LOW FAT VANILLA PUDDING
My mom makes a family dish called biscuits and pudding for special breakfasts. It's a very old recipe and the pudding is made with whole milk, butter and whole eggs. It's Heaven... THIS pudding is ALMOST as good, and doesn't make you feel like you need to spend half the day on the treadmill. ;-)

- Beat all the ingredients together with a whisk in a sauce pan except the vanilla and butter flavor and put on medium heat. Slowly bring to a boil, stirring constantly until the pudding is thickened. Remove from heat and add vanilla and butter flavor. Put into six ramkins and chill, or serve warm.

- In 2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
- Gradually stir at least half of the hot mixture into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla.
- Pour pudding into dessert dishes. Cover and refrigerate about 1 hour or until chilled. Store covered in refrigerator.

- In large bowl, beat milk and pudding mix with electric mixer on low speed until well mixed; beat in yogurt. Fold in whipped topping.
- Place 24 vanilla wafers in a single layer in ungreased 13x9-inch (3-quart) glass baking dish. Spoon half of the pudding mixture over wafers. Place 6 sliced bananas over pudding mixture. Spoon remaining pudding mixture over bananas. Arrange remaining 24 vanilla wafers over top of pudding.

SUMMER PUDDING WITH LOW-FAT VANILLA CUSTARD SAUCE

- Stir 3/4 cup water and sugar in heavy medium saucepan over medium-high heat until sugar dissolves. Add strawberries and raspberries and bring just to boil, stirring constantly until berries release their juices, about 5 minutes. Stir in blueberries. Remove from heat. Let stand until lukewarm, about 30 minutes. Stir in vanilla. Strain berry mixture, reserving berries and juices separately.
- Arrange 15 ladyfingers, side by side and standing upright, around inside of 5- to 6-cup soufflé dish (about 7 inches in diameter and 3 inches high). Arrange 6 ladyfingers in bottom of dish, trimming to fit. Spoon half of berries into lined dish. Top with 6 ladyfingers, trimming to fit. Spoon remaining berries over.
