MINTY PINEAPPLE RUM
This delicious drink is a fabulous way to use fresh mint and celebrate summer. If the pineapple isn't overly ripe, add a bit more sugar. Save any leftover pineapple-mint syrup in an airtight glass container, or freeze the mixture in ice cube trays to use later. -Colleen Delawder, Herndon, Virginia

Steps:
- Place the first 5 ingredients in a blender; cover and process until pureed. Transfer to a 1-1/2-qt. pitcher; stir in rum. Pour 1/3 cup mixture into each glass. Add ice; pour 1/2 cup soda over ice. Garnish with pineapple slices and additional mint leaves.

PINEAPPLE-RASPBERRY RUM REFRESHER

Steps:
- Gently muddle the raspberries in a pretty footed glass. Top with the ice cubes, coconut water, pineapple juice and rum. Stir gently and serve with the mint leaves.
MINT-PINEAPPLE RUM COOLER
Steps:
- In a tall glass filled with ice stir together rum, juice, and syrup until combined well.
- Garnish drink with pineapple and mint.
- To make simple syrup:
- Chop mint. In a saucepan bring sugar, water and mint to a boil, stirring until sugar is dissolved. Simmer syrup, undisturbed, 2 minutes. Pour syrup through a fine sieve, pressing hard on solids, and cool. Syrup keeps, covered and chilled, 2 weeks. Makes about 1 1/2 cups.

- Place pineapple in a large glass container. Pour in rum, covering pineapple completely.
- Store container on a cool, dark shelf, stirring and tasting once a day, until rum reaches desired flavor, at least 1 week but preferably 2.
- Strain out pineapple before serving.

- For pineapple-mint purée:
- Bring sugar and 1 cup water to a boil in a small saucepan, stirring to dissolve sugar. Remove from heat, add mint, and let cool completely.
- Meanwhile, place pineapple in a blender and purée until smooth.
- Strain mint syrup through a fine-mesh sieve into pineapple purée and pulse to combine. Transfer to a jar, cover, and chill.
- For assembly:
- For each cocktail, muddle 2 pieces of pineapple, 3 lime wedges, and 1 tablespoon mint leaves in a cocktail shaker until lightly crushed.
- Add 2 ounces rum and 2 ounces pineapple-mint purée to cocktail shaker, fill with ice, cover, and shake until outside of shaker is frosty, about 30 seconds.
- Pour drink into a highball glass (do not strain) and top off with club soda. Garnish with a lime wedge and serve with a straw.
- DO AHEAD: Pineapple-mint purée can be made 3 days ahead. Keep chilled.
