1 large baking potato, peeled and thinly sliced
1 lb asparagus
4 large eggs
4 egg whites
1/2 cup nonfat milk
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 cup grated parmesan cheese, divided
1 onion, chopped

Steps:

  • Preheat oven to 350f.
  • Put potato in saucepan and cover with water by 3 inches. Cover pan and bring to boil over high heat; boil 5 minutes.
  • Add asparagus and boil an additional 2 minutes.
  • Drain and set aside to cool.
  • Combine whole eggs and egg whites, milk, salt, baking powder, and three tablespoons of the parmesan cheese in a bowl. Mix in the potato and asparagus.
  • Heat an oven proof nonstick pan, spray with nonstick spray and add the onion.
  • Cook, stirring occasionally for two minutes.
  • Add the egg mixture and reduce heat to medium.
  • Cover and cook until almost set, about ten minutes.
  • Uncover the skillet and sprinkle remaining parmesan cheese.
  • Transfer to the oven to cook for about five minutes, until browned.
  • Invert onto a plate and cut into wedges prior to serving.

1/2 cup | 115 grams potatoes, diced into small cubes
1 tablespoon extra virgin olive oil
1/2 white onion, chopped
1/4 pound | 100 grams asparagus, cut into 1 inch long pieces
6 whole eggs
1/4 cup parmesan cheese, grated
3/4 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper
2 oz goats cheese, crumbled
2 tablespoons fresh basil, chopped

Steps:

  • Add the chopped potatoes to a small cooking pot, cover with water and bring to a boil. Cook over a medium-high heat for 6-8 minutes or until the potatoes are tender. Drain the water and then pat dry.
  • Preheat the oven to broil.
  • Put a tablespoon of olive oil in a large skillet (about 10 inches in diameter) over a medium high-heat. When hot, add the onion. Sprinkle with salt & pepper and cook until soft, about 5 minutes. Add the chopped asparagus and boiled/dried potatoes and cook another 2-3 minutes.
  • Meanwhile, beat the eggs in a mixing jug. Add in the salt, pepper & parmesan. Pour the egg mixture over the top of the veggies. Sprinkle the goats cheese and the basil over the top of the eggs.
  • Let the frittata cook undisturbed for 7-10 minutes, until the eggs are just about set. Place the frittata in the oven about 5 to 7 inches from the heat and broil until the eggs puff and are just set and the cheese is golden brown, about 2-3 minutes.
  • Serve hot, warm or at room temperature. Leftovers can be kept in an airtight container for up to 4 days.

Steps:

  • Preheat broiler.
  • Cook garlic in 1 tablespoon oil in a 10-inch heavy skillet (preferably nonstick and ovenproof) over moderate heat, stirring, until golden, about 1 minute. Transfer garlic with a slotted spoon to a bowl.
  • Add potatoes to skillet and sautéover moderately high heat, stirring, until just tender, about 6 minutes. Transfer with a slotted spoon to bowl with garlic.
  • Add 1 tablespoon oil and tomatoes to skillet and cook over moderately high heat, stirring, until tomatoes brown and skins split, about 4 minutes.
  • Add remaining tablespoon oil and potatoes with garlic to skillet, spreading evenly, and sprinkle with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Pour egg over vegetables and cook over moderately high heat, lifting up cooked egg around edges to let uncooked egg flow underneath, 3 minutes. Reduce heat to moderate and cook, covered, 5 minutes more (center will be moist).

10 or more morels sliced in half
1/2 c asparagus sliced in 1/2 inch pieces
1/2 c gold potatoes shredded or diced small
1/2 c sweet onion minced
5-6 medium or large eggs, lightly whisked
1/4 c heavy cream
1 c smoked gouda shredded
You decide butter to sauté

Steps:

  • 1. Set the oven to 350. Heat a well seasoned,12 inch, cast iron pan to hot. Add enough butter to the pan to at least coat the bottom, more if you love butter like I do! Keep the cast iron pan on medium heat. Add the potatoes and stir for a minute or two, so they don't stick. Keep stirring as you add the onions, cook onions to translucent. Turn the heat down a little. Add the morels and asparagus and cook until asparagus are slightly tender (they'll finish in the oven). remove from heat. Remove sautéed veggies to a plate or bowl.
  • 2. In a 4 cup measuring cup (or bowl) place the lightly whipped eggs and whisk in cream. Stir in cheese. Pour this mixture to the cast iron pan. Stir in your sautéed veggies. Place cast iron pan in heated oven. Bake for about 20 minutes, or until eggs are set and top is lightly golden browned, or as browned as desired. Removed from oven, cool slightly and flop frittata out onto a cutting board to slice.
  • 3. Serve immediately; frittata is best warm. Leftovers will keep airtight in the fridge for up to 5 days.

  • Preheat the broiler. Whisk the eggs, cream, 1/2 teaspoon salt, and pepper in a medium bowl to blend. Set aside. Heat the oil and butter in a 9 1/2-inch-diameter nonstick ovenproof skillet over medium heat. Add the asparagus and saute until crisp-tender, about 2 minutes. Raise the heat to medium-high. Add the tomato and a pinch of salt and saute 2 minutes longer. Pour the egg mixture over the asparagus mixture and cook for a few minutes until the eggs start to set. Sprinkle with cheese. Reduce heat to medium-low and cook until the frittata is almost set but the top is still runny, about 2 minutes. Place the skillet under the broiler. To trim asparagus of its woody stem end, simply hold one end of the spear in one hand, the other end in the other hand, and bend gently until the spear snaps-which it will do exactly where the stem starts to get woody. Asparagus has its own built-in sous chef.

We love asparagus and I enjoy the fingerling potatoes. So when I came across this recipe for frittata, I thought I'd give it a try this Spring. If you can't find fingerling potatoes, you can easily substitute small red potatoes, Yukon gold or even small all-purpose potatoes. This recipe is from Pompeian Olive Oil

5 tablespoons pompeian extra-light olive oil
1 tablespoon unsalted butter
4 large shallots, peeled and thinly sliced
1 1/2 lbs fingerling potatoes, unpeeled and cut crosswise into 1/4-inch slices
salt, to taste
fresh ground black pepper, to taste
8 extra-large eggs
3/4 cup parmesan cheese, freshly grated
1/2 lb asparagus, peeled, steamed and cut into 1-1/2-inch pieces
chives, chopped

Steps:

  • Preheat the oven to 375°.
  • In a 10-inch non-stick skillet, heat 3 tablespoons of the oil together with the butter over low heat.
  • When the butter has melted, add the shallots and potatoes, season with salt and pepper and cook, covered, until the potatoes are tender, stirring often.
  • Transfer the mixture to a colander, drain well and set aside.
  • In a large bowl, combine the eggs and 1/2 cup of the Parmesan, season with salt and pepper and whisk until well blended.
  • Fold in the reserved asparagus and the potato/shallot mixture.
  • Add the remaining olive oil to the skillet and set over medium heat.
  • When hot, add the egg mixture and disperse the asparagus and potatoes evenly among the eggs.
  • Cook for 1 to 2 minutes or until the bottom is just set.
  • Sprinkle the top of the egg mixture with the remaining Parmesan and bake in the center of the preheated oven, for about 16 to 20 minutes or until the eggs are set and the top is lightly browned.
  • Remove the frittata from the oven.
  • Loosen the frittata if necessary by running a spatula around the insides of the skillet and carefully slide the frittata onto a large serving platter.
  • Garnish with fresh chives and serve warm or at room temperature, cut into wedges, accompanied by a well-seasoned green salad and a crusty French baguette.

1 small bunch medium asparagus, tough bottoms removed
1/2 cup extra-virgin olive oil
1 cup basil leaves, plus a few small basil leaves for garnish
1 cup flat-leaf parsley leaves
Salt and pepper
2 tablespoons unsalted butter
8 large eggs, lightly beaten
1/4 cup grated Parmesan cheese
1 ball of fresh burrata, about 1/2 pound, at room temperature

Steps:

  • Rinse asparagus, and pat dry. Cut into 1-inch pieces on the diagonal, or into julienne strips if preferred. Set aside.
  • In blender or small food processor, purée olive oil, basil and parsley to make a thin pesto. Season with salt and pepper.
  • Put a 10-inch cast-iron skillet or other nonstick omelet pan over medium-high heat. When hot, add butter and swirl to coat pan, then add asparagus. Season with salt and pepper and cook, stirring for about a minute without browning.
  • Quickly pour in eggs and stir with a wooden spoon, as if making scrambled eggs. Tilt pan and lift mixture at the edges to allow any runny egg from the top to make its way to the bottom. After 3 or 4 minutes, the frittata should be mostly set. Sprinkle with Parmesan cheese.
  • Lay a lid over the skillet, and turn off the heat. Leave for a minute or so, until frittata is moist and just done. (Alternatively, place pan under a hot broiler for a minute or so.)
  • Set whole burrata in the center of frittata. Drizzle with herb pesto. Pierce burrata with tip of a knife and spoon contents over frittata. Cut frittata into wedges and serve directly from pan, garnished with basil leaves.

1/3 cup parmesan cheese
4 -5 chopped basil leaves or 1 1/2 teaspoons dried basil
1 -1 1/2 teaspoon oregano
1/2-1 teaspoon cayenne pepper
salt and pepper
6 asparagus spears
2 carrots
5 tablespoons olive oil
4 tablespoons butter
1/2 cup thinly sliced onion
1 clove garlic, minced
1/2 cup bell pepper, red or green (diced)
1 1/2 lbs red potatoes, sliced thin
2 tablespoons minced chives
1 cup ricotta cheese
2 tomatoes, sliced

Steps:

  • In small mixing bowl, beat eggs, parmesan, basil and oregano.
  • Season with salt and cayenne pepper to your taste, set aside.
  • Cook asparagus and carrots in boiling water until tender crisp, about 5 minutes.
  • Dice and set aside.
  • In medium skillet, heat 3 TBS olive oil over medium heat.
  • Add onion, cover and cook on low til limp, about 10 miuntes.
  • Remove lid, turn to medium and add garlic.
  • Cook and stir until golden in color, about 5 minutes.
  • Add bell pepper and stir until tender about 5 minutes.
  • Remove from skillet with slotted spoon and mix with carrots and asparagus.
  • Season with salt and pepper to your taste.
  • Preheat oven to 350.
  • Combine in 12 inch skillet, preferably cast iron and MUST BE OVERPROOF, 2 TBS olive oil and 3 TBS butter.
  • Heat over medium heat til hot.
  • Add sliced potatoes in layers, overlapping if necessary.
  • Reduce to medium low and season with salt and pepper to your taste.
  • Cover and cook until potatoes are golden on the bottom at least 15-20 minutes-- PATIENCE.
  • Carefully turn potatoes in the pan until the browned one are on top adding the remaining butter.
  • Cook for about 5-8 more minutes over medium heat tll the bottom is golden also.
  • Spread Ricotta cheese over the potatoes.
  • Sprinkle the onion-asparagus-carrot mixture over the ricotta.
  • Arrange sliced tomatoes over the other veggies.
  • Pour egg mixture over the top.
  • Place skillet in oven and bake about 15 minutes until eggs are set.
  • Carefully invert frittata on large platter.
  • Sprinkle with chives.
  • Cut into wedges and serve immediately.
