4 tablespoons butter
2 1/2 pounds mixed mushrooms (such as button, crimini, and shiitake), trimmed and thinly sliced
3 garlic cloves, minced
1 cup heavy cream
1 large egg
1/2 cup fresh parsley, chopped
Coarse salt and ground pepper

Steps:

  • Preheat oven to 350 degrees. In a large skillet, melt butter over medium-high heat. Add mushrooms and garlic; cook, stirring occasionally, until mushrooms begin to brown, 18 to 20 minutes. Let cool slightly.
  • In a large bowl, whisk together cream, egg, parsley, 1 teaspoon salt, and 1/4 teaspoon pepper. Stir in mushrooms, and divide among eight 6-ounce ramekins.
  • Line a roasting pan (just large enough to hold ramekins) with a dish towel; place ramekins on towel. Transfer to oven, and pour enough boiling water in pan to come halfway up sides of ramekins. Bake until custards are just set, about 30 minutes. Carefully remove ramekins from water.

Herbed Roasted Mushrooms with Fried Egg image

1 1/4 pounds button or cremini mushrooms, quartered
1/4 cup olive oil
4 sprigs rosemary
1/4 cup balsamic vinegar
1 (1 pound) storebought baked pizza crust
1/2 cup shredded Parmesan cheese
8 ounces fresh ricotta
1 large egg

Steps:

  • Heat the oven to 450 degrees F and arrange a rack in the middle.
  • Combine mushrooms, 3 tablespoons oil, and rosemary on a baking sheet, season with salt and freshly ground black pepper and toss to coat. Place in oven and roast until mushrooms are shrunken, and browned about, 20 minutes. Drizzle with 1 tablespoon of the balsamic and toss to coat. Scatter half of the Parmesan on the pizza. Discard rosemary and arrange mushrooms on top. Distribute ricotta across top and drizzle with remaining Parmesan and a little extra olive oil.
  • Bake until crust is browned, cheese is melted, about 20 minutes. Meanwhile, heat a small frying pan medium heat, and add remaining 1 tablespoon olive oil. When oil shimmers, add eggs and fry until set, bubbly and brown on the edges, and the pan is almost dry. Carefully add remaining 3 tablespoons balsamic vinegar and cook until vinegar is reduced and syrupy. Place egg on top of pizza, drizzle balsamic reduction over pizza, and serve.

3 large eggs
1 1/2 cups chicken broth
2 teaspoons mirin
1 teaspoon soy sauce such as Kikkoman
1 teaspoon freshly grated lemon zest
4 medium shrimp
1 scallion
1 large mushroom

Steps:

  • In a bowl with a fork beat eggs until combined well. Skim any fat from broth and add broth with mirin, soy sauce, and zest to eggs, stirring to combine well. Pour custard through a fine sieve into another bowl.
  • Peel shrimp and devein if desired. Diagonally cut white and pale-green parts of scallion into thin slices and thinly slice mushroom.
  • Divide shrimp, scallion, mushroom, and custard among four 1/2-cup custard cups or ramekins and cover each tightly with foil. Arrange cups or ramekins in a steamer over boiling water and steam custards, covered, over high heat 2 minutes.
  • Reduce heat to moderate and steam custards, covered, until set, about 10 minutes more.
  • Serve custards immediately.

Steps:

  • Heat the oil in a skillet over medium heat. Place mushrooms in the skillet, season with Italian seasoning, and cook 10 minutes, stirring frequently.
  • Mix the wine and garlic into the skillet, and continue cooking until most of the wine has evaporated. Season with salt and pepper, and sprinkle with chives. Continue cooking 1 minute.

1 pound fresh mushrooms, sliced
2 tablespoons butter
3 to 4 garlic cloves, minced
2-1/2 cups chicken broth, divided
2 to 3 teaspoons minced fresh rosemary or 3/4 to 1 teaspoon dried rosemary, crushed
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 cup dry sherry or additional chicken broth
1 tablespoon reduced-sodium teriyaki sauce
1/8 to 1/4 teaspoon hot pepper sauce
3 tablespoons nonfat dry milk powder
2 tablespoons cornstarch
2 cups fat-free milk
3 tablespoons grated Parmesan cheese
2 tablespoons spicy brown mustard
2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano

Steps:

  • In a large nonstick skillet, saute mushrooms in butter until tender. Add garlic; cook 1 minute longer. Add 1-1/4 cups broth, rosemary and thyme. Bring to a boil; cook until mixture is reduced by two-thirds. , Add 2/3 cup broth, sherry, teriyaki and hot pepper sauce; cook and stir over high heat until mixture is reduced by two-thirds. Add remaining broth. Reduce heat; simmer for 5 minutes., In a small bowl, combine milk powder and cornstarch; gradually stir in milk until blended. Stir into sauce. 1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package grated Parmesan cheese, divided
1 cup olive oil
20 mushrooms, stems removed

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine the cheese spread, cream cheese, and 1/2 package of Parmesan cheese in a bowl until well blended; cover and refrigerate.
  • Place the olive oil in a bowl. Dip each mushroom in the oil, covering entirely. Place the mushroom face down on a baking sheet lined with parchment paper. Cover mushrooms with another sheet of parchment paper.
  • Bake in the preheated oven until tender, about 12 minutes. Remove from oven and allow mushroom to cool slightly. Line the baking sheet with a clean sheet of parchment paper. Over-stuff each mushroom cap with the prepared cheese mixture and arrange on the baking sheet.
  • Return the baking sheet to the oven, and continue baking until the cheese is melted, about 12 minutes more. Sprinkle with the remaining 1/2 package Parmesan cheese before serving.
