Steps:
- Heat a 5 1/2-quart braising pan over medium-high heat. Add the oil to the pan and continue to heat. Using a paper towel, dry the chicken pieces well. Season all sides of the chicken with 1 1/2 teaspoons salt. Add the chicken to the hot pan skin-side down, and cook until the skin is golden brown and the chicken releases easily from the pan, about 4 minutes. Flip the chicken and cook the other side until nicely browned, about 4 minutes more. Transfer the chicken to a plate and set aside.
- To the hot pan, add the carrots, celery and onion. Cook, stirring often with a wooden spoon, until the vegetables are fragrant and beginning to soften, about 3 minutes. Add the hazelnut liqueur and balsamic vinegar to the pan and cook, scraping up all the brown bits that may have stuck to the bottom of the pan. Simmer until the liquid is reduced by half, about 2 minutes. Stir in the chicken broth, olives, figs and oregano. Nestle the chicken pieces into the vegetables skin-side down and simmer, covered, for 30 minutes, flipping the chicken halfway through.
- Transfer the braised chicken to a clean platter to rest. Simmer the sauce until reduced slightly, about 5 minutes. Pour the sauce over the chicken and sprinkle with the hazelnuts and parsley.
CHICKEN PEAR SALAD WITH BLUE CHEESE

- 1. Arrange equal amounts of the salad greens on each of 4 dinner plates.
- 2. Spoon equal amounts of the dressing evenly over all.
- 3. Top with the chicken, onions and pears. Sprinkle evenly with the blue cheese and black pepper, if desired.
- For additional flavor and texture: Add 1/2 cup dried cranberries or unsweetened cherries on top with 2 ounces thinly sliced red onion (about 1/2 cup).
- For a lighter version: Use reduced fat blue cheese and fat-free dressing.
HAZELNUT CHICKEN WITH PEAR SAUCE & BLUE CHEESE
I had something similar in a restaurant, but it was deep fried and they used strawberry jam. This is my Oregon version of a generic recipe. If you don't care for blu cheese, feta works nicely. This can be served with a salad of tossed greens dressed with a vinagrette for a lunch or light dinner. Try a rose wine or a fruit flavored beer to accompany. Preparation time includes chill time.

Steps:
- Use about half the flour to lightly coat the chicken.
- Add the remaining flour to the nuts, bread crumbs and 1 Tablespoon oil, mixing well.
- Beat the egg and milk together.
- Dip each chicken piece into the milk mixture, then completely coat with nut & crumb mixture. Set on a cake rack over a baking pan and chill for 30 minutes.
- Set oven to 350F and remove chicken from refrigerator.
- Clean any crumbs out of the pan and coat the pan with the remaining olive oil.
- Cook the chicken 30 minutes, turning once. Check with a thermometer.
- While the chicken is cooking, peel and core the pears.
- Mash with the butter and nutmeg until smooth and creamy. (Or use the food processor).
- Plate by placing a portion of sauce on the plate, with the chicken on top. Sprinkle with the crumbled cheese.

- Make sauce:
- Purée all ingredients in blender. Strain into small bowl. (Can be prepared 3 days ahead. Cover; refrigerate.)
- Make crust:
- Preheat oven to 350°F. Line four 3/4-cup soufflé dishes or custard cups with foil; spray lightly with nonstick spray. Finely grind nuts and sugar in processor. Add butter; blend until mixture holds together. Press 1/4 of nut mixture onto bottom of each prepared dish. Place dishes on baking sheet; bake crusts until slightly darker in color, 8 minutes. Set aside. Maintain oven temperature.
- Make filling:
- Combine pear and nectar in small saucepan. Boil over medium heat until mixture resembles chunky sauce, stirring occasionally, about 18 minutes. Cool completely.
- Beat cream cheese and sugar in medium bowl until smooth. Beat in egg and vanilla. Beat in 2/3 cup chunky pear sauce (reserve any remaining sauce for another use). Divide filling among crusts.
- Bake cakes until center is set and slightly puffed, about 30 minutes. Cool in dishes on rack. Cover; chill overnight.
- Using foil as aid, lift cakes from dishes. Peel foil from sides. Slide spatula under crusts and transfer cakes to plates. Spoon pear-raspberry sauce around cakes. Garnish with mint, if desired.

- In a deep bowl, mix olive oil, shallots, garlic, tarragon and mustard.
- Salt and pepper to taste.
- Place the chicken breasts in this mixture, coating well.
- Chill for 4 hours.
- Drain the chicken, reserving the marinade.
- Quickly fry the chicken in a deep non-stick pan for 4 minutes on each side.
- Transfer the chicken to a large serving platter.
- Add the marinade to the pan, bring to a boil and sprinkle with the flour.
- Add the chicken stock, apples and walnuts.
- Gently simmer for 5 minutes.
- Return the chicken to the pan with the sauce in it.
- Add the heavy cream and cook for 2 minutes.
- Mix the salad ingredients together and place a small amount on each plate.
- Top each plate with a chicken breast and a spoonful of the sauce.
- Serve immediately.

- Sprinkle chicken with salt and pepper. In a shallow bowl, combine flour and rosemary; in a separate shallow bowl, combine butter and brown sugar. Place pecans in another shallow bowl. - Preheat oven to 325 degrees Fahrenheit.
- In a large skillet, warm the oil over medium-high heat.
- Sprinkle both sides of the chicken breasts with half of cinnamon. Add the breasts to the skillet and cook for about 5 minutes on each side or until browned; transfer to a plate and set aside.
- Remove as much flesh as possible from each one of the cores. Place in a microwave safe bowl (2 Celsius capacity) along with chicken broth. Microwave for 2 ½ minutes on high. Set aside.
- Put chopped pears, cinnamon, salt, allspice, sugar and broth/pear liquid into a food processor. Process until the mixture is of applesauce-like consistency. Stir in the raisins.

- Heat oil in a large skillet over medium heat. Rub chicken breasts with salt and white pepper. Place chicken breasts in the hot skillet, and cook for about 10 minutes on each side, until the juices run clear.

- Grease an 8-inch tart pan.
- Combine 1 1/2 cups plus 2 tablespoons flour, butter, egg, sugar, water, and salt in a large bowl. Quickly knead into a smooth dough. Place in a container with a lid and refrigerate for 30 to 60 minutes. The pastry needs to be firm enough to be rolled out.
- Roll out chilled pastry on a floured work surface and fit into the prepared tart pan. Shape an edge and prick the pastry several times with a fork. Chill in the refrigerator for 30 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir cream cheese and blue cheese together in a bowl. Beat egg in a separate bowl. Pour bread crumbs into a third shallow bowl.
