ORANGE CHOCOLATE CHUNK COOKIES

A delicious take on the classic chocolate chip cookie! They taste like those chocolate oranges you buy during the holidays but in chewy cookie form.

2 3/4 cup all-purpose flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp table salt
1 cup unsalted butter (, softened)
1 cup packed light-brown sugar
3/4 cup granulated sugar
1 Tbsp orange zest
2 large eggs
1 tsp vanilla extract
3/4 tsp orange extract
4 oz bittersweet chocolate (, chopped into chunks*)
4 oz semi-sweet chocolate (, chopped into chunks)
4 oz milk chocolate (, chopped into chunks)
Flaky or coarse sea salt

Steps:

  • In a mixing bowl, whisk together flour, baking powder, baking soda and salt for 30 seconds, set aside.
  • In the bowl of an electric stand mixer, fitted with the paddle attachment mix butter, brown sugar, granulated sugar and orange zest until creamy, about 2 minutes.
  • Add in one egg and mix until combined, then add in second egg, vanilla extract and orange extract and mix until combined.
  • With mixer set on low speed, slowly add in flour mixture and mix just until combined. Stir in chocolate chunks.
  • Shape dough into large balls, about 3 Tbsp each (58 grams each). Transfer balls to plates, cover with plastic wrap and chill 1 hour.
  • Preheat oven to 350 degrees during last 10 minutes of chilling.
  • Transfer chilled cookie dough balls to Silpat or parchment paper lined baking sheets and sprinkle tops lightly with sea salt (keep any that aren't currently baking in refrigerator).
  • Bake in preheated oven about 11 - 12 minutes. Allow to cool on baking sheet several minutes before transferring to a wire rack to cool. Store in an airtight container.

16 Tablespoons unsalted butter, at room temperature
3/4 cup light brown sugar
zest from 3 medium oranges
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups chocolate chunks

Steps:

  • Preheat the oven to 325ºF. Line 3 baking sheets with parchment paper or silpat. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, light brown sugar and orange zest until light and fluffy on medium high speed, about 2 minutes. Scrape down the bowl and mix in the eggs and vanilla extract until combined. Scrape down the bowl once more.
  • In a separate bowl, whisk together the flour, baking powder, baking soda and salt. With the mixer on low speed, mix in the flour, just until combined. Mix in the chocolate chunks.
  • Scoop the dough with a medium cookie scoop, about 2 tablespoons, onto the prepared baking sheets, spacing about 2 inches apart. Place in the preheated oven and bake until the edges are just barely golden brown, about 18-20 minutes.
  • Let the cookies cool on the baking sheets completely, before storing in an airtight container at room temperature for up to 5 days.

2 1/4 cups Original Bisquick™ mix
Grated peel of 1 orange
2/3 cup milk
1/2 cup semisweet chocolate chunks
1 cup powdered sugar, sifted
2 to 3 tablespoons freshly squeezed orange juice

Steps:

  • Heat oven to 450°F. Line cookie sheet with cooking parchment paper.
  • In large bowl, mix Bisquick mix and orange peel. Add milk; stir until just incorporated. Gently stir in chocolate chunks. Drop dough by spoonfuls on cookie sheet.
  • Bake 8 to 10 minutes or until golden. Cool on cooling rack.
  • In small bowl, beat powdered sugar and 2 tablespoons of the orange juice with whisk. Add additional orange juice as needed until thin enough to drizzle. Drizzle over cooled biscuits. Let stand 5 minutes before serving.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Sift flour, baking powder and salt into and set aside. Cream butter, sugars, orange zest and vanilla extract together in a large bowl until light and fluffy.
  • Add eggs one at a time beating well after adding each one. Add dry ingredients and stir until combined. Stir in chocolate chips and nuts and mix until well blended.
  • Drop dough by slightly rounded tablespoonfuls 2 inches apart on cookie sheets. Flatten slightly. Bake cookies for 15 or 16 minutes or until golden. Cool on the cookie sheets.

1/2 cup orange juice
3/4 cup sugar, divided
1/4 cup butter
2 teaspoons grated orange zest
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup shortening
3/4 cup milk
Melted butter
1/2 teaspoon ground cinnamon

Steps:

  • In a saucepan, combine orange juice, 1/2 cup sugar, butter and orange zest. Cook and stir over medium heat for 2 minutes. Divide among 12 muffin cups; set aside. , In a large bowl, combine flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. With a fork, stir in milk until mixture forms a ball. On a lightly floured surface, knead the dough 1 minute. Roll into a 9-in. square, about 1/2-in. thick. Brush with melted butter. , Combine the cinnamon and remaining sugar; sprinkle over butter. Roll up. Cut into 12 slices, about 3/4 in. thick. Place slices, cut side down, over orange mixture in muffin cups. Bake at 450° for 12-16 minutes. Cool for 2-3 minutes; remove from pan.

3/4 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon fresh, grated orange rind
1 cup margarine, melted
1/2 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon orange extract
2 tablespoons fresh squeezed orange juice
3 ounces premium quality dark chocolate, coarsely chopped

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl combine flour, baking soda, salt and grated orange rind.
  • Mix well and set aside.
  • In a large bowl blend sugars with electric mixer at medium speed.
  • Add melted margarine and beat well to combine.
  • Add eggs, orange extract and orange juice, and beat well.
  • Add flour mixture, blending just until combined.
  • Stir in chocolate chunks.
  • Drop by tablespoons onto foil lined cookie sheets, 1 1/2" apart.
  • Bake for 12-15 minutes until cookies are slightly brown along edges.
  • Transfer cookies to a rack to cool.

1 1/2 cups hazelnuts (about 6 ounces), toasted, husked, chopped

Steps:

  • Preheat oven to 375°F Combine flour, baking soda and 1/8 teaspoon salt in medium bowl; whisk to blend. Using electric mixer, beat brown sugar, unsalted butter, grated orange peel and vanilla extract in large bowl until light and fluffy. Beat in egg. Add flour mixture and mix just until combined. Mix in chocolate chunks and toasted hazelnuts.
  • Drop batter by heaping tablespoonfuls onto 2 ungreased baking sheets, spacing 2 inches apart. Bake cookies until just firm to touch and beginning to brown, about 13 minutes. Transfer to racks; cool. (Can be made 2 days ahead. Store airtight at room temperature.)
