To the reviewer that mentioned that these should not be rolled in nuts - step 7 refers to the cookies being rolled into the shape of a nut and not in nuts. Update - I have adjusted the flour down to 2 cups. This recipe makes a bunch of small little cookies that kids in Denmark use to play games during the month of December. I remember playing 'MOUSE'. You need a bunch of Pepper Nuts and some kids. All the Pepper Nuts are placed on a table and one of the kids is sent outside the room. The other kids now choose the Pepper Nut that is IT (or the MOUSE). The kid is called back into the room and has to start eating the Pepper Nuts until he/she reaches the one that is the MOUSE. All the kids then yell MOUSE!!!!!!!!!!! usually to great scare for the poor kid that is IT. I remember eating one after the other thinking 'oh no, this one will make them scream...' Besides being a fun game they also taste good.... This is also a recipe where even little kids can be good helpers when cutting the cookies

1/2 cup sugar
1/2 cup butter
1 egg
1 teaspoon orange peel
2 cups all-purpose flour (275 g)
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon white pepper

Steps:

  • Preheat oven to 400°F.
  • Cream butter and sugar until fluffy; add egg and orange peel.
  • Mix remaining ingredients in a separate bowl and stir into batter, do not overmix.
  • Gather the dough until smooth and divide into 8 equal portions.
  • Roll each portion into a long thin roll 1/2 inch in diameter.
  • Cut the roll into small pieces - approx 22 pieces per roll.
  • Roll into small nuts (if you are lazy or short of time you can skip this step, although rolling make for a nicer looking cookie).
  • Place the 'nuts' on cookie sheets lined with parchment paper.
  • Bake for 10 minute.

Pebernødder or pepper nuts is a traditional danish christmas cookie.

1 egg
175 g sugar
2 tbsp. whipping cream
1 pinch finely chopped nutmeg (not crushed nutmeg. A nutmeg that is grated directly into the dough)
1 pinch crushed pepper - White
½ teaspoon ground ginger
1 teaspoon ground cinnamon
250 g flour
100 g soft butter (take it out of the fridge and set it at room temperature for an hour before you go to bake)

Steps:

  • Beat eggs and sugar until they are lightly and fluffy - this is easiest in a mixer. An electric whisk can also be used, but with a whisk you really have to put patience and effort into it.
  • Whip the cream in.
  • Mix the spices in the flour, and crumble the butter in, and add the eggnog.
  • Gather the dough - it is very greasy.
  • Put the dough in the fridge for at least 1 hour.
  • Turn the oven to 200 ° C (390 ° F)
  • Roll out the dough into finger-thick sticks - use if necessary. a little flour so that the dough releases more easily.
  • Cut the sticks into hazelnut-sized pieces and roll them round.
  • Put the pebernødder - pepper nuts - on baking sheets lined with parchment paper.
  • Bake the pebernøøder in the oven for 6-9 minutes.
  • Allow them to cool completely before placing them in an airtight cake tins or jars where they can be stored for 1 to 2 weeks.

These are deliciously tiny, somewhat time consuming to make (but totally worth it), eaten-by-the-handful Danish shortbread cookies. This recipe was given to me by a local grandmother at the annual Scandinavian Festival in Junction City, Oregon. Stored in an airtight container, they'll last close to two weeks.

1 cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 teaspoon salt
2 ¾ cups all-purpose flour, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two to three baking sheets.
  • Beat the butter and sugar together in a mixing bowl until light and fluffy. Mix in the eggs, one at a time, beating well after each. Stir in the cardamom, cinnamon, nutmeg, cloves, and salt until well blended. Mix in the flour, one cup at a time, until the dough gathers together. With floured hands, pinch off small, 1/2 teaspoon amounts of dough, roll into tiny balls, and place on prepared baking sheets.
  • Bake in preheated oven until bottom of cookies are light tan, 10 to 12 minutes. Cool 15 minutes on baking sheets. Store in an airtight container.

I like to make these spicy peppernuts in quantity so that I can serve them in baskets - like you would salted nuts or candy. They add a wonderful spicy aroma to the air. This is based on a recipe I received many years ago from a Danish friend. Although the mere idea of baking hundreds of nut-sized cookies sounds like an enormous amount of work, I've simplified the procedure.

1 cup (2 sticks) unsalted butter, at room temperature
1 cup light or dark brown sugar, packed
1 large egg
1 cup ground toasted filberts or almonds
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon freshly ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F. In the large bowl, cream the butter with the sugar using an electric mixer. Add the egg and ground nuts. In another bowl, mix the flour with the baking powder, soda, cardamom, cinnamon, cloves, allspice and nutmeg. Blend the dry ingredients into the creamed mixture until a stiff dough forms. Shape the dough into a ball. (At this point, you can wrap the dough in plastic wrap and refrigerate it to develop the flavor, for up to a week). Cut off a portion of the dough at a time and roll between your hands and a lightly floured work surface to make slim, ropes about 1/2-inch thick. Place 4 or 5 ropes on an ungreased cookie sheet. Cut ropes into 1/2-inch pieces using a sharp, small knife. Separate the pieces. Bake for 8 minutes or until the cookies are lightly browned and dry. Remove from the oven; cool on the baking sheet.

  • Pour onto sheet of wax paper on a cooling rack, and spread out. Allow to cool.
  • Store in tightly-sealed container.

At Christmas time my aunt would make these and us kids would fill our pockets and eat them at play. These are dime size, hard and crunchy. This is a large recipe and makes several ice cream pails full.

3 cups sugar
2 cups cereal cream
3 cups soft margarine
1 tablespoon ginger
2 tablespoons baking powder
1 teaspoon star anise
2 teaspoons cinnamon
16 cups flour

Steps:

  • Mix as cookie dough.
  • Roll into thin ropes about the size of your pointer finger and cut into 3/4" lengths.
  • You may want to freeze the ropes so as to make it easier to cut.
  • Bake 15 to 20 minutes at 350 deg. F. on large cookie sheets.
