- Combine the vodka and Butterfly Pea Flower Simple Syrup in a cocktail shaker. Fill with ice and shake well. Strain into a chilled wine glass filled with large ice cubes. Pour in the lemon juice then top with the prosecco. Garnish with the lemon wheel on the rim of the glass or a twist floated on top of the drink, then garnish with the edible flower.
- Combine the sugar with 1 cup water in a small saucepan. Bring to a boil over high heat and stir until the sugar dissolves, about 1 minute. Remove from the heat and stir in the butterfly pea flowers. Let sit until cooled to room temperature, about 30 minutes. Strain through a fine-mesh sieve into an airtight container; discard the flowers. Refrigerate for up to 2 weeks.

- Place the honey, lemon juice, vermouth and gin in the base of a cocktail shaker filled with ice. Put the top on the cocktail shaker and shake. Using a strainer, pour the mixture into a glass, add ice and top off with the seltzer. Crush the fresh lavender in your hand and garnish the cocktail. Serve with a straw.

Steps:
- Chill Prosecco, limoncello, and soda water. Place glasses in the refrigerator for about 30 minutes before using.
- Pour sugar onto a small plate or saucer and spread out. Run lemon slice around the edge of each glass. Turn a glass upside down and place into the sugar, coating just the rim of each glass.
- Fill each glass about 1/2 full with ice.
- Pour 1/4 cup limoncello over the ice in each glass, and top with 1/3 cup Prosecco. Add chilled soda water to taste and gently stir.
- Garnish with lemon slices and fresh mint sprigs. Serve ice cold.
