TOSSED FRESH FRUIT SALAD WITH ORANGE MAYONNAISE DRESSING

Steps:
- For salad:
- Cut melon in half, remove seeds, and scoop flesh into balls with ball cutter or teaspoon; chill. Slice off pineapple top; cut pineapple into eighths lengthwise. Place rind side down on cutting board. Cut meat from rind with sharp knife, following curve of fruit. Remove any remaining eyes with point of knife; cut off core. Cube and chill pineapple. Wash, hull and chill strawberries. Pare oranges with sharp knife, cutting completely through white portion; remove sections one at a time cutting down along one side of section and gently lifting other side away from membrane with knife; chill. Wash greens; crisp in refrigerator.
- Meanwhile, make dressing:
- Gradually stir corn syrup into mayonnaise. Mix in orange juice and onion. Makes 1 1/4 cups.
- To serve:
- Just before serving, tear greens into bite-size pieces in salad bowl. Add fruit; toss with dressing.

This is a pleasantly creamy dressing ideal on a lunch or dinner salad made with cooked chicken or turkey, along with salad greens and some orange slices. It might go nice with tuna, as well.

Steps:
- In a medium-sized pot, combine sugar, flour and salt; slowly whisk in evaporated milk (the little can), orange juice and egg.
- Cook over medium heat, whisking constantly, just until dressing just comes to a boil and begins to thicken.
- Remove from heat and pour into a covered jar.
- Refrigerate until cool.
- Ideal served on a salad made with cooked chicken and tinned mandarin orange slices.

- * For a basic fruit dressing, make the basic dressing below using fresh lemon juice in place of vinegar, omitting pepper, and adding 1/4 cup honey and a dash of hot pepper sauce. Blend well. Flavor improves if allowed to stand 1 to 2 hours. Basic French or Vinaigrette Dressing * In a small bowl, mix vinegar, salt, and pepper let stand 1 to 2 minutes to dissolve. Adding oil slowly, stir or whisk until well blended. Vinegar, salt, and pepper can be adjusted according to taste. Shake or stir before serving. Gradually stir basic fruit dressing into 1/4 cup real mayonnaise mixed with 1 tablespoon concentrated orange juice. Blend well.
