Yield Makes 4 to 6 (dessert) servings

1/4 cup heavy cream
1/4 cup bottled wild lingonberry sauce or any fruit preserves or jam
5 large egg whites
3/4 teaspoon salt
1/2 cup granulated sugar
1 tablespoon all-purpose flour
3 large egg yolks
1 teaspoon pure vanilla extract
Confectioners sugar for dusting

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Pour cream into a 9-inch pie plate or shallow gratin dish and spoon lingonberry sauce into cream in dollops (it will be sparse).
  • Put egg whites and salt in a bowl, then set bowl in a larger bowl of hot water and stir whites to warm to room temperature, 1 to 2 minutes. Remove from hot water. Beat whites with an electric mixer at high speed until they just form soft peaks, then beat in granulated sugar, 1 tablespoon at a time, beating until whites just form stiff, glossy peaks. Sprinkle flour over meringue and fold in gently but thoroughly. Whisk together egg yolks and vanilla in a small bowl, then fold into whites gently but thoroughly.
  • Spoon large dollops of meringue onto cream mixture and bake until golden brown and set, 13 to 15 minutes. If you prefer a less creamy soufflé, bake 5 minutes more. Dust lightly with confectioners sugar and cool 5 minutes before serving.

Another famous Soup Dumpling, found in every Gasthaus throughout Austria and Bavaria. Serve it in a bowl of home made chicken- or beef stock, sprinkle some chopped chives over and enjoy as first course.

2 eggs
1/4 cup butter or 1/4 cup margarine, melted
1 cup semolina (farina can be substituted)
1 pinch of freshly grated nutmeg
1 pinch salt
fresh ground pepper
soup stock
chopped chives (to garnish)

Steps:

  • Beat the eggs and melted butter until foamy, stir in the semolina, season with salt, pepper and freshly grated nutmeg to taste. Mix well and let rest for 10 minutes.
  • Form oval quenelles with the aid of 2 teaspoons, drop them into boiling water, don't overcrowd the pot, they will plump up.
  • Cook for 10 - 15 minutes or until they rise to the surface.
  • Remove from the heat, add one cup of cold water to the pot and let stand for another 10 minutes, by now they should have doubled in bulk.
  • Drain and serve in broth, sprinkled with chives and grated nutmeg.
  • Note: I always make one extra dumpling that can be cut open to check for doneness. If the sample dumpling is not soft inside, leave them a little longer. It should be soft but not mushy.

German Dumpling Soup (Nockerl-/Griessklosschensuppe) image

Opa loved making us this soup -- so quick and easy, and we even asked him for it as adults. The quality of your stock will go a long way in determining the final flavor of this soup. I think celery (celery salt or fresh stalks) compliments the dumplings well, so I substitute celery salt for the salt. I also add 1/4+ tsp ground black pepper to the dumpling mix.

7 cups stock
1 cup farina
3 tablespoons farina
1/2 teaspoon grated nutmeg (fresh is more authentic)
3 eggs
2 tablespoons butter or 2 tablespoons oil
1 teaspoon salt

Steps:

  • In a large pot, bring the stock to a rapid boil.
  • Combine the farina, nutmeg, eggs, butter and salt in a large bowl and set aside for 1-2 minutes.
  • Scoop up small spoonfuls of the batter and scrape them into the boiling stock.
  • Stir occasionally to prevent the dumplings from sticking; they will float when they are done!
  • NOTE: If your dumplings disintegrate when they hit the water, ensure that your stock is rapidly boiling; also, "pack" your batter together a bit before dunking it, and/or add another tablespoon or two of farina to your batter -- it may be too moist (again, allow the batter to rest 1-2 minutes before continuing).

Chicken or pork bones, can have some meat on them
Parsley
Carrots
Celery
1/2 onion cut up
Leek, optional
Salt
Chicken bouillon cubes
Water
2 tablespoons salted butter softened
2 eggs at room temperature
1/2 cup semolina
Fresh snipped chives

Steps:

  • Place bones in a large pot and add enough cold water to cover. Add parsley, carrots, celery, onion, leek, salt and one bouillon cube. Cover and let simmer 1 1/2 to 2 hours. Fill another pot with water. Bring to a slow boil. Place the softened butter in a bowl. Add 1 beaten egg and mix into the butter. Add about 2 tablespoons of the semolina. Mix well. Add the second beaten egg and mix. Start adding the rest of the semolina a little at a time until you mixture is thickened but not hard. Place teaspoon fulls into the slowly boiling water. Allow to cook for about 20 minutes until nockerl (dumplings) are firm. They will puff up 2-3 times their size. Strain out the water. Now strain the soup into the pot with the nockerl. Taste and add more bouillon and salt if needed. Add chives and serve.
