Pain de Campagne (literally Country Loaf) has become the staple bread in my house. I make it every week and keep enough around to last until I bake again. If you need a source of sourdough, here's the easiest solution: Visit your local artisan baker and ask if they might spare a walnut-size knob of sourdough to get you started. You can also make a culture yourself, though it takes about a week or so to get a lively and stable fermentation.

100 grams unbleached organic all-purpose flour
30 grams organic whole-wheat flour
100 grams water
20 grams ripe starter
200 grams starter
400 grams water (plus another 50 grams added in increments)
70 grams organic whole-wheat flour
70 grams organic whole-rye flour
460 grams unbleached organic all-purpose flour
13 grams sea salt
Olive oil, to grease the bowl
Semolina and flour, to dust the baking peel

Steps:

  • Morning, First Day: Mix all the levain ingredients together and let it ferment for 8 to 10 hours, until the starter has domed but not collapsed. There will be extra starter left over once you remove 200 grams for the dough. Use this remaining starter as a base to refresh your leaven. (To refresh, mix 20 grams of the remaining starter, 75 grams water, 50 grams whole wheat flour, and 50 grams white flour; let it ferment 2 to 4 hours at room temperature and then place it back in the refrigerator.)
  • Evening, First Day: Mix the dough. In a bowl, mix the starter and 400 grams water until the starter is dissolved, though lumps here and there are fine. Add the whole wheat and rye flours and stir until combined. Then add the white flour and mix for 1 to 2 minutes, until the flour dissolves and forms a shaggy mass.
  • Make an indentation on top of the dough and add the salt and 25 grams water into this well, so that the salt can begin to dissolve. Cover the bowl and let it sit for 30 to 40 minutes.
  • Moisten your hands, then shake off the water. Stretch and fold the dough by pulling the dough out from the edges and folding in toward the middle. You want to stretch the dough out to strengthen the gluten but ideally don't rip the dough. You can also pinch the dough between your thumb and fingers to further incorporate the salt. Stretch and fold the dough in a circular pattern, pulling the dough out, then folding the edges toward the middle 10 to 12 times. Turn the dough over, so that the seams are facedown and the smooth side is on top. This entire process should take about 2 minutes. At this point you can add the remaining water, letting it sit on top of the dough until the next round. Cover and let the dough sit for 30 minutes.
  • Repeat the stretching and folding for another round. Pinch the dough with your thumb and fingers to help incorporate the additional water. By this time, you should feel some tension in the gluten, but be careful not to rip the dough. Once this process is complete, turn the dough over so the smooth side is on top. Let the dough sit for 30 minutes.
  • Having completed two rounds of stretching and folding, the dough should be elastic. You may, however, add one more round of stretching and folding to further develop the gluten, after allowing it to rest for 30 minutes.
  • Remove the dough and clean and lightly oil the bowl, or move the dough to a lightly oiled container. Cover and let sit for another 30 minutes, then place it in the refrigerator or in a cool basement room ideally no warmer than 55 degrees F (13 degrees C). Let the dough rise for 8 to 12 hours, though it can rise for as long as 24 hours. However, the longer this first rise lasts, the more sour the flavor will be.
  • Second Day: Place a rimmed baking sheet on the bottom of the oven and a baking stone on a rack in the middle. Preheat the oven to 500 degrees F (260 degrees C).
  • After letting the dough rise in the cool environment, you should see fermentation bubbles, and the dough should have at least doubled in size. If it hasn't, let it warm at room temperature for another hour.
  • Dust the counter lightly with flour and gently remove the dough with a dough scraper, letting the smooth top of the dough fall onto the counter. The sticky underside will now be face up. Cut the dough in half (You can make two loaves simultaneously if they fit into the oven. Or refrigerate the remaining half the dough, then remove it and shape it into a second loaf after the first loaf is out of the oven.)
  • Preshape the dough. Stretch the four sides of the dough out and let them fall into the center. They can overlap. Then turn the dough over so that these seams are facedown. Dust with flour, cover with a light cloth or towel, and let the dough rest for 20 minutes.
  • Dust the counter with flour very lightly, then turn the dough over again so the seams are face up and the smooth side is on the counter. Stretch and then fold the edges in toward the center, so that you have an approximately round shape, which should take 6 to 8 folds. Apply light pressure in the center so the folds seal. Turn the dough over, so the smooth side is now face up, and, cupping your hands around the dough, use the outer edges of your palms and pinkies to stretch the skin of the dough and tuck it under the bottom, moving the dough in a circular motion so that you end up with a round shape. Try not to compress the loaf tightly, though the goal is to have a taut skin. (This last action takes time to master so don't worry if it doesn't come out perfect on your first attempt-there will be many more loaves to come.)
  • Let the loaf sit while you prepare a colander lined with a floured towel. Then using the dough scraper to loosen the loaf from the counter, pick up the loaf and place the smooth side face down on the floured towel in the colander. The seams will be face up. Cover with a towel and let the loaf rise for about 90 minutes, or until the loaf springs back slowly when you lightly press it with your finger. If it snaps back into shape quickly and leaves no indentation, it is not done rising, so give it another 20 minutes and try again. This is a judgment call, but it is better to err on slightly underproofing the loaf rather than letting it rise until it collapses on itself.
  • Dust a peel or cutting board with semolina and flour or just flour. Turn the loaf out on the peel or board, so that the smooth side, which was on the towel, is now face up. Using a razor blade or bread knife, score the loaf with one cut, or in an X pattern, or in a square pattern, about 1/4 inch deep. Angle the blade while you slash the loaf with swift, sure cuts. Don't dawdle, fuss, or repeat the action.
  • Transfer the loaf to the hot stone and close the oven. Then open the oven and pour 1/2 cup water into the baking sheet and close the oven, trapping the steam. Turn the oven down to 460 degrees F (240 degrees C) and bake for 30 minutes. Open the door briefly to release the remaining steam. Then turn down the oven to 420 degrees F (215 degrees C) and continue baking for another 10 to 15 minutes, or until the crust is dark brown. Turn the oven off and prop open the door slightly with a wooden spoon, leaving the loaf in the oven for another 5 to 7 minutes. Ideally, the loaf will have a hollow knock when you remove it from the oven, signaling that moisture has adequately dissipated in the loaf. Alternatively, stick an instant-read thermometer in the bottom of the loaf. The center of the loaf should read at least 205 degrees F (96 degrees C).
  • Let the loaf cool on a bread rack for at least one hour before cutting into it. Since this loaf is made with sourdough, it will last a long time. For the first two days, I simply keep it wrapped in a towel or in a paper bag, the cut side facedown. If there's anything left after that point, I keep it at room temperature in a plastic bag.

½ teaspoon instant yeast
½ cup warm water (110 degrees F/45 degrees C)
¾ cup whole wheat flour
2 ½ cups warm water
½ teaspoon instant yeast
6 cups unbleached bread flour
1 tablespoon kosher salt
2 tablespoons cornmeal for dusting

Steps:

  • To make the sponge, whisk the 1/2 teaspoon yeast in 1/2 cup warm water. Stir in the whole wheat flour until the mixture resembles a thick batter. Beat for about 100 strokes to form longs strands of gluten. Cover the bowl with a damp cloth and let sit at room temperature for 2 to 8 hours (longer is better for flavor development). You can also let the poolish ripen in the refrigerator for 12 to 15 hours, bringing it back to room temperature before proceeding with the recipe.
  • When the poolish is ready, it will be bubbly and loose, with a yeasty, sour aroma. Scrape the poolish into a bowl and stir in the 2 1/2 cups water and the remaining 1/2 teaspoon yeast. Stir well to combine. Add the bread flour 1 cup at a time, mixing well after each addition, until the dough becomes too difficult to stir.
  • Transfer the dough to a floured work surface and knead for 10 to 12 minutes, adding more flour only when the dough becomes too sticky to handle. Sprinkle the salt over the dough and knead it for an additional 5 to 7 minutes. The dough should have a smooth surface and spring back to the touch. Shape the dough into a round and cover with a damp cloth for 5 to 10 minutes.
  • Place the dough in an oiled bowl, turning to coat the surface of the dough with oil. Cover the dough with a damp cloth and let it rise at room temperature until doubled in size, about 2 to 3 hours.
  • Deflate the dough and cut it into two pieces. Shape the dough into two rounds, cover them with plastic or a damp cloth, and allow the dough to rest for 30 minutes at room temperature.
  • Shape the dough into baguettes. Place a heavily floured cloth on a baking sheet, arranging a fold down the center to separate the loaves. Place the loaves, seam-side up, on the floured cloth. Dust the tops of the loaves with flour, cover with a damp towel, and let rise until doubled in bulk again, about two hours.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Sprinkle a baking sheet with cornmeal. Gently transfer the risen loaves to the baking sheet, placing them seam-side down on the cornmeal. Make several diagonal slashes in the loaf with a serrated knife or razor blade.
  • Immediately place the scored loaves in the preheated oven. Bake the bread until the loaves are golden brown, about 25 to 30 minutes. Cool the loaves on wire racks.

3 cups lukewarm water
1 1/2 tablespoons granulated yeast
1 1/2 tablespoons kosher salt
3/4 cup rye flour
3/4 cup whole wheat flour
5 cups unbleached all-purpose flour
cornmeal, for the pizza peel

Steps:

  • Mix the yeast and salt with the water in a 5 quart bowl or a lidded (not airtight) food storage container.
  • Mix in the remaining dry ingredients without kneading, usings a spoon, a Danish dough whisk, a 14 cup capacity food processor with dough attachment or a heavy-duty stand mixer with dough hook. If not using a mixer, you may need to use wet hands to incorporate the last bit of the flour.
  • Cover (not airtight) and allow to rest at room temperature until the dough rises and collapses (or flattens on top), approximately 2 hours.
  • The dough can be used immediately after the initial rise, however it is easier to handle when cold. Refrigerate in a lidded (not airtight) container and use over the next 14 days. You can also divide the dough into 4 1-lb portions and freeze in an airtight container for up to three weeks. Thaw 24 hours before use.
  • On baking day, dust the surface of the refrigerated dough with flour and cut off a grape fruit size piece (1 lb). Dust with more flour and quickly shape into a ball by stretching the surface of dough around to the bottom on all four sides, rotating the ball a quarter-turn as you go. Allow to rest and rise on cornmeal-dusted pizza peel for 40 minutes.
  • Twenty minutes before baking time, preheat oven to 450 degrees F, with a baking stone placed on the middle rack. Place a cast iron skillet or empty metal broiler tray on the bottom rack.
  • Sprinkle loaf liberally with flour and slash a cross, scallop design or tic-tac-toe design on the top using a serrated bread knife.
  • Slide loaf directly onto the hot stone. Pour 1 cup of hot tap water into the skillet or broiler tray and quickly close the door. Bake for 35 minutes or until top of crust is dark brown and sounds hollow when thumped.
  • Remove from oven and cool on wire rack. Allow to cool before slicing.

1/4 teaspoon nutmeg

pasta sauce or pesto sauce, for serving

Steps:

  • Bring a pot of oil to 370 degrees F on a candy thermometer. The oil should be about 3 inches deep and not come up more than halfway up the side of the pot.
  • Roll out the dough to about 1/4-inch thick rectangle. Cut the rectangle into 16 equal portions.
  • Mix together the ricotta, nutmeg, oregano, salt and pepper. Put about a tablespoon of the filling onto the dough, placing it so that you can easily close the dough around it. Brush the edge of the dough with water.
  • Press the dough closed around the filling. Making sure that the dough is sealed well, so the filling won't come out while it is frying.
  • Place the doughnuts in the hot oil for about 2 minutes, or until they are golden brown. Put only a few doughnuts in the oil at a time, they should not be crowded or they will not fry evenly.
  • Flip the doughnuts over and fry the second side for another 2 minutes. Make sure your oil is staying around 370°F.
  • When the doughnuts are done frying, use a basket skimmer to remove them from the oil and place them on paper towels to drain the excess oil.
  • Serve with the tomato sauce or pesto sauce.

½ pound cooked small shrimp
½ cup chopped prosciutto
2 teaspoons olive oil, or to taste
2 (5 ounce) skinless, boneless chicken breast halves

2 tablespoons minced garlic
3 tablespoons Marsala wine
2 cups heavy cream
1 cup grated Parmesan cheese
½ cup milk

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and transfer to a large bowl; mix in shrimp and prosciutto.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Brush olive oil over chicken breasts and season with salt and pepper. Grill until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 5 minutes per side. Cool briefly before slicing into strips. 1 lb refrigerated bread dough (Quick and Easy Artisan Boule (French Free-Form Loaf))
white flour, for the pizza peel

Steps:

  • Cut off a 1 pound (grapefruit sized) piece of refrigerated dough without dusting the surface with flour. Wet hands will help prevent sticking. Using your wet hands, shape the dough into a ball by stretching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go. With your wet fingers, flatten the ball into an elongated oval about 1 inch thick. Don't make it thinner than 1 inch or it will puff like pita bread.
  • Turn on oven to 450 degrees F with a baking stone on the middle rack. Place an empty broiler tray on any other shelf that will not interfere with the bread.
  • Place the loaf on a white flour-covered pizza peel and allow to rest for 20 minutes. Dust the top of the loaf with flour but do not slash with a knife.
  • Slide the loaf directly onto the hot stone. You may need the assistance of a steel dough scraper or spatula. Pour 1 cup of hot tap water onto the broiler tray and quickly close the oven door.
  • Bake for about 20 minutes or until deeply brown. Allow to cool on a rack before cutting or eating.

4 1/2 cups (20 oz / 567 g) unbleached bread flour
1 3/4 teaspoons (0.4 oz / 11 g) salt, or 2 1/2 teaspoons coarse kosher salt
1 1/4 teaspoons (0.14 oz / 4 g) instant yeast
2 cups (16 oz / 454 g) chilled water (about 55°F or 13°C)
1 tablespoon (0.5 oz / 14 g) olive oil (for ciabatta only)

Steps:

  • Do ahead
  • Combine the flour, salt, yeast, and water in a mixing bowl. If using a mixer, use the paddle attachment and mix on the lowest speed for 1 minute. If mixing by hand, use a large spoon and stir for about 1 minute, until well blended. The dough should be coarse and sticky. Let the dough rest for 5 minutes to fully hydrate the flour.
  • If making ciabatta, drizzle the olive oil over the dough; if making mini baguettes, omit the oil. Then mix on medium-low speed using the paddle attachment, or by hand using a large, wet spoon or wet hands, for 1 minute. The dough should become smoother but will still be very soft, sticky, and wet. Use a wet bowl scraper or spatula to transfer the dough to a clean, lightly oiled bowl. Cover the bowl with plastic wrap and let the dough rest at room temperature for 10 minutes.
  • Transfer the dough to a lightly oiled work surface. With wet or oiled hands, reach under the front end of the dough, stretch it out, then fold it back onto the top of the dough. Do this from the back end and then from each side, then flip the dough over and tuck it into a ball. The dough should be significantly firmer, though still very soft and fragile. Place the dough back in the bowl, cover, and let sit at room temperature for 10 minutes. Repeat this process three more times, completing all repetitions within 40 minutes. (You can also perform the stretch and folds in the bowl, as shown on page 17.)
  • After the final stretch and fold, immediately cover the bowl tightly and refrigerate overnight or for up to 4 days. The dough will rise, possibly to double its original size, in the refrigerator. (If you plan to bake the dough in batches over different days, you can portion the dough and place it into two or more oiled bowls at this stage.)
  • On baking day
  • Remove the dough from the refrigerator about 1 hour before baking for mini baguettes, and 3 hours in advance for ciabatta (or an hour earlier if the dough hasn't increased to 1 1/2 times its original size in the refrigerator overnight).
  • To make ciabatta, about 1 hour after taking the dough out of the refrigerator, line the back of a sheet pan with parchment paper and generously dust the entire surface with flour. Use a wet or oiled bowl scraper to transfer the dough to the work surface, taking care to handle the dough as little as possible to avoid degassing it.
  • Dust the top surface of the dough with flour and also flour your hands. Using your hands or a metal pastry scraper, gently coax and pat the dough into a rough square measuring about 9 inches on each side, still taking care to degas it as little as possible.
  • For small ciabatta, cut the dough into 3 even strips about 3 inches wide and 9 inches long (the pieces will each weigh about 12 ounces or 340 grams). For larger ciabatta, cut the dough in half. With floured hands, gently fold the dough in thirds, like folding a letter but without applying any pressure. Gently roll the folded dough in the dusting flour to coat it, then lift the dough and place it on the parchment paper, again rolling it in the dusting flour on the parchment. Rest the dough seam side down on the parchment and repeat with the other pieces of dough.
  • Mist the tops of the dough pieces with spray oil and loosely cover the pan with plastic wrap or a clean, lint-free towel. After 1 hour, gently roll the pieces over so the seam side is up, lift and cradle each piece with floured hands, and, working from the underside, gently coax it to a length of 5 inches (for small ciabatta) to 7 inches (for large ciabatta). Lay the pieces back on the parchment seam side up. Straighten the sides of each piece with your hands or a pastry scraper so that they are more rectangular than oblong, mist with spray oil again, then cover loosely and proof for 1 hour more.
  • About 45 minutes before baking, preheat the oven to 550°F (288°C) or as high as it will go, and prepare the oven for hearth baking (see page 30).
  • Slide the dough, parchment and all, onto the stone; if you aren't using a baking stone, simply put the whole pan into the oven. Pour 1 cup of hot water into the steam pan, then lower the oven temperature to 450°F (232°C).
  • Bake for 12 minutes, then rotate the pan and bake for 15 to 20 minutes more, until the crust is a rich brown (streaked with the dusting flour). The bread should puff a little, and the crust should be hard when tapped (it'll soften as it cools). Cool on a wire rack for 45 minutes before slicing.
  • To make mini baguettes, about 45 minutes before baking, preheat the oven to 550°F (288°C), or as high as it will go, and prepare the oven for hearth baking (see page 30). After the dough has been out for 1 hour, generously dust the entire surface of a wooden peel with flour or line the back of a sheet pan with parchment paper (you can either dust the parchment with flour or mist it with spray oil so that you can slide and move the dough if need be). Use a wet or oiled bowl scraper to transfer the dough from the bowl to the work surface, taking care to handle the dough as little as possible to avoid degassing it.
  • Dust the top surface of the dough with flour and also flour your hands. Using your hands or a metal pastry scraper, gently coax and pat the dough into a rough square about 8 inches on each side, still taking care to degas it as little as possible.
  • Cut off a slice of dough about 1 1/2 inches wide and roll it into the dusting flour to lightly coat it and keep it from sticking to the remainder of the dough. Working with floured hands and tools, carefully transfer the slice to the prepared peel or parchment paper, cradling it with both hands to keep it from stretching too much. You can straighten it by spreading your hands underneath the dough as you lay it down; it should elongate slightly, to 9 to 10 inches.
  • Repeat with the rest of the dough, placing the pieces 1 inch apart, until the peel or parchment is full. If you can't fit all of the pieces on the peel or parchment, bake those that are ready before cutting the remainder. It's better to work in manageable batches than to try to cram all of them in the oven, especially if your stone or oven won't easily hold all of them. Scoring the dough is an option, but because it risks degassing the dough, I advise against it until you have made these a few times.
  • Slide the mini baguettes onto the baking stone using short, quick back-and-forth motions with the peel, or by sliding the parchment paper onto the stone. Pour 1/2 cup of hot water into the steam pan, then lower the oven temperature to 475°F (246°C).
  • Bake for 12 to 18 minutes total, rotating the pan as needed for even browning. The crust should be a rich brown, the loaves should puff a little, and the crust should be hard when tapped (the crust will soften slightly as the bread cools).
  • Cool on a wire rack for at least 15 minutes.
  • Variation
  • For an interesting ciabatta texture and a nice design on the surface of the bread, mix a small amount of coarse rye flour or whole wheat flour in with the dusting flour.

Enjoy this traditional French country sourdough loaf with a lovely blend of red fife, rye and bread flours. The recipe is easy to follow, employs best practices from some of our bread experiments here at Breadtopia, and the hydration is manageable, helping even beginners shape the dough with ease and achieve a nice crumb.

300g bread flour (2 1/4 cups)
80g home-milled red fife wheat berries or whole grain red fife wheat flour (1/2 cup + 1 Tbsp)
20g home-milled rye berries or whole grain rye flour (2 1/2 Tbsp)
310g water (1 1/3 cups)
80g sourdough starter (1/4 cup)
8g salt (1 1/2 tsp)

Steps:

  • Autolyse
  • Mix the flours and water until incorporated. Cover and set aside 30-90 minutes (see notes).
  • Adding Starter and Salt
  • Sprinkle about half the salt on your dough, fold the dough over itself and then sprinkle the other half of the salt on the dough. Finally, fold the dough again and add your starter to the top and around the dough.
  • Work the salt and starter into the dough with both hands by gently pressing, stretching and squeezing. Pause if the dough starts to tear. Cover when finished.
  • Gluten Development and Bulk Fermentation
  • Let the dough rest 20-30 minutes after mixing in the starter and salt.
  • Then perform at intervals of 30-60 minutes: 1 round of coil folding, 1 lamination, and 2-3 more rounds of coil folding. (See videos of coil folding and lamination after the recipe instructions.) The dough should begin to feel bubbly and crackly by the final coil fold. If you prefer traditional stretching and folding, that will work too. However, if you are going to laminate the dough as suggested, do it relatively early in the process.
  • From the point of mixing in salt and starter, my gluten development was spread over 4 hours, and the dough only fermented for an additional 40 minutes after the last coil fold. My kitchen temperature was in the high 70s, though, and depending on your starter strength and room temperature, you may need more or less time.
  • Preshape, Bench Rest and Shaping
  • Using wet fingers or a dough scraper, remove your dough from the bowl and onto a lightly floured counter.
  • Shape the dough into a ball, cover and let rest about 25 minutes.
  • Lightly flour your proofing basket.
  • Flour and flip over your relaxed dough, and then shape it into a batard or boule (or oblong batard).
  • Place the dough in your proofing basket seam-side up.
  • Final Proof
  • Numerous proofing strategies are valid. For this loaf, I proofed at room temperature for 45 minutes, and then in the refrigerator for 9 hours.
  • Baking
  • Preheat your oven and baking vessel to 500F for 30 minutes.
  • Flip your dough from the proofing basket onto parchment paper (or directly into your hot baking vessel). Score the top of the dough, and lift the parchment into the baking vessel.
  • Bake for
  • 20 minutes at 500F covered
  • 8-10 minutes at 450F covered
  • 5-10 minutes at 450F uncovered
  • The internal temperature of your finished bread should be over 205F.

Easy Wheat Stalk Bread (Rustic

This is my favorite recipe from the cookbook "Artisan Bread in 5 Minutes a Day." I have baked it eighteen times now--it's foolproof and looks beautiful! The "secret" to this bread is mixing the dough ahead of time and storing it in your fridge, so you can make a fresh loaf daily. The "wheat stalk" shape allows diners at the table to twist off a roll-sized piece from the loaf.

3 cups water (lukewarm)
1 1/2 tablespoons dry yeast
1 1/2 tablespoons salt
6 1/2 cups bread flour

Steps:

  • Mix the yeast and salt with water.
  • Mix in flour without kneading, using a spoon or a stand-mixer (locked) with the dough hook. If not using the mixer, you may need to use wet hands to incorporate the last bit of flour.
  • Cover (not airtight--use a pice of foil or wax paper over the bowl) and allow to rest at room remperature until the dough rises and collapses (or flattens on top); about 2 hours.
  • Dough may be used right away, though it easier to handle when cold. I refrigerate the lidded (not airtight) dough for use over a 2-week period.
  • On baking day, dust the surface of the refrigerated dough with flour. Cut off a 1 pound (grapefruit-sized) piece. Dust the piece with flour and quickly shape into a ball by stretching the surface of the dough around to the bottom on all 4 sides, rotating the ball a quarter turn as you go. Gradually elongate the mass. With palms of your hands, gently roll into the shape of a baguette, tapering the ends to points.
  • Allow to rest on a flour-dusted board for 30 minutes. (I cover with a low-lint linen napkin).
  • Twenty minutes before baking, preheat oven to 450 degrees F. At this time, placea baking stone on the center rack, or use two overturned glass baking dishes of the same height as a surface. A metal cookie sheet will work in a pinch. Place an empty broiler pan on any other shelf that will not interfere with the rising bread.
  • Just before baking, dust the loaf with flour. With sharp kitchen scissors, cut from the top, at a 45-degree angle into the dough, stopping a quarter inch from the bottom. Make another identical cut about 3 inches down the loaf. Fold each cut piece over to one side, and repeat cutting, alternating sides each time to replicate a stalk of wheat (see photo).
  • Slide the loaf directly onto the hot stone (baking dishes, or cookie sheet). Pour 1 cup hot tap water into the broiler pan and quickly close the oven door. Bake 20-25 minutes, until deeply browned and firm.
  • NOTE: Use 7 cups all-purpose flour if you don't have bread flour. You will get 3-4, 1-pound loaves out of this recipe. Make the dough ahead of time and you'll have fresh bread every day for four days.
