
1/2 yellow bell pepper, seeded and slice into 1/4-inch strips
1/2 red bell pepper, seeded and slice into 1/4-inch strips
1/2 lb fresh asparagus, tough stem ends trimmed and spears cut into 3-inch pieces (use thin spears)
1/2 large purple onion, peeled and cut into rings (separate rings)

Steps:

  • Mix first 7 ingredients (lime juice through curry paste) in a small bowl until blended.
  • 2. Put all of the veggies into a large zip-top plastic bag and pour marinade over them. Seal and toss gently to coat veggies. Marinate 30-60 minutes.
  • 3. Prepare grill. (I use a gas grill).
  • 4. When grill is ready, dump veggies into grill basket and cook over med-high heat for 15-30 minutes (or until cooked to your crispness preference) , gently turning veggies halfway through cooking time.
  • 5. Remove from heat and serve, or cool to room temperature and use on a salad.
