MAPLE-CARAMELIZED ONION QUICHE
Great for any mealtime, this quiche is topped with onion caramelized in maple syrup, bacon, and fresh parmesan.

Steps:
- Preheat the oven to 200 °C (400 °F).
- Cut the onion lengthwise in half and thinly slice following the grain.
- Cut bacon into small dice. Heat butter in a frying pan and sauté bacon.
- Add onions, salt, and pepper and cook over medium heat for 10 minutes. When onions are slightly colored, add maple syrup and sauté, turning off the heat when onions become caramelized. Let cool.
- Mix eggs, milk, and fresh cream in a bowl and add salt and pepper, to taste.
- Roll out the pastry sheet until it is about 3 mm (1/8 in) thick, spread in the pie plate, cut off excess pie dough, and prick vent holes all over the bottom of the sheet with a fork.
- Place the sauté into the pie plate, and pour the sauce over the mixture. Top with Parmigiano Reggiano.
- Bake in a 200 °C (400 °F) oven for 20 minutes first, then bake at 160 °C (325 °F) for 5 minutes. The quiche is done when the top is browned.
- Cut into easy-to-eat slices and plate.
MAPLE GLAZED SWEET POTATOES WITH BACON AND CARAMELIZED ONIONS
I made this for Thanksgiving dinner and my family went crazy over it. It is simple, looks great on the table and has already been requested for Christmas dinner! This recipe can be adjusted as you like by adding more or less bacon and onions.

- Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
- Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
- Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
- Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

- Layer onions in a greased 13-in. x 9-in. baking dish. Combine syrup and butter; pour over onions. Bake, uncovered, at 425° for 40-45 minutes or until tender.

- Heat the oil in a pan over medium heat.
- Add the onions and water and cook until completely tender and caramelized and golden, about 40-50 minutes, adding more water as needed.
- Stir in the maple syrup and vinegar and cook until most of the liquid is gone, about 2-3 minutes.
MAPLE CARAMELIZED ONIONS

- Melt butter in a saucepan. Add chopped onions, pinch of salt, and pepper to taste. Sauté on medium heat until soft and starting to brown (soft gold), stirring occasionally. Add maple syrup, turn heat to low/medium-low, stirring occasionally, about 15 minutes. Add red wine vinegar. Let cook on medium-low until onions become jammy and are a nice deep gold-brown color, about 30 minutes.
MAPLE SWEET POTATO PUREE WITH CARAMELIZED ONIONS
Steps:
- Preheat oven to 375 degrees F.
- Place sweet potatoes, 1/4 cup of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper in a large mixing bowl. Toss to evenly coat and place on sheet tray. Roast in the preheated oven for 35 to 40 minutes or until sweet potatoes are soft. Be sure to check on them after 15 minutes and stir, if needed.
- Meanwhile, in a medium saucepan over medium-high heat, melt butter and add remaining 2 tablespoons of olive oil. Add the sliced onion, 2 tablespoons of maple syrup and season with salt and pepper, to taste. Saute until deep golden brown, about 2 minutes. Remove from the heat and set aside. Add water, 1 tablespoon at a time, if the pan becomes dry.
- Transfer sweet potato mixture to a food processor, (may need to be done in batches) and add about a tablespoon of hot water. Pulse until just blended and then add half the caramelized onions. Pulse just a few times until desired consistency, adding more hot water for a smoother puree. Fold in remaining caramelized onions, reserving some for garnish.
- Serve in a warm dish and garnish with the reserved caramelized onions. YUMMY!!!
CURRIED PUMPKIN SOUP WITH MAPLE CARAMELIZED ONIONS
This recipe was found in The Chicago Tribune. My DH loved it, I'm not a fan of pumpkin. I had some left over brats I sliced and threw in, also I used 1/4 blood orange juice since I forgot to buy oranges and used non fat milk

- In a large skillet over medium-high, combine 2 tablespoons of the olive oil and half of the onions.Saute until onions are very soft and lightly browned, about 5 minutes.
- Add the maple syrup and ginger, then reduce heat to medium-low and continue cooking, stirring often, until the onions are thick and caramelized, about 10 minutes. Set aside.
- Meanwhile, in a Dutch oven over medium-high, combine the remaining 2 tablespoons of olive oil, the remaining onion, the curry powder, red pepper flakes and the apple. Saute until the onion is tender,about 5 minutes.
- Mix in the pumpkin puree and orange juice, then transfer everything in the Dutch oven to a blender or food processor. Add the milk and puree until smooth.
- Return the soup to the pot and return to a gentle simmer. Season with salt and pepper.
- To serve, ladle the soup into bowls, then top each serving with 2 crackers or pieces of toast. Arrange some of the caramelized onions over the crackers or toast.
