BEER AND BROWN SUGAR STEAK MARINADE



Beer and Brown Sugar Steak Marinade image

I concocted this marinade on a lark and it turned out great. The flavors complement and do not overwhelm the natural taste of beef.

2 (16 ounce) beef sirloin steaks
¼ cup dark beer
2 tablespoons teriyaki sauce
2 tablespoons brown sugar
½ teaspoon seasoned salt
½ teaspoon black pepper
½ teaspoon garlic powder

Steps:

  • Preheat grill for high heat.
  • Use a fork to poke holes all over the surface of the steaks, and place steaks in a large baking dish. In a bowl, mix together beer, teriyaki sauce, and brown sugar. Pour sauce over steaks, and let sit about 5 minutes. Sprinkle with 1/2 the seasoned salt, pepper, and garlic powder; set aside for 10 minutes. Turn steaks over, sprinkle with remaining seasoned salt, pepper, and garlic powder, and continue marinating for 10 more minutes.
  • Remove steaks from marinade. Pour marinade into a small saucepan, bring to a boil, and cook for several minutes.
  • Lightly oil the grill grate. Grill steaks for 7 minutes per side, or to desired doneness. During the last few minutes of grilling, baste steaks with boiled marinade to enhance the flavor and ensure juiciness.

A friend gave me this recipe about 10 years ago after we had some nice bear meat at a party he threw. I've never made it but the bear sure was good.

Number Of Ingredients 10

1/2 cup soy sauce
1 tablespoon honey
1/4 cup peanut oil
1/4 cup lemon juice
1 teaspoon curry powder
1 teaspoon chili powder
1 large finely chopped onion
2 garlic cloves, mashed
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut bear meat into bite size pieces.
  • Mix all the ingredients together and put into a plastic zip lock bag or glass bowl with lid.
  • Add bear meat and place in fridge for several hours turning to coat as needed.
  • Soak skewers in water for an hour and thread bear meat onto skewers along with any veggies you may want or the bear meat alone.
  • I did mine with bear, pearl onions and green peppers.
  • Grille to your preference of doneness.

1 medium onion, finely chopped
1/4 cup ouzo
1/2 cup herb and garlic marinade dressing
1 1/2 teaspoons dried garlic
2 tablespoons brown sugar
1/4 cup extra-virgin olive oil
1/3 cup chopped fresh mint
Pinch cayenne pepper, plus pinch more for garnish
1-pound top sirloin steak, cut into 1-inch cubes
Salt and pepper
Thinly sliced green onions, for garnish

Steps:

  • Heat a grill, grill pan, or broiler.
  • Combine all ingredients except steak in a large bowl. Season steak with salt and pepper and then add to marinade. Marinate for 40 minutes. Thread steak onto skewers* and then grill or broil, turning occasionally, until cooked to desired degree of doneness. Transfer to a serving plate and sprinkle with green onions and cayenne pepper, if desired.
  • *Cook's Note: If using wooden skewers, soak them in water for at least 10 minutes before threading meat.

1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds boneless beef sirloin steak, cut into 1-1/2-inch cubes

Steps:

  • In a shallow dish, combine the first 9 ingredients; add beef and turn to coat. Cover and refrigerate for at least 2 hours or overnight, turning occasionally. , Drain and discard marinade. Thread beef onto six metal or soaked wooden skewers. Lightly oil the grill rack., Grill steak, covered, over medium-hot heat or broil 4 in. from the heat for 8-10 minutes or until beef reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), turning occasionally.

1/2 cup olive oil
3 tablespoons vinegar
3 tablespoons honey
2 1/2 teaspoons ground cumin
1 teaspoon paprika
1/4 cup scallion, minced
1/2 teaspoon salt

Steps:

  • Cut meat into 1/4" thick strips, across the grain of the meat.
  • COmbine the other ingredients and mix to blend. Pour over the meat and cover and refrigerate marinating at least 3 hours.
  • Turn meat occasionally.
  • Skewer meat by threading onto long bamboo sticks that have been soaked in water for 20 minutes.
  • Heat broiler pan. Cook 3-5 minutes, basting with marinade. Serve hot.
  • To reheat: Place on baking sheet, cover loosely with foil and heat in 350 degree oven for about 20 minutes or microwave high for 1 minute.
