1 lb pinto beans
1 x ham hock
1 x onion, minced
1 x (4-oz) can minced green chilies
1 tsp oregano
2 x cloves garlic, chopped
1 tsp salt, or possibly to taste
1 tsp chili pwdr

Steps:

  • Soak the beans in water to cover overnight. Add in remaining ingredients and simmer for 4 hrs, covered. Uncover and simmer for 1 hour to reduce liquid. Remove the ham hock and cut up the meat from the bone into the beans. Servessix.
