1/2 pound small Yukon Gold potatoes
6 tablespoons extra-virgin olive oil, divided
1 tablespoon plus 2 teaspoons finely chopped oregano, divided
2 1/4 teaspoons fine sea salt, divided
8 (5-ounce) pieces skinless black cod, Pacific cod, or haddock fillet (about 1 inch thick), any bones removed
1 lemon, very thinly sliced
6 garlic cloves, thinly sliced
1/2 cup Kalamata-style black olives, pitted and cut into slivers
1/2 cup flat-leaf parsley leaves
Equipment: an adjustable-blade slicer; 8 (12- to 15-inch) squares of parchment paper; kitchen string

Steps:

  • Preheat oven to 400°F with a baking sheet on bottom rack.
  • Cut potatoes into very thin slices with slicer. Toss potatoes with 2 tablespoons oil, 1 teaspoon oregano, and 1/4 teaspoon sea salt. Divide potatoes among parchment squares, arranging them in center, slightly overlapping, then top with a piece of fish. Sprinkle each fillet with a scant 1/4 teaspoon sea salt, then top each with a lemon slice, a few garlic slices and olive slivers, parsley leaves, 1/2 teaspoon oregano, and 1/2 tablespoon oil.
  • Gather sides of parchment up over fish to form a pouch, leaving no openings, and tie tightly with kitchen string. Put packages on hot baking sheet and bake until fish is just cooked through, 15 to 22 minutes.

Baking fish is one of my favorite ways of preparing it - simple, with moist and tasty results. An outstanding recipe, cod, halibut, and red snapper work well in it (I especially like it with cod). While I prefer fresh fish, I have used previously frozen fish with great results. This is a perfect dish for Christmas Eve or any other occasion, including in-a-hurry week nights.

2 lbs halibut fillets or 2 lbs red snapper fillets
4 medium fresh tomatoes, chopped (or 4 cups halved cherry tomatoes)
1 cup chopped kalamata olive
6 garlic cloves, minced
1/2 cup chopped fresh parsley
1/4 cup extra virgin olive oil
1/2 teaspoon crushed red pepper flakes (more or less to taste)
salt & freshly ground black pepper (remember that the olives are salty)

Steps:

  • Preheat oven to 350*.
  • Rinse and pat dry the fish fillets, and lightly salt and pepper them.
  • Place filets on a foil-lined, rimmed baking dish (I have used both a 9x13 glass baking dish and a 10x15 rimmed baking sheet with equally good results).
  • Mix together the remaining ingredients, topping fish fillets with all of the mixture.
  • Bake for 20-25 minutes, depending on thickness of fish.
  • This is wonderful served with "smashed" red potatoes or a good crusty bread to sop up the yummy juices, and a green salad with balsamic vinegar dressing.

Middle Eastern Fish or Salmon With Peppers and Tomatoes image

This dish always comes out delicious, even with changes to the ingredients. I have made it with salmon, halibut, red snapper, swordfish and tilapia. You can control the heat by the amount of hot pepper you use. If you don't have a jalapeno on hand, substitute 1/4 tsp cayenne pepper ( I usually use both in this recipe). If you don't have za'atar spice blend, use 1/4 tsp thyme, 1/4 tsp marjoram, 1/4 tsp oregano, 1/2 tsp roasted sesame seeds and 1 tsp sumac for this recipe. This looks as good as it tastes!

2 lbs fish
2 onions, large, sliced thinly
2 red bell peppers, sliced
2 green bell peppers, sliced
1 large garlic clove, minced
2 tablespoons olive oil
28 ounces whole tomatoes (I use Italian tomatoes)
1 jalapeno pepper, chopped finely
1/4 teaspoon cayenne pepper (optional)
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon orange zest (fresh)
1 teaspoon lemon zest (fresh)
1 teaspoon za'atar spice mix, spice blend
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon paprika

Steps:

  • Preheat oven to 350°F.
  • In large saute pan or skillet, saute the onions, red bell peppers, green bell peppers and jalapeno in olive oil for about 5 minutes on med heat. Don't let them color.
  • Add garlic, stir and cook 1 minute.
  • Add tomatoes, broken up by hand, with all the juice from the can. Add 1/2 cup water.
  • Add everything else except the fish. Stir and cook for about 2 minutes. Taste and correct seasoning if necessary.
  • Put 1/3 of the tomato mixture in a 9x13 roasting dish (Spray with non-stick spray first).
  • Arrange fish on tomato mixture.
  • Spread the rest of the hot tomato mixture over the fish.
  • Bake until fish is just done, about 10-15 minutes, depending upon the thickness of your fish - check it after 5 minutes or so to see how it's doing.

25 black, salt-cured olives such as Gaeta or Kalamata, rinsed, pitted, and roughly chopped
2 1/2 teaspoons bottled capers, rinsed
2 tablespoons plus 1 1/2 teaspoons red onion, finely diced
8 ripe plum tomatoes, cut into medium dice
10 large basil leaves, roughly chopped
1/2 cup plus 3 tablespoons fresh Italian flat-leaf parsley, roughly chopped
1/2 cup extra-virgin olive oil
1 tablespoon plus 2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper plus more to taste
1 teaspoon red pepper flakes
10 (6-ounce) red snapper fillets, skin on
1 cup canola oil
6 tablespoons fresh lemon juice (from 2 lemons)

Steps:

  • In large bowl stir together olives, capers, red onion, tomatoes, basil, 3 tablespoons parsley, and olive oil. Add 2 teaspoons salt, 1/2 teaspoon pepper, and red pepper flakes, and let stand at room temperature 30 minutes.
  • Holding very sharp paring knife at 30-degree angle from fillets, cut 2 diagonal slits through skin and partially into flesh, making slits 1/2 inch apart.
  • In large heavy skillet over high heat, heat 1/3 cup canola oil until hot but not smoking. Working in 3 batches, sprinkle fillets with 1 tablespoon salt and 1 teaspoon pepper and place skin-side down in hot pan. Saué until skin is rich golden brown, about 3 minutes, lowering heat if necessary to prevent burning. Turn fillets over and cook 3 minutes more. Transfer to platter and loosely cover with foil to keep warm. Cook remaining two batches in same manner, wiping pan clean between batches and starting with fresh oil for each batch.
  • After removing last batch of fish, pour lemon juice into pan and swirl around to combine with pan juices. Drizzle over fish, then sprinkle with remaining 1/2 cup parsley. Garnish with tomato-olive mixture.
