Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Slice potatoes carefully through a long side, almost to the bottom but not through, to create even, fan-like cuts.
  • Pull slices apart gently and sprinkle potatoes with salt and pepper. Place onion and butter slices between potato slices. Wrap each potato in heavy-duty aluminum foil and seal well.
  • Bake on the preheated grill until soft, turning occasionally, about 1 hour. Remove from grill and let sit 10 minutes before unwrapping.

4 large red-skinned potatoes, scrubbed and cut into 1/2-inch rounds
1 red onion, peeled and cut into 1/2-inch rounds
1 sprig rosemary, leaves finely chopped
2 cloves garlic, smashed
Pinch crushed red pepper flakes
Kosher salt
Extra-virgin olive oil

Steps:

  • Preheat the grill and brush with a metal grill brush to loosen any crud and soot. After the grill has been brushed, run an oiled towel over the grill to pick up any loosened crud.
  • In a large bowl, toss the potatoes and onions together with the rosemary, garlic, crushed red pepper, salt, to taste, and a little olive oil. Try to keep the onions together in rounds, they will fall apart while grilling but try and keep them together as long as possible; it just makes things easier.
  • Arrange the potatoes and onions on the preheated grill. Once the potatoes have developed lovely grill marks, rotate them a quarter turn to create a lovely crosshatch pattern, (dont worry about the onions, they fall apart and you wont see the marks). Turn the potatoes over and repeat the process, turn the onions over to cook the other side as well. Cook the potatoes and onions until they are soft all the way through, about 8 to 10 minutes on each side.
  • Remove from the grill and serve hot or at room temperature.
  • Who knew you could grill a potato!

1/2 pound applewood smoked bacon, optional
8 russet potatoes
Gray salt and freshly ground black pepper
6 tablespoons extra-virgin olive oil
2 bunches green onions, both white and green parts, trimmed
1/3 cup Champagne vinegar
1 heaping tablespoon Dijon mustard
2 shallots, minced
1 teaspoon gray salt
1/2 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil (or use half bacon fat)
Bacon fat, optional
4 tablespoons chopped Italian parsley leaves

Steps:

  • Prepare a grill to medium-high heat.
  • If using bacon, cut into 1/2-inch pieces and render in a skillet over low heat until crisp. Remove the bacon from pan, and reserve the bacon fat for the dressing.
  • Wash potatoes and slice into 1/2-inch thick rounds. Cover with cold water and about 2 tablespoons of salt in a medium saucepan and bring to boil. Partially cook until crisp-tender, about 4 minutes. Drain the potatoes, put in bowl, and toss with 1/4 cup olive oil, salt and black pepper, to taste.
  • Drizzle the green onions with the remaining 2 tablespoons olive oil (or the olive oil-bacon fat blend), season with salt and pepper to taste, and grill until tender. Remove from grill and allow to cool. Cut scallions into 1/2-inch pieces.
  • Grill the potatoes until golden brown and tender. If the potatoes are still firm but already brown, finish cooking in a 375 degrees F oven. Let the potatoes cool to room temperature. Slice the potatoes into 1/2-inch sticks and put in a large bowl. Keep all ingredients separate until the day of the party.
  • Make the dressing: combine Champagne vinegar, Dijon, shallot, salt, and pepper in a medium bowl. Slowly drizzle in extra-virgin olive oil, whisking constantly, until emulsified. (You may add in some of the optional strained bacon fat for taste at this stage.) Check seasoning. Keep chopped Italian parsley separate until ready to serve, and toss in at the last minute.
  • To serve, pour dressing over potatoes, green onions, and bacon, if using, and toss.

Steps:

  • Prepare a 20 x 20-inch piece of heavy-duty foil or a 13 x 9-inch disposable foil pan (I prefer to make these in a pan).
  • Generously spray the inside of the foil or pan with cooking spray.
  • Toss the potatoes with sliced onions and Parmesan cheese (if using) then place on top and in the middle part of the foil, or place into the foil pan.
  • Sprinkle the butter cubes over the potatoes.

1 medium onion, sliced slightly wedged
kosher salt
fresh ground pepper
1 (8 ounce) bottle Italian dressing

Steps:

  • Cut into each potato, not completely all the way through, so that you can "fan" it out somewhat.
  • Place each potato onto double layer of heavy-duty foil; then insert small wedges of onion between potato slits.
  • Pour 2-4 tablespoons of Italian dressing over the potato and onions.
  • Add salt and pepper to taste.
  • Wrap foil securely around the potatoes and seal tightly.
  • Grill, covered, over medium heat for about 50 - 60 minutes, or until potatoes are tender.

Steps:

  • Preheat an outdoor grill for medium-high heat; lightly oil the grate.
  • Cut two 12x18-inch pieces of aluminum foil and fold them in half to create two 12x9-inch rectangles. Spray one side of each piece with cooking spray. 6 slices onions
salt
pepper
seasoning salt (optional)

Steps:

  • Wash potatoes and slice in half LENGTHWISE.
  • Tear off 12 squares aluminum foil. Place 1/2 of a potato on 6 squares.
  • Place one onion slice on top of potato half.
  • Put 1 tablespoon butter on top.
  • Sprinkle with salt and pepper.
  • Top with other half of potato.
  • It should look like a "potato sandwich".
  • Wrap tightly with foil.
  • Rewrap with another square of foil to seal.
  • Place directly on coals.
  • Roast 30-45 minutes until tender.
  • "Done-ness" can be tested by squeezing.
  • Use caution when squeezing hot potatoes!
  • Turn packages several times during cooking, so the potatoes do not burn!

4 pounds baking potatoes
2 pounds carrots
1 onion
seasoning salt to taste
½ cup butter
1 ¼ cups sour cream

Steps:

  • Peel and cut up the potatoes and carrots into bite-size chunks. Chop up onion.
  • Combine all veggies in tin foil or foil baking bag. Season with desired amount of seasoning salt and top with butter. Seal foil well (you may need more than one bag, so the vegetables are done evenly).
  • Grill until potatoes and carrots are soft, about 40 minutes (flip bags at least 3-4 times during grilling). Remove from grill and place the veggies in a large bowl and add the sour cream, mixing well.
