Steps:
- Preheat oven to 350. Lightly grease/spray a large shallow baking dish.
- Pat haddock dry; arrange in prepared baking dish. Sprinkle w/ salt and pepper.
- In a small bowl, mix together melted butter, lemon juice and minced garlic; evenly brush over haddock fillets.
- Evenly sprinkle fillets with parsley tarragon and paprika.
- Bake at 350 for 25-35 minutes of until opaque and flakes easily.

BROILED SHRIMP WITH MUSTARD AND TARRAGON

Steps:
- Stir first 4 ingredients in medium bowl to blend. Add shrimp; toss to coat. Refrigerate at least 1 hour and up to 3 hours.
- Preheat broiler. Line baking sheet with foil. Thread shrimp onto skewers. Sprinkle with salt and pepper. Broil until cooked through, 2 minutes per side.
- Remove shrimp from skewers. Arrange on platter. Serve with toothpicks.
HADDOCK MARINARA
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a baking dish with the olive oil.
- Sprinkle 1/2 the onion and garlic evenly in the baking dish, and cover with 1/2 the pasta sauce. Place the haddock fillets in the dish, top with tomatoes and remaining onion and garlic. Cover with remaining pasta sauce.
- Bake 20 minutes in the preheated oven. Top with mozzarella cheese, and continue baking 10 minutes, until cheese is melted and fish is easily flaked with a fork.

MUSTARD TARRAGON MARINATED HADDOCK
A tasty and easy baked haddock recipe. You could sub flounder for the haddock. Prep time includes marinating.

Steps:
- In a bowl, whisk the vinegar, oil, mustard, sugar, onion, tarragon and pepper.
- Rinse fish fillets and pat dry. Add the fish to the marinade and turn pieces
- to coat completely; let marinate about 1 hour in the refridgerator.
- After 1 hour, preheat oven to 450.
- Place fish fillets in a greased shallow baking pan and drizzle with any remaining
- marinade. Sprinkle w/ paprika.
- Bake, uncovered, in a 450 degree F. oven until fish flakes and flesh is opaque;.
- about 7-9 minutes.

LEMON-MUSTARD-TARRAGON VINAIGRETTE
Steps:
- In a medium bowl, whisk together the lemon juice, zest, mustard, tarragon, honey, and a little salt and pepper. Slowly whisk in the olive oil until emulsified.
BOILED SALMON, IN TARRAGON, MUSTARD MARINADE
Steps:
- Wipe the salmon dry with paper towels.
- Combine the mustard, olive oil, sugar, tarragon, salt and pepper and mix well. Pour the marinade over the fish fillet and place in a glass or china dish. Cover with foil and refrigerate overnight or for two days.
- Preheat broiler. Broil the salmon about three to five minutes on each side, or until it is cooked. Do not overcook or it will be dry. Serve with lemon or lime quarters.

FAVORITE BAKED HADDOCK
This is our favorite haddock recipe. It is also excellent using flounder. Using Miracle Whip here may sound strange, but it is SO good. Everyone who has ventured to try it, loves it. I hope you do, too.

- Preheat oven to 325 degrees F.
- Lightly grease a large cookie sheet with butter.
- Sprinkle half the onion evenly over cookie sheet.
- Cut fillets into 2 or 3 pieces.
- I make thick pieces thinner by slicing part way with a knife and spreading flat.
- Lay fillets on onion in a single layer.
- Coat fillets evenly, and not too thickly, with Miracle Whip.
- (I use my finger to spread it.) Sprinkle evenly with remaining half onion.
- Sprinkle each piece of fish lightly with Italian seasoning.
- Bake at 325 degrees F until done, about 15-20 minutes.
HADDOCK ON POLENTA WITH TARRAGON SAUCE

- Rub the bottom of a large saucepan with the butter. Add the scallions and the fish (folding the fillets in half if they are thin and long to approximate the thickness indicated here so they will cook in about the same length of time). Add 1/2 teaspoon of the salt, pepper and wine. Bring to a boil over high heat, cover, reduce the heat to low, and boil gently for 3 minutes.
- With the lid held slightly ajar on the pan so the fish don't fall out, pour the cooking juices into another saucepan. Add the cream to the juices, stir in the remaining 1/4 teaspoon salt, and bring the mixture to a boil. Boil 1 minute, add the dissolved potato starch and return to a boil. Remove from the heat and stir in the tarragon and chives.
- To serve, spoon polenta (see recipe) onto six individual plates. Arrange fish fillets on top of polenta and spoon some tarragon sauce on top.

HADDOCK IN MUSTARD SAUCE

If you have the time to make your own stock, please use it here, if not, use the best fish stock you can purchase. I thought this would also be excellent with dill replacing parsley for the final garnish.

- Combine the stock and milk in a skillet large enough to hold all of the fish in a single layer.
- Bring to a simmer over medium heat.
- Add the fish, salt, and pepper; and cook uncovered for 5 - 7 minutes, or until the fish just flakes when you touch it with a fork.
- Carefully move the fish to a heated platter, cover, and keep warm.
- Bring the poaching liquid to a boil, and reduce to 1 cup (about 10 minutes).
- Reduce heat to medium, add the cream, and cook for 2 more minutes.
- whisk in the mustard, sugar, and sour cream, bring back to a simmer.
- Whisk in the butter, a bit at a time, until fully incorporated.
- Add any juice that has accumulated on the platter, then strain the sauce over the fish.
- Sprinkle with parsley, then serve immediately.

NO-WASTE TANGY MUSTARD MARINADE
This recipe puts a new twist on our economical dressing-in-a-jar idea. Whip up a tangy marinade using the bit of mustard at the bottom of a jar. (We chose whole grain, but Dijon works just as well.) Toss in a few pantry staples, and shake the container. You'll have enough to coat two chicken breasts or one pork tenderloin.

ROASTED MUSTARD TARRAGON CHICKEN

- Preheat oven to 425°F with rack in middle.
- Pull off excess fat around cavities of chicken and discard, then rinse chicken and pat dry. Mix together 1 1/2 teaspoons salt and 1 teaspoon pepper and rub inside cavity. Chop enough tarragon to measure 1 1/2 tablespoons and set aside, then add remainder of bunch to cavity. Put chicken in a flameproof shallow roasting pan or gratin dish and rub all over with 1/3 cup mustard. Tie legs together with string and roast until an instant-read thermometer inserted into fleshy part of a thigh (do not touch bone) registers 170°F, 45 minutes to 1 hour.
- Carefully tilt chicken so juices from cavity run into roasting pan, then transfer chicken to a cutting board and let stand 10 minutes.
- Pour off all but 2 tablespoons fat from pan. Whisk in flour, then cook over medium heat, whisking, 1 minute. Add water, whisking constantly and scraping up brown bits, and bring to a boil. Simmer sauce until slightly thickened, then whisk in cream, remaining tablespoon mustard, and salt and pepper to taste.
- Strain sauce through a fine-mesh sieve into a bowl, discarding solids, then stir in reserved chopped tarragon. Serve chicken with sauce.
TARRAGON MUSTARD SAUCE
Make one of these sauces in the hot skillet after you have cooked chicken breasts or pork chops.

- Remove the cooked chicken or pork from the skillet. Working over medium-high heat, add the chicken stock, heavy cream, mustard, and tarragon. Bring up to a bubble and simmer until thickened enough to coat the back of a spoon, 3 to 4 minutes. Season with salt and pepper and pour over the cooked chicken or pork.
