Use low-powered emulsifier such as an immersion blender or whisk to whip mixture into bubbles. Daiquiri: In cocktail shaker combine rum, lime juice, and simple syrup. - Thinly slice 1 jalapeno (remove the seeds for less heat). Combine with 2 1/2 cups chopped pineapple in a shallow dish; freeze until firm, at least 3 hours. Transfer to a blender; add 3/4 cup rum, 2 to 3 tablespoons sugar, the juice of 1 lime and 1 1/2 cups ice and puree until smooth. Divide among 4 glasses; top with jalapeno slices and a cilantro sprig.
Like many daiquiris, a pineapple daiquiri might be too sweet for some people. Ginger adds heat and cuts the sweetness, so the drink has a more complex flavor and a spicy, warming bite. It also helps calm your stomach, later, if you've had too many. Add the ginger to your taste - remember, the fresher the ginger, the hotter the flavor. From Temple of Thai website.
