Quiche with crunchy potato crust. A good one dish meal and a great way to use leftovers. You may also use 1 cup chopped vegetables of your choosing, such as onions, peppers, broccoli or tomatoes, etc.

1 (16 ounce) package frozen shredded hash brown potatoes, thawed
¼ cup butter, melted
5 eggs, lightly beaten
1 ½ cups shredded Swiss cheese
1 cup cooked ham
¼ cup milk
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9 inch pie pan.
  • Press potatoes into greased pie plate. Brush with melted butter. Bake in preheated oven until lightly browned, about 10 to 15 minutes.
  • In a large bowl, stir together beaten eggs, milk, cheese, ham, salt and pepper. Pour egg mixture into baked crust.
  • Bake in preheated oven until center is set, about 20 minutes. The quiche will be browned on top and a knife inserted into the center will come out clean.

3 cups shredded raw potatoes
1 cup grated swiss cheese or 1 cup cheddar cheese
1 chopped onion
3/4 cup ham (cooked) or 3/4 cup sausage (cooked)
1 cup evaporated milk
2 eggs
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon parsley

Steps:

  • Preheat over to 425°F.
  • In 9 inch pie pan mix together vegetable oil and shredded potato.
  • Press evenly into pie crust shape.
  • Bake 420 for 15 mins until just beginning to brown.
  • Remove from oven.
  • Filling:.
  • Place cheese, diced meat and onion on top of potato crust.
  • Beat together milk, eggs and seasonings.
  • Pour onto other ingredients.
  • Sprinkle with 1 tablespoon parsley flakes.
  • Return to oven and bake at 425 for 30 minutes Allow to cool for 5 mins before cutting.

¼ cup finely chopped green onions

Steps:

  • 1.Heat the oven to 350°F.
  • 2.Spray 12 individual ½-cup ramekins with baking spray; set aside.
  • 3.In a 10-inch non-stick cooking pan, over medium heat, heat the olive oil.
  • 4.Add the hash browns, green onions, green peppers, red onions, and red peppers.
  • 5.Cook, over medium heat, stirring occasionally, until the potatoes are lightly browned (5 to 6 minutes).
  • 6.Place the potato mixture evenly in the bottom of each ramekin.
  • 7.In a large mixing bowl place the eggs, half and half, sour cream, cheese, flour, and baking powder. Using a wire whisk, mix well.
  • 8.Pour the egg mixture evenly over the potato mixture in the ramekins.
  • 9.Sprinkle each ramekin with the crumbled bacon.
  • 10.Bake until the eggs are set (about 20 minutes).
  • 11.Serve each with an additional dollop of sour cream, if desired. Refrigerate leftovers.

2 to 3 pounds small red potatoes, cut in half

2 potatoes, sliced thin
1 lb sweet Italian sausage
1 cup green pepper, diced
1 cup red pepper, diced
1 cup onion, diced
1 cup shredded cheese
4 eggs
1 cup milk or 1 cup cream
1 pie crust
salt or pepper
1 tablespoon olive oil

Steps:

  • Remove casing from sausage and cook in a pan over medium heat until browned. Use a wooden spoon and crumble the sausage as it cooks. Drain on a paper towel to remove any fat.
  • In same pan, gently saute peppers and onions about 5 min until soft. Salt and pepper to taste. Remove from pan and set aside.
  • Again using same pan, heat olive oil and cook potato slices about 10 min to soften.
  • Preheat oven to 350. Lay pie crust into pie pan and lay potato slices to cover bottom. Next add crumbled sausage, peppers and onions. Whisk together egg and milk and pour over top of mixture. Top with cheese.

1 cup diced Canadian bacon
8 large eggs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 ounces smoked cheddar cheese, grated (about 1 cup packed)

Steps:

  • Preheat oven to 350°F. Spray 10-inch glass pie dish with vegetable oil spray. Steam potato rounds until just tender, about 6 minutes. Transfer to rack and cool. Line prepared pie dish with enough potato rounds to cover, overlapping slightly (reserve any remaining potatoes for another use).

8 pork chops
1 teaspoon seasoned salt
1 (10.75 ounce) can condensed cream of celery soup
⅔ cup milk
½ cup sour cream
½ teaspoon salt
¼ teaspoon ground black pepper
1 (16 ounce) package frozen hash brown potatoes, thawed
¾ cup shredded Cheddar cheese
½ (6 ounce) can French-fried onions
¼ cup shredded Cheddar cheese
½ (6 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat vegetable oil in a large skillet over medium heat. Season pork chops with seasoned salt. Cook pork chops in hot oil until browned completely, 2 to 3 minutes per side. Remove pork chops to a plate lined with paper towels to drain.
  • Mix celery soup, milk, sour cream, salt, and pepper in a bowl. Fold hash brown potatoes, 3/4 cup Cheddar cheese, and about half the French-fried onions into the soup mixture; pour into a 13x9-inch baking dish. Arrange pork chops atop the mixture. Cover the dish with aluminum foil.
  • Bake in preheated oven for 40 minutes. Remove foil and top pork chops with 1/4 cup Cheddar cheese and remaining half-can French-fried onions; continue baking until the cheese melts, about 5 minutes. An instant-read thermometer inserted into the center of the pork chops should read 145 degrees F (63 degrees C).

3 eggs
1/2 cup milk
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1-1/2 cups KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
4 green onions, sliced

Steps:

  • Heat oven to 375ºF.
  • Pat hash browns dry with paper towels; place in bowl. Add butter; mix lightly. Press onto bottom and up side of 9-inch pie plate.
  • Bake 20 min. or until golden brown. Meanwhile, whisk eggs and milk in medium bowl until blended. Stir in sour cream, then cheese and onions.
  • Reduce oven temperature to 350ºF. Pour filling into crust. Bake 30 min. or until center is set and crust is golden brown. Let stand 5 min. before serving.

3 cups frozen ore-ida O'Brien potatoes or 3 cups hash brown potatoes
1 lb bulk sausage
1 1/2 cups cheese, chef's choice
8 fluid ounces evaporated milk
2 eggs
3/4 teaspoon seasoning salt

Steps:

  • Preheat oven to 425°F.
  • In an 8-inch square baking tin that has been sprayed with vegetable oil, place frozen Potatoes O’Brien or hash brown potatoes.
  • Sprinkle with a couple of tablespoons of vegetable oil and bake in the oven for 15 minutes.
  • Meanwhile, brown the sausage, either mild or hot, and drain well.
  • Grate enough cheese to make 1½ cups.
  • And in a separate bowl whisk together evaporated milk and eggs, along with seasoning salt.
  • When potatoes have come out of the oven, layer them with the sausage and cheese and pour the milk/egg mixture over all.
  • Bake at 425°F for 30 minutes.
  • Allow to sit for 5 to 7 minutes after it comes out of oven.
