1 medium head red cabbage, shredded
1 quart water
salt to taste
½ cup brown sugar
1 tablespoon caraway seeds
½ cup vinegar
¼ cup butter

Steps:

  • Place cabbage in a medium saucepan with water and salt, and bring to a boil. Stir in brown sugar and caraway seeds. Cook 12 minutes, or until cabbage is tender; drain.
  • In a medium bowl, toss cabbage with vinegar and butter until thoroughly coated.

1 medium head RED CABBAGE, tough outer leaves removed
1/4 cup (60ml) OLIVE OIL
1 RED ONION, diced
2 FUJI APPLES, peeled, cored, and finely chopped
3 JUNIPER BERRIES
3 whole ALLSPICE BERRIES, or 1/4 teaspoon ground allspice
3 whole CLOVES, or 1/4 teaspoon ground cloves
1 BAY LEAF
1/2 teaspoon SALT
1/4 teaspoon freshly ground BLACK PEPPER
3 tablespoons RED CURRANT JELLY
2 tablespoons BALSAMIC VINEGAR, preferably white
1 teaspoon LIGHT BROWN SUGAR

Steps:

  • 1. Using a box grater, mandoline, or a coarse Microplane grater, grate the cabbage. In a large saucepan, heat the oil over medium-high heat. Add the onion and sauté for 2 minutes.
  • 2. Lower the heat to medium; add the cabbage and apples and stir to combine. Add the juniper berries, allspice berries, cloves, bay leaf, salt, pepper, jelly, vinegar, sugar, and 1/2 cup (120ml) of water and stir to combine. Turn the heat to low, cover, and cook for 40 minutes, until the cabbage is tender.
  • 3. Remove the juniper berries, allspice berries, cloves, and bay leaf. Serve the cabbage hot or at room temperature. Refrigerate for up to 4 days. Leftovers can also be frozen in an airtight container for up to 1 month.

1 small onion, sliced

1/4 cup water
3 tablespoons white vinegar

1/8 teaspoon pepper

Steps:

  • In 10-inch skillet, heat 1 inch water to boiling. Add cabbage; heat to boiling. Boil uncovered about 15 minutes, stirring occasionally, until tender; drain and set aside. Wipe out and dry skillet with paper towel.
  • In same skillet, cook bacon over medium heat 4 minutes, stirring occasionally. Stir in onion. Cook 2 to 4 minutes, stirring occasionally, until bacon is crisp. Remove bacon and onion with slotted spoon; drain on paper towels. Drain fat, reserving 1 tablespoon in skillet.
  • Stir brown sugar and flour into bacon fat in skillet. Stir in water, vinegar, salt and pepper until well mixed.

2 1/2 to 3 pounds red cabbage, shredded (about 10 cups)
1/2 cup red burgundy wine
1 1/4 cups balsamic vinegar
1/2 cup granulated sugar
Salt and freshly ground black pepper

Steps:

  • In a 12-inch skillet, saute the shallots and garlic in the butter over medium heat for 1 minute, until golden brown. Add the shredded cabbage. Add the wine to deglaze the pan, loosening any browned bits on the bottom of the pan with a wooden spoon. Stir in the vinegar and sugar. Season with salt and pepper to taste. Increase the heat to high and bring to a boil, stirring constantly to prevent the sugar from burning. Reduce the heat and simmer about 10 minutes, until the liquid is reduced by 3/4.

1 large red cabbage
4 tablespoons bacon fat
1 medium onion, chopped coarsely
1/2 teaspoon salt
2 tart apples, cored and sliced (Granny Smith is my favorite)
1/4 cup boiling water
1/2 cup vinegar
1/3 cup brown sugar

Steps:

  • Remove the outer leaves and hard core from cabbage and chop coarsely.
  • Heat the bacon fat in a large skillet or kettle. Add onions and slowly cook until tender.
  • Add the cabbage and salt. Cover and steam for 10 minutes.
  • Add apples and 1/4 cup boiling water.
  • Cover and simmer over low heat for 1 hour or until the cabbage is tender.
  • Add the vinegar and sugar and continue to cook 15 minutes longer.
  • Serve hot.
  • NOTE: Sugar and vinegar amounts can be varied according to your family's tastes.

1 small head red cabbage, (about 2 pounds)
2 tablespoons vegetable oil
7 tablespoons red-wine vinegar
3 tablespoons honey
1 teaspoon ground cinnamon
Pinch of ground allspice
Salt and freshly ground black pepper
1 Granny Smith apple

Steps:

  • Cut cabbage in half lengthwise, remove core, and slice as thinly as possible.
  • Heat oil in a large saucepan over medium-low heat. Add cabbage, and saute stirring until wilted, about 10 minutes. Add vinegar, honey, and spices. Season well with salt and pepper. Add 3 tablespoons water, and continue cooking cabbage until almost soft, about 1 1/2 hours. (Add more water if needed while cabbage is cooking.)
  • Cut apple in half lengthwise, remove core, and slice into very thin wedges. Add to cabbage, and continue cooking until cabbage is soft and almost dry, about 20 more minutes.
