1 clove garlic, peeled
1 tablespoon lemon juice
½ teaspoon Dijon mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
¾ cup olive oil

Steps:

  • Combine egg, garlic, lemon juice, Dijon mustard, salt, and pepper in a bowl; whisk with a fork until well combined. Using a hand immersion blender, slowly add olive oil in a small stream and blend until creamy.

This stuff is the best! I make it about a dozen times a year. Better than any store bought garlic mayo I ever tasted. Takes tuna salad to a whole new level.

1 garlic clove
1/2 cup mayonnaise
olive oil, salt and pepper

Steps:

  • Slice the head off the the top of a garlic clove, about a half inch from the top.
  • Drizzle olive oil and, salt and pepper over the top.
  • Wrap loosely in foil like a pouch so it has room to steam/roast, 400F for 45 minutes.
  • Wrap the bottom in the leftover foil and squeeze out the roasted garlic, be careful as it is extremely hot. By the time you mash it up, it will lose a lot of it's heat.
  • Squash, smash and mince the garlic up with a knife, I make it a paste, lightly salt the garlic and whisk with 1/2 cup of your favorite mayo. Done.
  • *Will last for 2-3 weeks refrigerated, mine always runs out in about a week ;-).

12 garlic cloves
1 tablespoon vegetable oil
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1 cup mayonnaise
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
salt and pepper, to taste

Steps:

  • Place garlic and oil in small baking dish; stir well.
  • Bake at 300F for 30 minutes or until garlic is soft and golden.
  • Cool to room temperature.
  • Place garlic mixture, lemon juice, and Worcestershire sauce in container of blender.Process until smooth.
  • Add mayonnaise and remaining ingredients, process until smooth.

I have had this roasted garlic mayonnaise at a local restaurant and loved it. It took me four times to perfect it and get it right but here it is. This is great with a grilled artichoke.

1 large head garlic
2 tablespoons olive oil, or as needed
salt and ground black pepper to taste
2 egg yolks
1 clove garlic, minced
¼ cup water
1 small lemon, juiced
¼ teaspoon salt
¼ teaspoon ground black pepper
1 pinch ground cayenne pepper
1 cup extra-virgin olive oil, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut just below the tip side of the head of garlic, exposing all of the cloves, but keeping the head intact. Place the head of garlic in the middle of a sheet of aluminum foil. Pour olive oil liberally over the garlic and season with salt and pepper. Cover completely and wrap with aluminum foil, making a cup of sorts.
  • Bake in the preheated oven on the top rack, until golden brown and softened, about 45 minutes. Let cool for 10 minutes.
  • Squeeze the pulp out of the garlic into a glass mixing bowl. Add egg yolks, minced garlic, water, lemon juice, salt, black pepper, and cayenne pepper. Whisk the mixture until as smooth as possible, about 5 minutes.
  • Add olive oil in a continuous stream, whisking the entire time, until emulsified and mixture has a thickened consistency like mayonnaise.

Use in place of normal mayo if you want that extra zing on your burger. This is VERY flavorful and stands up well with any sandwich, really. You can substitute from-the-jar roasted chipotle peppers.

2 fresh whole jalapenos
1 garlic clove
1 teaspoon salt
1 cup mayonnaise (the real deal, no Miracle Whip)

Steps:

  • Roast the jalapeños until skin turns black all around.
  • Place jalapeños in a bag and let steam for 10 minutes, or until cool to the touch.
  • Under cold water, peel the skin from the jalapeños and remove the stems.
  • Split the jalapeños with a paring knife and scrape out the seeds and pith.
  • Set aside.
  • Using a mortar or food processor, crush garlic until it forms into a paste.
  • Add jalapeños and grind/process again until liquefied.
  • Add mayo and salt and mix a final time.
  • Enjoy on burgers or sandwiches or get creative!
  • I've added 2 tsp of sugar to this on occasion to give it an extra dimension of flavor. Your choice!

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a rimmed baking sheet with foil.

2 large garlic gloves
1/2 cup diced drained roasted red pepper from jar
1/2 teaspoon red wine vinegar
1/4 teaspoon cayenne pepper
1/2 cup mayonnaise
Assorted vegetables (such as carrot sticks, yellow bell pepper strips, cherry tomatoes and boiled baby potatoes)

Steps:

  • With processor running, drop garlic through feed tube and mince. Scrape down sides of bowl. Add roasted pepper, vinegar and cayenne and process until mixture is almost a smooth purée. Add 1/4 cup mayonnaise and process using on/off turns just until combined. Transfer sauce to a small bowl; mix in remaining 1/4 cup mayonnaise. Season to taste with salt and pepper. Cover and refrigerate at 30 minutes. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Place dip in center of platter. Arrange vegetables around dip and serve.

This comes from The Cuisine of California cookbook and was given to me by --Sheri-- in the last cookbook swap. This is great to kick up any kind of sandwich. I've also used it on a shrimp and avocado salad. It may be kept up to 5 days in refrigerator.

1/2 fresh pimiento (I used about a third of a cup of the roasted red bell peppers in the jar not packed in oil and dried) or 1/2 red bell pepper, seeded and coarsely chopped (I used about a third of a cup of the roasted red bell peppers in the jar not packed in oil and dried)
4 medium garlic cloves (certainly can use more)
3 egg yolks
1 cup olive oil
1 teaspoon kosher salt
1/4 teaspoon finely ground black pepper
1 pinch cayenne pepper (optional but highly recommended)

Steps:

  • Immerse pimiento or red pepper in a pan of boiling water and boil 2 minutes. (Skip this step if used the roasted red peppers in a jar).
  • Remove from water with a slotted spoon.
  • Reserve.
  • While motor is running, add garlic cloves to a food processor fitted with the steel blade.
  • Process until pureed.
  • Add pimiento or red pepper and process until blended.
  • Add egg yolks and blend.
  • With blades turning, slowly pour in olive oil in a fine steady stream until sauce is thick and smooth and all oil is added.
  • Add salt, pepper and cayenne.
  • Taste for seasoning.
  • Refrigerate in a tightly covered container until ready to use.
  • Serve cold.

Smoky Roasted Chickpeas With Lemon-Garlic Mayonnaise image

This recipe is inspired by the popular Spanish tapa patatas bravas, or papas bravas, crispy potatoes that are typically served with a paprika-stained sauce or a garlic aioli. Here, chickpeas crisped in the oven instead of the fryer are seasoned with smoked paprika and ground cayenne, then swaddled in a garlicky mayonnaise cut with lemon. Eat half a batch of these chickpeas for a great dinner, or eat them over lemon-dressed lettuces or parsley, steamed greens, pasta, toast or a fried egg. You can also roast another vegetable with the chickpeas, like cauliflower, broccoli, potatoes or carrots for a complete one-pan meal.
