1 1/2 pounds asparagus, trimmed
1 1/2 cups cherry tomatoes, cut in half
1 tablespoon oil
salt and pepper to taste
1/2 cup parmigiano reggiano (parmesan), grated
1/2 cup balsamic vinegar
2 tablespoons basil, sliced

Steps:

  • Toss the asparagus and tomatoes in the oil, salt and pepper, place on a baking sheet in a single layer, sprinkle on the parmesan and roast in a preheated 400F/200C oven until they start to caramelize, about 15-20 minutes, mixing half way through.
  • Meanwhile, simmer the balsamic vinegar until it starts to thicken, about 10 minutes.
  • Serve the asparagus and tomatoes warm drizzled with the balsamic vinegar and garnished with the fresh basil.

3 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
1 tablespoon olive oil

Steps:

  • Snap off tough ends of asparagus and wash well through 2-3 changes of cold water.
  • Combine all ingredients in a large zip-top plastic bag, seal and marinate for 30-60 minutes.
  • Preheat grill on high heat.
  • Remove asparagus from bag (discard marinade) and place on preheated oiled grill rack.
  • Grill 5 minutes on each side or until asparagus is done.

1 pound asparagus

Steps:

  • Gather the ingredients.
  • In a small bowl, prepare the marinade by combining the chopped onion with the vinegar, lemon juice, mustard, and salt and pepper to taste. Whisk in the oil and set aside while you prepare the asparagus.
  • Bring about 2 inches of water to a boil in a skillet large enough to lay asparagus flat. Add 1/2 teaspoon salt.
  • While the water is coming to a boil, wash the asparagus in cold water. Break off the tough base of each. Remove scales if they are large or sandy.
  • Place the spears in the boiling water. Let the water return to a boil, then simmer the asparagus gently for 5 to 7 minutes. Asparagus should be slightly crisp.
  • Drain and place the asparagus in the dish you plan to marinate them in-an oval-shaped dish works best.
  • Whisk the marinade and pour over warm asparagus. Allow it to marinate at room temperature until cool, then cover with plastic wrap and refrigerate.
  • Remove asparagus from the refrigerator and return to room temperature before serving. Serve as is or, if desired, place lettuce leaves on 6 to 6 plates and top with the marinated spears.

1/2 teaspoon kosher salt
Freshly ground black pepper to taste

Steps:

  • Snap or trim the tough ends of the asparagus and discard. Wash asparagus thoroughly.
  • Fill a large bowl with water and ice. Set aside.
  • Bring a large pot filled 3/4 of the way full with water to a full boil. Immerse asparagus and cook for about two minutes, until bright green.
  • Plunge asparagus in a large bowl of ice water to stop the cooking. Drain.
  • Lay asparagus in an 8 x 8 baking dish or container.

2 cloves garlic, lightly smashed

2 bunches medium asparagus (about 2 pounds), woody ends trimmed and discarded
Kosher salt and freshly ground black pepper
1/4 cup fresh flat-leaf parsley leaves, roughly chopped

Steps:

  • Stir together the olive oil, balsamic vinegar, shallots, garlic and oregano in a medium bowl. Pour the marinade into a 1-gallon resealable plastic storage bag, add the asparagus and seal the bag closed. Place the bag in a bowl or on a plate (just in case it leaks) and marinate in the refrigerator for 8 to 24 hours, flipping a couple of times.
  • Preheat an outdoor grill to medium heat. While the grill heats up, remove the asparagus from the marinade, allowing any excess marinade to drip off. Season liberally on all sides with salt and pepper.

Adapted from the Canal House Cooks Every Day cookbook. Asparagus: The Canal House ladies, Christopher Hirsheimer and Melissa Hamilton, suggest purchasing fat asparagus and peeling them. Do this if you are able to or simply buy what is available. I never peel - lazy! - but do so if you wish. Balsamic: You can buy aged balsamic vinegar that's syrupy or you can simmer balsamic vinegar until it's reduced by half its volume. Simply simmer 1/4 cup vinegar in a small saucepan until it is thick and syrupy. Keep a close watch the entire time, and transfer the balsamic to a small bowl as soon as it starts to thicken because it will continue to reduce as it sits. This will give you 1 to 2 tablespoons of syrupy balsamic vinegar.

1 lb. asparagus spears, see notes above
2 tablespoons olive oil
salt, preferably flaky sea salt - I've been using Maldon for this one
freshly cracked black pepper to taste
Parmigiano Reggiano
1 tablespoon syrupy balsamic vinegar, such as this, or see notes above

Steps:

  • Heat your oven to 425ºF, convection roast if you have it.
  • To prepare the asparagus, snap off the end of each spear. Discard or compost the end. Cut the spears in half. Transfer to a 9×13-inch baking dish or a sheet pan or something similar.
  • Drizzle with the olive oil. Season with salt and pepper to taste. Toss with your hands to ensure each spear is nicely coated and seasoned. Transfer pan to the oven for 20-25 minutes or until the tips of the asparagus are just lightly beginning to char.
  • Remove the pan from the oven and transfer to a serving platter. Taste one spear. If it tastes under-seasoned, sprinkle the entire dish with more salt to taste. Using a peeler - this is my favorite - shave parmesan over top to taste.
  • Finish the dish by drizzling the syrupy balsamic over top.
