GRILLED BREAD AND TOMATO SALAD

Yield Serves 6 to 8

Number Of Ingredients 11

1/2 cup (1 stick) unsalted butter
2 garlic cloves, minced
8 ounces day-old Italian bread, cut into 3/4-inch-thick slices
6 dead-ripe meaty tomatoes, cored, seeded, and cut into quarters
1/4 cup minced red onion
1/3 cup fruity extra-virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh tarragon
1/2 teaspoon kosher salt
7 or 8 grindings black pepper

Steps:

  • 1. Place a small saucepan over medium heat and add the butter. When it's about half melted, throw in the garlic and cook for 3 to 4 minutes, allowing the garlic to take on a little bit of color. Remove from the heat and brush this mixture on both sides of each slice of bread.
  • 2. Oil the grill racks. Preheat your grill using all burners set on high and with the lid closed for 10 to 12 minutes.
  • 3. Place the bread on the grill, close the lid, and cook, turning once, until well marked. Careful here; depending on the moisture content of the bread, this could happen as quickly as 2 minutes (or about 1 minute on each side), but it usually takes about 4 minutes. Place the tomatoes on the grill, close the lid, and cook for a few minutes per side.
  • 4. Remove the bread to a cutting board, cut into 3/4-inch cubes, and place in a large mixing bowl. Add the tomatoes, onion, olive oil, vinegar, herbs, salt, and pepper. Toss gently with your hands to combine. Taste and adjust the seasonings if you desire. Serve at room temperature.

Categories     Salad     Onion     Tomato     Roast     Picnic     Summer     Bon Appétit

Yield Makes 6 servings

Number Of Ingredients 8

8 tablespoons olive oil
4 large tomatoes (about 2 1/4 pounds), halved horizontally
8 3/4-inch-thick crusty country-style bread slices (each about 5x3 inches)
1/3 cup red wine vinegar
1 teaspoon minced canned chipotle chili*
1 garlic clove, minced
1/2 red onion, chopped
1/2 cup chopped fresh cilantro

Steps:

  • Preheat barbecue (medium-high heat). Brush 2 tablespoons oil over cut sides of tomatoes. Grill tomatoes, cut side down, just until grill marks show but tomatoes are still slightly firm, about 2 minutes. Turn tomatoes over; grill 2 minutes longer. Transfer to baking sheet. Cool slightly. Brush 2 tablespoons oil over both sides of bread slices. Grill until golden, about 2 minutes per side. Transfer to sheet with tomatoes. Cool slightly.
  • Whisk vinegar, chipotle chili and garlic in medium bowl. Gradually whisk in remaining 4 tablespoons oil. Season vinaigrette with salt and pepper.
  • Cut grilled tomatoes into 3/4-inch pieces. Cut bread into 1/2-inch pieces. Combine tomatoes, bread and onion in large bowl. Toss to blend. Let stand until bread absorbs most of tomato juices, about 30 minutes. Add vinaigrette and cilantro and toss to blend. Season salad to taste with salt and pepper.

ROASTED TOMATO SALAD

Roasted Tomato Salad image

A starter or side dish, but I could eat these as a main course with some good bread. I have been making these for years now but mainly in the summer months. Its a Delia Smith recipe. I probably use more garlic. If you made these a few times you will find you don't have to refer to the recipe anymore, just get your roasting tin full of the tomatoes and add the seasonings. The dressing is easy to remember too. This is a top summer dish. Can be made in advance.

Provided by PetsRus

Categories     Lunch/Snacks

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 9

12 large nice sweet tomatoes
12 leaves basil
2 cloves garlic, finely chopped
2 tablespoons olive oil
salt & freshly ground black pepper
2 tablespoons olive oil
2 tablespoons balsamic vinegar
more fresh basil leaf
black olives, both to personal taste

Steps:

  • Preheat the oven to 400 degrees F.
  • Skin the tomatoes, cut a cross at the bottom, pour boiling water over them, leave for up to a minute, drain and slip off their skins.
  • Cut them in half and place them, cut side up, in an oiled, approx 16x12 inches, roasting tin.
  • Season with salt and pepper, sprinkle evenly over them the garlic and the olive oil.
  • Tear the basil leaves in half and put them on the tomatoes, flipping them over so they get some oil.

  • To serve, transfer them to induvidual or a large serving plate (with their juices) whisk together the oil and the vinegar, drizzle over the tomatoes.

Oven-Dried-Tomato-And-Bread Salad image

Provided by Molly O'Neill

Categories     salads and dressings

Time 6h

Yield 10 servings

Number Of Ingredients 8

10 tablespoons olive oil
36 plum tomatoes, cored and halved lengthwise
3 cloves garlic, peeled
12 cups bread cubes (1 1/2-inch size), made from rustic Italian bread
3 tablespoons balsamic vinegar
3 teaspoons kosher salt, plus more to taste
Freshly ground pepper to taste
1 1/2 cups chopped fresh basil

Steps:

  • Preheat the oven to 200 degrees. Using 1 tablespoon of olive oil, lightly coat the skin side of each tomato half with oil. Place skin side down on a large baking sheet. Bake until the tomatoes are about 1/4 of their original size, about 4 to 6 hours; they should remain soft and juicy. Let cool, halve crosswise and set aside.
  • Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium heat. Add the garlic and stir for 30 seconds. Remove the garlic and set aside. Add 2 cups of the bread and turn the pieces until well toasted on all sides. Place in a bowl and add 2 more cups of bread to the skillet and toast. Repeat until all bread is toasted, adding 1 tablespoon of oil after every other batch, flavoring it with the garlic each time as above. Set aside.
  • Whisk together vinegar and remaining oil. Season with 1 1/2 teaspoons of salt and pepper to taste. Just before serving, toss tomatoes with bread. Add the dressing and coat well. Toss with the remaining salt, pepper and basil.

TOMATO, CELERY, AND TOASTED BREAD SALAD

Tomato, Celery, and Toasted Bread Salad image

Soaking the onion takes away its bite and pulls its sweetness to the forefront. Recipe adapted from A Bird in the Oven by Mindy Fox (Kyle Books; 2010).

Provided by Martha Stewart

Categories     Bread Recipes

Number Of Ingredients 13

1 small red onion, very thinly sliced
5 ounces rustic bread, torn into 3/4-inch pieces (about 4 cups)
2 pints (10 ounces each) grape or cherry tomatoes, halved
Fine salt
1 small garlic clove
1/2 cup extra-virgin olive oil
2 tablespoons red-wine vinegar
1/2 English cucumber, halved lengthwise and thinly sliced
2 celery stalks, thinly sliced crosswise
4 radishes, thinly sliced
1 cup fresh basil leaves (from 1 bunch)
1/2 cup fresh parsley leaves
2 tablespoons salt-packed capers, rinsed, soaked in cold water, rinsed again, and minced

Steps:

  • Preheat oven to 450 degrees. In a small bowl, cover onion with cold water. Swish water around, rubbing onion slices with your hand. Drain and repeat 2 or 3 times, letting slices soak and changing water every 10 minutes. Drain onion; pat dry. Arrange bread in a single layer on a rimmed baking sheet. Bake until edges are crisp and golden, 6 minutes. Let cool completely on sheet on a wire rack; transfer to a large bowl. Add tomatoes and 1/2 teaspoon salt; let sit 10 minutes.
  • Meanwhile, finely chop garlic with a generous pinch of salt. Drag the blade of a large knife at an angle across mixture until a paste forms. Transfer to a small bowl and whisk in oil and vinegar. To tomato mixture, add onion, cucumber, celery, radishes, basil, parsley, capers, and dressing; toss to combine. To serve, season with salt and pepper and toss.

ROASTED TOMATO SALAD

Roasted Tomato Salad image

Roasting tomatoes helps to concentrate their flavour, while the addition of balsamic vinegar enhances their sweetness. This salad is great for summer when there is an abundance of tomatoes, but it can be made at any time of year. Just select the best fresh tomatoes available. Serve warm with a green salad and crusty bread, to mop up the juices. It can also be served as an accompaniment to any meal. Variations: Serve with sliced mozzarella cheese or a barbecued steak. Purée this salad in a blender to make a sauce to toss into pasta. Cover and store in the fridge for 3-4 days or freeze for up to 1 month.
