This makes the best shrimp! Remove from skewers and serve on a bed of pasta with sauce for a great meal.

1 cup olive oil
¼ cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds large shrimp, peeled and deveined with tails attached
6 each skewers

Steps:

  • In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
  • Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

I tried this recipe -- it turned out very well! A comment though, I don't think using THREE grapefruits is completely necessary (I got by with one large grapefruit), but try the recipe for yourself. This is courtesy of MSNBC and chef Rick Moonen of midtown Manhattan's Oceana restaurant.

12 jumbo shrimp, cleaned and split lengthwise
3 whole grapefruits
1/2 cup olive oil
3/4 cup cilantro, chopped
3 jalapeno peppers, chopped with seeds
6 scallions, chopped
1 cup extra-dry vermouth
salt and pepper

Steps:

  • Submerge the zests of the grapefruit in olive oil and heat up to 160 degrees for five minutes.
  • Put oil and remaining ingredients in a shallow glass dish and submerge shrimp in it. Cover with plastic and refrigerate. Marinate shrimp for at least 3 hours so flavors can penetrate. Remove shrimp from marinade and place on a paper towel before grilling.
  • Grill for 1 1/2 minutes on each side over hot coals.
  • Season with salt and pepper if desired.

1 quart water
1/3 cup salt
1/3 cup (packed) golden brown sugar
1 1/2 pounds uncooked large shrimp, unpeeled
1/4 cup olive oil
2 tablespoons dry white wine
2 garlic cloves, minced
1 tablespoon chopped fresh parsley
1/4 teaspoon dried crushed red pepper
Roasted Garlic-Herb Sauce

Steps:

  • Stir first 3 ingredients in medium bowl until sugar dissolves. Add shrimp. Refrigerate at least 1 hour and up to 3 hours. Drain and rinse shrimp.
  • Using shears, cut shrimp shells down center of back all the way to tail section. Using sharp knife, cut shrimp in their shells along the full length of the back (do not cut all the way through). Remove vein and pull off legs. Open shrimp.
  • Whisk olive oil, white wine, garlic, parsley, and crushed red pepper in clean medium bowl. Add shrimp and stir; let stand 30 minutes.
  • Prepare barbecue (medium-high heat). Place shrimp, flesh side down, on grill. Grill shrimp until pink and cooked through, about 2 minutes per side. Transfer to platter and serve, passing Roasted Garlic-Herb Sauce separately.

Whenever summertime comes around, I look forward to making this shrimp recipe on our outdoor grill. I've served this to guests, alongside a nice green salad and a pitcher of margaritas. Simple and delicious. Note: You can try broiling the shrimp in your oven for about 8 minutes instead of grilling but I have never personally tried them that way. Prep time includes marinating in the refrigerator.

1/3 cup extra virgin olive oil
1/4 cup fresh lime juice
2 garlic cloves, crushed
2 tablespoons chopped cilantro
2 tablespoons Worcestershire sauce
1 teaspoon Tabasco sauce
salt and pepper, to taste
24 large raw shrimp, shell on
lime wedge, for garnish

Steps:

  • Mix together the olive oil, fresh lime juice and seasonings in a bowl.
  • Split the shrimp up the back with a sharp knife to allow the marinade to penetrate. Leave the shell on, but try to remove the vein.
  • Add the raw shrimp to the marinade and refrigerate, covered, for about two to three hours.
  • Remove from the marinade and grill the shrimp for about 4-5 minutes, until done. Make sure not to overcook your shrimp or they will be rubbery.
  • *You can also broil the shrimp indoors. It would take about 8 minutes*.
  • Serve on a big platter with lime wedges.
  • Peel and eat!
