1 Bob Evan Original Sausage Roll
2 cans ( 8 oz each) tomato sauce
1 can ( 14.5 oz) diced tomatoes
1/2 teaspoon hot red pepper flakes
Salt and cracked black pepper to taste
3/4 cup heavy cream
2 tablespoons unsalted butter
Fresh basil leaves, (chopped for serving (optional))
Grated Parmesan cheese (for serving)

Steps:

  • Cook the penne pasta according to package directions. Drain and reserve.
  • Heat oil in a saucepan over medium. Sauté the onions and garlic until soft, about 3 minutes. Add Bob Evans sausage roll; cook and crumble the sausage until no longer pink.
  • Add in the tomatoes and hot red pepper flakes; mix to combine. Season with salt and pepper to taste. Pour in the heavy cream and butter; stir to combine.
  • Add the drained pasta into the sauce and toss to combine. Bring the sauce and pasta to a boil, stirring to coat the pasta with sauce.

1 pound mild Italian sausage
1 cup chopped onion
½ cup white wine

2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. 6 tablespoons chopped Italian parsley

  • Melt butter with oil in heavy large skillet over medium-high heat. Add onion and garlic and sauté until golden brown and tender, about 7 minutes. Add sausage and sauté until golden brown and cooked through, breaking up with back of spoon, about 7 minutes. Drain any excess drippings from skillet. Generous pinch saffron threads
Kosher salt
1 head cauliflower, cored
1 tablespoon EVOO
1 pound bulk Italian sweet sausage
3 to 4 cloves garlic, finely chopped
1 yellow onion, finely chopped
1/2 cup dry white wine
1 bay leaf
1 thin cinnamon stick (2 to 3 inches long)
One 28-to-32 ounce can whole San Marzano tomatoes (look for the DOP label)
Freshly ground pepper
1 pound penne rigate
1 cup heavy cream
8 ounces mild provolone, caciocavallo or young Asiago cheese, shredded
1/2 cup grated Parmigiano-Reggiano
1/2 cup grated pecorino
Chopped fresh flat-leaf parsley, for serving

Steps:

  • Preheat the oven to 400 degrees F. Heat the stock with the saffron in a small saucepan over medium heat.
  • Meanwhile, bring 1 1/2 cups water to a boil in a pot and season with salt. Add the cauliflower, cover and steam until tender, about 12 minutes. Drain and break into florets.
  • Heat the EVOO in a Dutch oven over medium-high heat. Add the sausage and crumble it into very small pieces with a potato masher or wooden spoon. Add the garlic and onions and cook for 5 minutes. 2 (28 ounce) cans whole tomatoes
salt and pepper
1/2-1 teaspoon red chili pepper flakes
450 g dry penne pasta
15 sprigs parsley (Leaves only)
2 tablespoons grain alcohol or 2 tablespoons vodka
1 cup heavy cream

Steps:

  • Roughly chop garlic. Heat the oil in a medium-sized saucepan over medium heat. When the oil is warm add the garlic and sauté for 3 mins or until golden along the edges.

  • Cook penne in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return penne to pot. Add half of sauce and stir to coat. Season with salt and pepper. Transfer to large bowl. Serve, passing Parmesan separately. (Freeze remaining sauce up to 2 months in covered container.)

A slight variation from a Bon Appetite recipe from March 2000. It is made in under 30 minutes - perfect for a weekday meal yet satisfying enough to serve to friends for a casual weekend meal.

1 lb sweet sausage, casings removed
3/4 lb baby portabella mushrooms, chopped & sliced
1/4 teaspoon crushed red pepper flakes
3/4 cup canned reduced-sodium chicken broth
3/4 cup whipping cream
1 tablespoon butter
1 lb penne
1 cup fresh parmesan cheese, grated

Steps:

  • In a large skillet, over medium heat saute sausage (casings removed) until crumbled and brown.
  • Remove to a paper towel-lined dish with a slotted spoon.
  • Add butter, mushrooms and crushed red pepper to same skillet and saute in sausage drippings.
  • Cover, cook until mushrooms are tender - about 5 minutes.
  • Add chicken broth and whipping cream to skillet - reduce heat to low. Occasionally stirring as sauce thickens.
  • In different pot, cook pasta according to directions on box. Drain pasta. Return to same pot.
  • Add sausage, mushroom mixture, and cheese to pasta.
  • Toss over medium heat, until pasta is coated and sauce begins to thicken.
  • Season with salt and pepper to taste.
  • **Add more chicken broth if sauce seems dry.
