SLOW-ROASTED PORK WITH RED CABBAGE, JALAPEñOS, AND MUSTARD

Slow-Roasted Pork with Red Cabbage, Jalapeños, and Mustard image

The cabbage in this recipe is assertive and acidic, balancing the richness of the pork, while the jalapenos add a nice kick.

Categories     cabbage     sandwich     pulled pork     tom colicchio

Yield 4

Number Of Ingredients 13

1 tbsp. caraway seeds
3 whole cloves
1 star anise
1/2 tbsp. black peppercorns
1/2 c. kosher salt
1 boneless pork shoulder
2 c. shredded or thinly sliced red cabbage
2 tbsp. extra-virgin olive oil
1 tbsp. red wine vinegar
salt and pepper
4 ciabatta rolls
2 tbsp. Dijon mustard
1 large jalapeño pepper (see Tip)

Steps:

  • Preheat the oven to 250 degrees F.
  • Combine the caraway, cloves, star anise, and peppercorns in a spice grinder and process until they have the coarseness of salt. Combine the spices with the salt.
  • Rub the pork vigorously with the spice mixture until completely covered. Any spice mixture that doesn't stick to the meat can be removed. Place the meat in a roasting pan, cover tightly, and cook in the oven for about 4 hours. The meat should be fork-tender and some of the fat should have rendered into the bottom of the pan. Transfer the meat to a plate and discard the fat from the pan.
  • Increase the oven heat to 350 degrees F.
  • In a bowl, combine the cabbage, oil, and vinegar and season generously with salt and pepper. The cabbage should taste quite salty and tangy.
  • Slice the ciabatta rolls in half. Spread the mustard evenly across the bottom halves. Using a couple of forks, pull the roasted pork apart and distribute some on the bottom and top halves. Place the bread in the oven and remove when the bread is lightly toasted and the meat is heated through. Add the cabbage on the bottom halves and top with the jalapeño. Close the sandwiches, cut into halves, and serve.

Categories     condiment

Time 1h35m

Yield 2 cups

Number Of Ingredients 5

3 jalapenos, sliced
1 large red onion, sliced into half-moons
1 cup apple cider vinegar
1 teaspoon sugar
1 teaspoon kosher salt

Steps:

  • Put the jalapenos and red onions in a 16-ounce wide-mouth mason jar.
  • In a small saucepan, combine the vinegar, sugar, salt and 1 cup water. Bring to a boil, stirring until the sugar and salt are dissolved.
  • Pour the hot liquid over the veggies in the jar, screw on the lid and set aside. When it has cooled to room temperature, transfer the jar to the fridge to chill for a minimum of an hour, which will allow the vegetables to pickle. The pickles will last in the fridge for 3 days. Serve them on pulled pork sandwiches.

PORK ROAST WITH ROASTED JALAPEñO GRAVY

Pork Roast With Roasted Jalapeño Gravy image

Eddie Hernandez, who runs Taqueria del Sol, a string of easygoing Mexican restaurants in Georgia and Tennessee, considers himself a born-again Southern boy whose food reflects a mash-up of the two cultures. He grew up in a working-class neighborhood in Monterrey, Mexico, where a pork roast like this would have never made it onto the table. But he came to love the roast's role in a traditional Southern Sunday supper, and decided to give it his own Mexican twist. It has become one of the most popular specials at his restaurants. The granulated garlic and onion are essential to the flavor. The roast cooks fast in a hot oven that crisps the fat. The residual oven heat roasts the jalapeños while the meat rests. Once you make the roux, the rich gravy for the dish comes together quickly.

Categories     dinner, meat, main course

Time 1h15m

Yield 8 servings

Number Of Ingredients 12

1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon granulated garlic
1 tablespoon granulated onion
2 1/2 to 3 pounds boneless pork loin, with a good layer of fat on it
3 tablespoons butter
4 tablespoons plus 2 teaspoons all-purpose flour
2 jalapeños
1 teaspoon vegetable oil
1 cup half-and-half
2 cups pork stock or chicken stock, preferably homemade
1 teaspoon salt, plus more as needed

Steps:

  • Heat oven to 475 degrees. Mix together salt, pepper, granulated garlic and onion. Place the pork on a rack set in a roasting pan and sprinkle the roast with the spice mixture, rubbing it lightly so it adheres to the meat.
  • Roast for 30 to 40 minutes or until the pork reaches an internal temperature of 145 degrees. If the fat begins to get too dark, tent with foil.
  • While the roast is cooking, make a roux for the gravy by melting the butter in a small saucepan set over medium heat. Add the flour all at once and whisk vigorously until smooth. When the mixture thins and starts to bubble, reduce the heat to low. Cook for 1 to 2 minutes, whisking slowly, until the mixture smells nutty and toasty and is still light colored. Cook for 2 more minutes, stirring occasionally, then set aside and let cool.
  • When the roast is done, cover and let it rest for at least 10 minutes. Reduce the oven to 450 degrees. Place the jalapeños in a small pan, brush with oil and roast for 6 minutes, or until soft. Remove the stems and some or all of the seeds and membranes, depending on how hot the peppers are and how hot you want the gravy. Dice the jalapeños.
  • Place the half-and-half, stock, salt and jalapeños in a medium saucepan and bring to a boil. Quickly reduce heat to medium. Cook for about 5 minutes, stirring occasionally, until slightly reduced. Stir in 4 tablespoons of the roux and simmer for 2 to 3 minutes, whisking continually, until the sauce is thickened and bubbly. Stir in a little more roux if needed to reach the desired thickness and, if desired, any accumulated juices from the roast. Slice the roast, cover in gravy and serve.

JALAPEñO-ROAST PORK

Jalapeño-roast Pork image

This slow-roasted pork dish came to me from my Bayona partner, Regina Keever. The succulent meat lends itself to two fantastic preparations. For a Latin-inspired meal, serve it with Green Rice (p. 309). Or make ciabatta sandwiches with Pickled Cabbage and Creole Mustard (p. 154), from the leftovers.

Yield makes 8 to 10 servings

Number Of Ingredients 8

1 boneless pork shoulder (about 6 pounds)
Juice and zest of 2 oranges (about 2/3 cup)
2 jalapeños, stemmed, seeded, and diced
2 tablespoons chopped fresh thyme
2 tablespoons minced garlic
2 tablespoons kosher salt
2 tablespoons cracked black pepper
2 tablespoons olive or vegetable oil

Steps:

  • Preheat the oven to 325°F.
  • Rinse the pork shoulder and pat dry. Using a paring knife, make several 1/2-inch-deep incisions on both sides of the meat. Mix the juice, jalapeños, thyme, garlic, salt, pepper, and oil, either by hand or by pulsing in a food processor until just mixed. Rub the meat with the mixture, being sure to massage some down into the incisions.
  • Place the meat in a roasting pan fat side up, cover with foil, and roast for 3-4 hours, or until the meat is fork-tender. Cool, remove it from the pan, then shred or slice the pork as desired. After the meat has been removed, add a little water or broth to the roasting pan and stir to dissolve any brown bits, then strain the juices and pour them back over the sliced or shredded meat.

1/3 cup finely chopped shallot or onion
1 tablespoon butter
1 cup water
2/3 cup couscous
1 teaspoon freshly grated lemon zest
1 1/2 teaspoons minced fresh rosemary leaves or 1/2 teaspoon crumbled dried rosemary
1/4 cup walnuts, toasted lightly and chopped fine
2 teaspoons fresh lemon juice, or to taste

Grill kebabs, turning and basting them, 10 to 15 minutes more, or until pork is cooked through and registers 160°F. on a meat thermometer. (Alternatively, kebabs may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)
  • Serve kebabs with couscous.
  • In a small heavy sauce, cook shallot or onion in butter over moderately low heat, stirring, until softened. Add water and bring to a boil.
  • Stir in couscous, zest and rosemary and cover pan. Remove pan from heat and let stand 5 minutes. Fluff couscous with a fork and stir in walnuts, lemon juice and salt and pepper to taste. Serves 2.

JALAPEñO GRILLED PORK CHOPS

Jalapeño Grilled Pork Chops image

Juicy jalapeños offer discernible heat, but they have a higher purpose beyond that: They provide welcome freshness with their distinct vegetal flavor. When blitzed with aromatic cilantro stems and plenty of garlic, jalapeños transform into a punchy marinade that flavors and tenderizes pork chops gloriously, and tinges them a bright Reptar-Bar green, too. That brilliant color, evidence of the chlorophyll in the peppers and herbs, stays vibrant even after a fiery kiss on the grill.

Provided by Eric Kim

Categories     dinner, steaks and chops, main course

Time 45m

Yield 4 servings

Number Of Ingredients 15

5 large jalapeños, stemmed
5 large garlic cloves, peeled
1 bunch cilantro stems, cut into 1-inch pieces (about 1 packed cup)
2 tablespoons rice vinegar
1/2 cup olive oil, plus more for cooking
1 tablespoon kosher salt (Diamond Crystal)
2 teaspoons granulated sugar
8 thin-cut, bone-in pork loin chops (1/2-inch thick)
1 large jalapeño, thinly sliced into rings
1 small red onion, thinly sliced into rings
1/3 cup rice vinegar
1 teaspoon kosher salt (Diamond Crystal)
2 tablespoons granulated sugar
Cilantro leaves and tender stems, for garnish
Cilantro rice or cooked white rice, for serving (optional)

Steps:

  • Make the pork chops: In a food processor, blitz the jalapeños, garlic, cilantro stems, rice vinegar, olive oil, salt and sugar until smooth. Place the pork chops in a large bowl or resealable container and pour the marinade over them; turn the chops to evenly coat. Cover and refrigerate for at least 30 minutes and up to 24 hours.
  • While the chops marinate, prepare a charcoal grill for direct high-heat cooking, or heat a gas grill to medium-high.
  • Make the relish: In a small bowl, toss the jalapeño, red onion, rice vinegar, salt, sugar and 2 tablespoons water. Set aside to quick-pickle until ready to serve, or refrigerate for up to 24 hours.
  • Carefully grease the grill grate: Use tongs to grip a wadded paper towel dipped in oil and then rub the grates with the oiled towel. With the marinade clinging to them, place the pork chops on the hot greased grate. Grill until the chops are charred at the edges and no longer pink in the middle, 2 to 3 minutes per side. The meat is ready to flip when it releases easily from the grates. (If using a gas grill, close the lid between flips.) Alternatively, cook the chops on the stovetop in batches. Heat a large skillet or grill pan over medium-high. Add enough oil to lightly coat the bottom of the pan, and heat until shimmering. Add the chops, with the marinade clinging to them, to the pan. Sear until browned and caramelized at the edges and no longer pink in the middle, 3 to 4 minutes per side. Discard any remaining marinade.
  • Serve the chops with the relish and cilantro on top. If you'd like, serve rice alongside.

JALAPENO AND CANADIAN BACON BREAKFAST QUESADILLAS

Jalapeno and Canadian Bacon Breakfast Quesadillas image

Make these quesadillas as spicy as you'd like by adjusting the amount of jalapeño. Complete with Canadian Bacon, eggs and cheese, you can't go wrong.

Provided by Jones Dairy Farm

Categories     Trusted Brands: Recipes and Tips     Jones Dairy Farm

Time 30m

Yield 2

Number Of Ingredients 13

3 tablespoons unsalted butter, divided
2 jalapeno peppers, seeded and chopped
3 slices Jones Dairy Farm Canadian Bacon, chopped
4 large eggs
2 tablespoons whole milk
1 teaspoon extra virgin olive oil
1 pinch sea salt
1 cup shredded Mexican blend cheese, divided
2 ounces cream cheese, softened
2 flour tortillas
2 green onions, sliced
1 tablespoon Sour cream
¼ teaspoon Salsa

Steps:

  • In non-stick omelet pan, melt 1 tablespoon butter over medium heat.
  • Add peppers and cook for 2-3 minutes, tossing frequently. Add Canadian Bacon and cook for another 1-2 minutes, tossing frequently. Remove to paper-towel lined plate.
  • In medium mixing bowl, whisk together eggs and milk, beating until frothy.
  • Wipe out omelet pan, add 1 tablespoon butter and extra virgin olive oil to pan and heat over medium low heat.
  • Once butter is melted, pour in eggs. Sprinkle sea salt over eggs and let sit for about 3 minutes, adjusting temperature as necessary to ensure a low, slow cook without burning the bottom. Once sides are set but middle is still wet, sprinkle 1/3 cup cheese, peppers and Canadian Bacon over eggs. Cook for 1 minute, then loosen edges with silicone spatula and flip eggs. Aim for mostly one large piece of egg, any cracks will slightly repair when other side cooks. Cook until bottom is set, 2-3 minutes, then slide onto plate and set aside.
  • Spread cream cheese over tortillas.
  • Place cast iron skillet over medium heat and add 1/2 tablespoon butter. Once melted, place prepared tortilla in pan, cream cheese side up. Sprinkle 1/3 cup cheese over entire surface and place half of the eggs over one half of tortilla. Sprinkle half of green onions over eggs. Cook over medium to medium-low heat until cheese is melted, then fold in half.
  • Remove to cutting board and let sit for 1-2 minutes before slicing. Repeat with other tortilla and remaining eggs. Serve with sour cream and salsa.

JALAPEñO-ROAST PORK ON CIABATTA WITH PICKLED CABBAGE AND CREOLE MUSTARD

Jalapeño-roast Pork on Ciabatta with Pickled Cabbage and Creole Mustard image

On its own, Jalapeño-roast Pork (p. 269) makes for an incredible meal. But these sandwiches, made from the leftover pork, are so delicious that you may end up roasting the shoulder just to make them. We served the sandwiches at Spice Inc. for two years. I originally learned this recipe from my partner Regina Keever, but the recipe has since been taken over by Jane Ruppel, our beloved office manager and resident party monster, who prepares it for virtually every Bayona get-together, by request. The meat can be used in countless ways and is simply irresistible. The pickled cabbage, spicy Creole mustard, and pickles cut the richness of the pork.

Yield makes 8 servings

Number Of Ingredients 12

2 cups apple cider or cane vinegar
2 tablespoons salt
1/2 cup sugar
4 cups finely shredded green cabbage
2 cups finely sliced white or yellow onions
1 teaspoon freshly ground black pepper
24 ounces shredded Jalapeño-roast Pork (p. 269) or other cooked pork (about 3 cups)
8 ciabatta rolls, or 2 loaves ciabatta, each cut into 4 equal squares
Mayonnaise (p. 181)
Creole mustard
Pickles
Pickled cabbage

Steps:

  • Place the vinegar, salt, and sugar in a small saucepan and bring to a boil. Place the cabbage and onions in a large bowl. Pour the hot vinegar mixture into the bowl, add pepper, and toss. Let stand for 15 minutes, then toss again, taste, and adjust seasoning. Add more vinegar, salt, or sugar accordingly. Place in a glass or plastic container and set aside.
  • Place about 3 ounces of warmed shredded meat on bread or rolls with a little mayonnaise, mustard, and sliced pickles, and top with pickled cabbage.
