ISRAELI COUSCOUS SALAD



Israeli Couscous Salad image

Israeli couscous salad with feta, summer vegetables, and lively lemon dressing. Simple, healthy, and perfect for light meals and sides.

Number Of Ingredients 13

1 cup whole wheat Israeli couscous (also called pearl couscous)
1 lemon (zested)
3 tablespoons freshly squeezed lemon juice (from about 1 large lemon)
3 tablespoons extra virgin olive oil
2 teaspoons Dijon mustard
1 teaspoon smoked paprika
1 teaspoon kosher salt
1/4 teaspoon black pepper
2 cups arugula
1 medium English seedless cucumber (sliced and quartered)
1 pint cherry tomatoes (or grape tomatoes, halved)
1/2 cup crumbled reduced fat feta cheese
1/4 cup lightly packed fresh mint leaves (chopped)

Steps:

  • Bring 1 1/4 cups water to a boil in a medium (2-quart) saucepan. Add the couscous, return to a boil, then cover and reduce the heat to a simmer. Let cook until the liquid is absorbed, about 20 minutes. Fluff with a fork and set aside.
  • In the bottom of a large bowl, whisk together the lemon zest, lemon juice, olive oil, mustard, smoked paprika, salt, and pepper. Taste and add additional seasoning as desired. While the couscous is still warm, add it to the bowl and toss to coat. Place in the refrigerator for 5-10 minutes to allow the couscous to cool.
  • When ready to serve, add the remaining ingredients: arugula, cucumber, tomatoes, feta, and mint. Toss to combine. Serve cold or at room temperature.

Our Favorite Lemon Herb Couscous Salad image

We love this light couscous salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. See the notes section below for our tips.

Number Of Ingredients 12

1 1/2 cups dried Israeli couscous, also called pearl couscous
Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill, or mint
1/4 cup chopped walnuts, toasted
1/4 cup raisins, we love golden raisins

Steps:

  • Bring a large saucepan of salted water to a boil. Add couscous and cook until tender, 8-10 minutes. Drain.
  • While the couscous cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.
  • Stir in the cucumber, tomato, herbs, walnuts and raisins. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

Olive Oil and Lemon Couscous with Feta, Olives, Peppers and Herbs image

This olive oil and lemon couscous salad has been one of my insatiable pregnancy lemon cravings. In this recipe, light and fluffy lemony couscous gets tossed with feta cheese, sweety drop peppers, castelvetrano olives, and fresh herbs. It's a super refreshing and completely irresistible Mediterranean salad that you're sure to love.

1/3 cup olive oil
zest from 1 lemon
3 lemons (juiced (about 3/4 cup))
1 tbsp white balsamic reduction
1 clove garlic (minced)
1/4 tsp salt
5 cups cooked couscous (cooked in broth)
1 cup pitted castletrano olives (chopped)
7 oz crumbled feta (one small block)
1/2 cup tear drop peppers (or peppadews)
1/3 cup red onions (minced)
2 tbsp fresh dill (roughly chopped)
2 tbsp fresh parsley (roughly chopped)
2 tbsp fresh mint (roughly chopped)
2 tbsp fresh basil (roughly chopped)
1/2 tsp kosher salt

Steps:

  • Whisk together olive oil, lemon zest, lemon juice, white balsamic reduction, minced garlic and salt and set aside.
  • Prepare couscous according to the directions and fluff with a fork. Pour into a large mixing bowl to cool for at least 10 minutes.
  • Stir in Olive Oil and Lemon Dressing.
  • Add chopped olives, feta, peppers, and red onions and stir.
  • Stir in dill, parsley, mint, basil and salt.
  • Toss everything together and season with more salt and lemon juice if needed.

MARINATED FETA WITH HERBS AND PEPPERCORNS



Marinated Feta With Herbs and Peppercorns image

The best recipes often make a good ingredient great through minimal effort. For this easy appetizer, start with good-quality feta, preferably in brine, which is creamier than the squeaky supermarket varieties. Many commercial fetas use only cow's milk and can taste somewhat one-note, so look for one that contains both sheep's and goat's milk, which provide the cheese's signature tang. Dice the feta, toss it with preserved lemon, peppercorns and chile, and refrigerate overnight. Spoon it onto crostini, or serve it alongside eggs, fish, salad, grilled or roasted vegetables or atop a bowl of pasta.

3/4 cup extra-virgin olive oil, plus more if needed
3 tablespoons finely chopped fresh parsley
3 tablespoons finely chopped preserved lemon, or 4 strips fresh orange zest plus 1 tablespoon juice (from 1 orange)
1 red serrano chile, very thinly sliced (optional)
4 teaspoons finely chopped fresh oregano
1 tablespoon any combination of whole pink, green, white and black peppercorns, crushed or coarsely chopped
8 ounces firm Greek feta, in brine
Crostini or crackers, for serving

Steps:

  • In a medium bowl, stir together the olive oil, parsley, preserved lemon, chile, oregano and peppercorns.
  • Cut the feta into 1/2-inch cubes and add them to the olive oil mixture. Gently fold together until feta is evenly coated. Transfer to a jar or lidded container and drizzle with more olive oil, if needed to immerse the feta. Refrigerate for at least 24 hours.
  • Remove from refrigerator at least 30 minutes before serving to allow solidified olive oil to return to liquid form. Serve with crackers or crostini, or spoon on top of seared fish, grilled or roasted vegetables, pasta or salad.

  • Cook garlic in oil in a 2- to 3-quart wide heavy saucepan over moderate heat, stirring frequently, until golden, 1 to 2 minutes. Add water and salt and bring to a boil. Stir in remaining ingredients, then cover pan and remove from heat. Let stand, undisturbed, 5 minutes. Fluff with a fork.
