LIME APRICOT SOY WINGS
The lime is a refreshing change - with a garlic kick! From Gourmet magazine December 1999. I have made this many times and had great response to it. People who don't like the Buffalo wings enjoy these, and the spice loving wing fans just ask for more!

Steps:
- NOTE: these are sort of sticky and messy to make; disposable roasting pans work great
- Preheat oven to 425 degrees Divide the wings among the two pans, arranging in a single layer.
- Puree the remaining ingredients in a blender and pour half over each pan of wings.
- Bake wings in upper and lower thirds of the oven for 50 minutes.
- Turn the wings and switch positions of the pans in the oven, then bake 45 minutes more, until liquid is thick and sticky.

LIME, APRICOT, AND SOY-SAUCE CHICKEN WINGS
Steps:
- Preheat oven to 425°F. Cut off wing tips, reserving for another use, and halve wings at joint. Divide wings between 2 large roasting pans, arranging in single layers.
- Purée remaining ingredients in a blender and pour mixture over wings, dividing evenly between pans. Bake wings in upper and lower thirds of oven 50 minutes. Turn wings over and switch position of pans in oven, then bake 45 minutes to 1 hour more, or until liquid is thick and sticky.
- Serve wings warm or at room temperature.

- Combine lime zest, lime juice, honey, garlic, soy sauce, and Tabasco sauce in a large bowl. Add chicken wings and toss to combine. Cover with plastic wrap and refrigerate, stirring occasionally, for at least 3 and up to 8 hours.
- Preheat oven to 450 degrees. Line 2 baking sheets with aluminum foil, then with racks. Remove wings from the marinade and place on racks, reserving marinade. Brush wings with marinade and sprinkle with salt. Roast 15 minutes. Remove from oven. Baste with reserved marinade. Turn wings over, and baste the second side. Return to oven, and roast until cooked through, 20 to 25 minutes more.

- In a large bowl, mix together the honey, lime juice, lime peel, garlic, salt and ground black pepper.

- Wash the chicken wings and dry as much as possible.
- Preheat oven at 400 degrees.
- Place chicken in a deep baking dish.
- Mix all other ingredients together in a bowl.
- Pour over chicken.

- IMPORTANT: Due to the hot cooked sugar, chicken will be extra hot and easy to burn.

- Cut chicken wings into three sections; discard wing tip section. In a shallow bowl or large resealable plastic bag, combine cornstarch, baking powder, salt, pepper and sugar. Dip chicken pieces in eggs, then coat generously with cornstarch mixture., In an electric skillet or deep-fat fryer, heat oil to 350°. Fry chicken wings, a few at a time, for about 9 minutes or until juices run clear. Drain on paper towels. Keep warm. , Meanwhile, in a large saucepan, combine apricots and water; bring to a boil. Reduce heat; cover and simmer until apricots are tender. , Transfer to a blender or food processor. Add the sugar, vinegar, honey and cayenne; process on high until smooth. Cool slightly.
