HOMEMADE DILL PICKLE CHIPS
Steps:
- Peel the potatoes, then slice thin with a mandolin. You should have about 6 cups of sliced potatoes. Rinse the potatoes and drain.
- In a medium bowl add all the ingredients and toss to combine. Let marinate for at least 30 minutes, tossing occasionally.
- Preheat oven to 400°F. For best results use a convection bake option.
- Place the potatoes in a fine mesh strainer and drain all the liquid out.
- Line two baking sheets with parchment paper. Then place the potatoes in a single layer on the baking sheets. This will only do half of the potatoes.
- Place in the oven for 10 minutes. Flip. Then return to the oven for 8-10 minutes. Watch closely so that they do not burn.
- Remove the chips from the baking sheets into a bowl.
- Repeat with the remaining potatoes.
- Serve with your favorite dip - ranch or blue cheese.
DILL-PICKLE CHIPS
Pickling gives crisp, mellow vegetables spunky personality. These Kirby cucumbers -- a small, unwaxed type that's perfect for pickles -- are seasoned with dill and garlic. Salting the cucumbers helps draw out excess water, ensuring crisp results.

- Cut the cucumbers into 1/2-inch-thick rounds, and transfer to a colander set in a bowl. Toss well with salt. Refrigerate cucumber rounds 1 hour.
- Rinse cucumber rounds well; drain. Pat dry between paper towels. Transfer cucumber slices to a large bowl.
- Bring 3 cups water, vinegar, dill seed, and garlic to a boil in a medium saucepan, stirring. Reduce heat; simmer 4 minutes. Let mixture cool slightly, about 10 minutes.
- Add chopped dill to cucumber slices, and toss to combine. Pour in the brine. Let cool completely, about 30 minutes. Transfer mixture to airtight containers, and refrigerate at least 1 week (pickles will keep 3 weeks more).
DILL PICKLES

- Combine the salt and water in a pitcher and stir until the salt has dissolved.
- Rinse the cucumbers thoroughly and snip off the blossom end stem. Set aside.
- Place the peppercorns, pepper flakes, garlic, dill seed and fresh dill into a 1-gallon crock. Add the cucumbers to the crock on top of the aromatics. Pour the brine mixture over the cucumbers in order to completely cover. Pour the remaining water into a 1-gallon ziptop plastic bag and seal. Place the bag on top of the pickles making sure that all of them are completely submerged in the brine. Set in a cool, dry place.
- Check the crock after 3 days. Fermentation has begun if you see bubbles rising to the top of the crock. After this, check the crock daily and skim off any scum that forms. If scum forms on the plastic bag, rinse it off and return to the top of the crock.
- The fermentation is complete when the pickles taste sour and the bubbles have stopped rising; this should take approximately 6 to 7 days. Once this happens, cover the crock loosely and place in the refrigerator for 3 days, skimming daily or as needed. Store for up to 2 months in the refrigerator, skimming as needed. If the pickles should become soft or begin to take on an off odor, this is a sign of spoilage and they should be discarded.
REFRIGERATOR DILL PICKLES
These pickles taste so fresh and have just the right amount of dill and garlic. They taste great along-side a hotdog on a bun. They also taste great alone as a healthy snack. The pickles should be good for 6 weeks. Enjoy! You can also cut cucumbers into chips if you prefer a pickle chip instead of a spear.

- Place five garlic clove halves and five dill heads in each of three hot 1-quart jars. Pack cucumbers into jars to within 1/2 in. of the top., In a large saucepan, bring water, vinegar, salt and pepper flakes to a boil. Carefully ladle hot liquid over cucumbers, leaving 1/2-in. headspace. Add remaining five garlic clove halves to each jar. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

- Wash the cucumbers you will use to make into dill pickle chips, but don't scrub. Slice the cucumbers into 1/4"-1/8" slices.
- In a small bowl mix vinegar, water, salt, and mixed pickling spice. Stir until the salt has dissolved.
- Pour the brine over the cucumber slices, if necessary place something heavy over the dill pickle chips to keep them submerged. Cover the top of the jar with cheesecloth and secure with a rubber band so bugs can't get in. Leave on the counter for 2-4 days out of the sunshine until they taste like pickles.
