Yield Makes 12 servings

Number Of Ingredients 10

3 large shallots, minced
6 tablespoons chopped fresh mint
6 tablespoons chopped fresh oregano
6 large garlic cloves, minced
1 tablespoon sugar
24 lamb rib chops (from three 1 1/4-to 1 1/2-pound racks of lamb, cut between bones into individual chops)
6 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
1 tablespoon finely grated lemon peel
Fresh oregano sprigs (for garnish)

Steps:

  • Mix minced shallots, chopped mint, chopped oregano, minced garlic, sugar, and 1 tablespoon salt in small bowl. Press 1 rounded teaspoon shallot-herb mixture onto eye of each lamb chop. Turn chops over onto large rimmed baking sheet. Press remaining shallot- herb mixture onto eye of each chop. Cover lamb chops with sheet of plastic wrap and refrigerate overnight.
  • Whisk olive oil, lemon juice, and lemon peel in small bowl until slightly thickened and well blended. Season lightly with salt and generously with freshly ground black pepper. Spoon oil mixture lightly over chops. Turn chops over and spoon remaining oil mixture over. Let stand at room temperature 1 hour.
  • Prepare barbecue (medium-high heat). Grill lamb chops to desired doneness, about 3 minutes per side for medium-rare. Transfer lamb chops to platter. Garnish with fresh oregano sprigs and serve.

LAMB CHOPS WITH MINT PESTO AND MUSTARD MASHED POTATOES

Lamb Chops With Mint Pesto and Mustard Mashed Potatoes image

This is your complete meal here and it sounds wonderful. I haven't tried it yet, but just thinking about it has me putting it to the top of my "need to cook" list. This is from a book about roasting meats...

Categories     Lamb/Sheep

Time 50m

Yield 2 chops per person, 4 serving(s)

Number Of Ingredients 14

3 cups fresh mint leaves
1/3 cup pine nuts
1/2 cup grated parmesan cheese
1 tablespoon fresh lemon juice
3 tablespoons olive oil
2 lbs red potatoes, about 7 medium, unpeeled
8 lamb loin chops, from midloin, each about 1 1/2-inch thick
1 pinch salt
1 pinch pepper
1 tablespoon olive oil
7 tablespoons butter, at room temperature
1 tablespoon heavy cream
2 tablespoons whole grain mustard
2 garlic cloves, crushed

Steps:

  • Preheat oven to 400 degrees F.
  • In large saucepan, combine potatoes with salted water to cover by 3 inches. Place over high heat; bring to a boil, and cook until tender when pierced with a knife, about 30 minutes.
  • When potatoes are cooking, make mint pesto: In food processor, combine mint, pine nuts, cheese, and lemon juice and process until roughly chopped. Add oil and puree until smooth. Transfer to a covered container and refrigerate until needed.
  • Using dampened kitchen string, tie each lamb chop to hold tail in place, curled into the chop, pinwheel-like. Place chops in roasting pan just large enough to accommodate them in single layer and season with slat and pepper. Drizzle oil evenly over chops.
  • Place lamb in oven and roast for 10 minutes. Reduce heat to 300 degrees F and conti8nue roasting until thermometer inserted into thickest part away from bone registers 150 degrees F for medium, about 10 minutes longer. Remove lamb to warmed platter, cover loosely with foil, and let rest for 5 minutes.
  • When potatoes are ready, drain and, when just cool enough to handle, peel, place in bowl, and mash. Return potatoes to saucepan and add butter, cream, mustard, and garlic. Season with salt and pepper, place over medium heat and stir until mixture is heated through. Spoon bed of mashed potatoes on each warmed dinner plate, top with 2 lamb chops, and place a spoonful of mint pesto on the side.

Categories     Herb     Lamb     Potato     Vegetable     Sauté     Quick & Easy     Low/No Sugar     Wheat/Gluten-Free     Mint     Zucchini     Gourmet

Yield Serves 2

Number Of Ingredients 7

4 rib lamb chops (about 1 1/2 pounds)
2 tablespoons olive oil
a 1/2-pound russet (baking) potato
1 zucchini, scrubbed and cut into 1/4-inch dice
1 tablespoon fresh lemon juice
1 tablespoon water
2 tablespoons finely chopped fresh mint leaves

Steps:

  • In a heavy skillet large enough to hold the lamb chops without touching heat the oil over moderately high heat until it is a hot but not smoking and in it sauté the potato, peeled and cut into 1/4-inch dice, turning the pieces constantly with a metal spatula, for 6 to 8 minutes, or until they are golden. Transfer the potato pieces with a slotted spoon to paper towels and let them drain. In the oil remaining in the skillet sauté the chops, patted dry and seasoned with salt and pepper, over moderately high heat for 5 minutes on each side for medium-rare meat and transfer them to a heated platter. Remove the skillet from the heat, pour off the fat, and add the zucchini. Cook the zucchini over moderate heat, stirring, for 1 minute, stir in the lemon juice and the water, and cook the mixture, for 1 minute. Stir in the potato pieces, the mint, and salt and pepper to taste and spoon the mixture around the lamb chops.
