This salad has a great interplay of textures, temperatures and flavours. Toss juicy watermelon with salty cheese, crispy breadcrumbs, capers, almonds and mint

750g watermelon
2 small shallots , very finely sliced
100ml extra virgin olive oil , plus extra for brushing and to serve
4 tsp white balsamic vinegar
300g halloumi , sliced
good squeeze of lemon juice
75g slightly stale country bread , crusts removed, blitzed into coarse breadcrumbs
1-2 cloves garlic , finely chopped
½ medium red chilli , halved, deseeded and chopped
2½ tbsp capers , rinsed
50g blanched almonds , toasted and chopped
small bunch of mint , leaves picked, half of them torn

Steps:

  • Cut the watermelon into either cubes or slices and transfer to a bowl with the shallots. Add 4 tbsp extra virgin olive oil and the balsamic, then season with fresh black pepper. Cover and put in the fridge for about 15-20 mins.
  • Heat the remaining oil in a frying pan. Fry the breadcrumbs until turning gold. Add the garlic, chilli and capers and cook for another minute, then toss in the almonds. Remove from the heat, add the torn mint (it will wilt a little), then taste - it will be quite salty, but the watermelon won't be, so you'll get a good contrast.
  • Brush the halloumi with a little oil and heat a griddle pan. Griddle the cheese on both sides until just starting to melt but still holding its shape, with nice golden griddle marks. Toss the cold watermelon and shallots with the rest of the mint leaves and some salt. Divide between four plates, or pile onto a platter. Put the hot halloumi on top. Squeeze over some lemon juice and top with some of the breadcrumb and caper mix. Serve immediately.

1 teaspoon minced shallot
1 teaspoon minced garlic
Kosher salt
1/4 cup red wine vinegar
1 tablespoon honey
1/2 cup plus 1 tablespoon extra-virgin olive oil
2 tablespoons sliced almonds, toasted
2 tablespoons chopped fresh mint
8 small wedges seedless watermelon, rind removed
8 ounces halloumi cheese, cut into 8 slices

Steps:

  • Place the shallot and garlic in a mixing bowl and add a pinch of salt. Add the vinegar and honey and whisk. Slowly whisk in 1/2 cup olive oil, then add the almonds and mint.
  • Place the watermelon in a shallow dish. Pour the dressing on top, cover and let marinate 1 hour in the refrigerator.
  • Heat a large skillet over medium heat and add the remaining 1 tablespoon olive oil. Sear the halloumi 1 minute per side, then remove from the pan; top each with a piece of marinated watermelon.

1/2 cup coarsely chopped fresh basil
3 tablespoons coarsely chopped fresh mint plus thinly sliced mint for garnish
1 garlic clove, coarsely chopped
1/2 cup extra-virgin olive oil plus more for brushing
Kosher salt and freshly ground black pepper
3/4 pound cherry tomatoes on the vine
1 8-9-ounce package Halloumi cheese, cut crosswise into 8 slices
6 small triangles thinly sliced watermelon, rind removed

Steps:

  • Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Purée basil, 3 tablespoons mint, and garlic in a blender. With machine running, add 1/2 cup oil. Set a strainer over a small bowl; strain, pressing on solids. Season with salt and pepper.
  • Brush grill rack with oil. Drizzle 2 tablespoons basil-mint oil over tomatoes and cheese; season with salt and pepper. Grill tomatoes, turning occasionally, until charred and bursting, about 4 minutes. Grill cheese until nicely charred in spots and beginning to melt, about 45 seconds per side.
  • Arrange melon on a platter. Top with cheese and tomatoes. Drizzle remaining herb oil over; garnish with sliced mint.
