1 cup balsamic vinegar
1 cup pitted green and black olives, halved
1/4 cup chopped fresh parsley leaves
3 anchovy fillets, drained and chopped
2 tablespoons capers, rinsed and drained
1 garlic clove, thinly sliced
8 fresh basil leaves, shredded
1/2 teaspoon freshly ground black pepper
6 tablespoons extra-virgin olive oil
1 pound vine-ripened tomatoes (about 3 tomatoes)

Steps:

  • Cook the balsamic vinegar in a small saucepan over low heat until thick, syrupy, and measuring 1/4 cup, about 20 minutes. Set aside to cool.
  • Combine the olives, parsley, anchovies, capers, garlic, basil, pepper, and olive oil in a small bowl and toss to combine.
  • To serve, slice the tomatoes into 1/4-inch thick rounds and place, slightly overlapping, on a serving plate. Spoon the olive and parsley mixture over the tomatoes. Drizzle the reduced balsamic over the salad and serve.

2 (3 ounce) packages chicken-flavored ramen noodles, broken into pieces, seasoning packets reserved
½ cup raw sunflower seeds
½ cup slivered almonds
1 (16 ounce) package coleslaw mix
3 green onions, chopped
½ cup olive oil
3 tablespoons white vinegar
1 tablespoon white sugar
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread ramen noodles, sunflower seeds, and almonds onto a baking sheet.
  • Bake noodles, sunflower seeds, and almonds in the preheated oven until fragrant and toasted, 10 to 15 minutes. Cool to room temperature.
  • Combine coleslaw mix and green onions in a large bowl. Pour cooled noodle mixture over the top.
  • Whisk olive oil, reserved ramen seasoning packets, vinegar, sugar, and black pepper together in a bowl until dressing is smooth. Pour dressing over coleslaw and toss to coat.

The reason this salad holds up so well at room temperature is because you dress it twice. It absorbs the first round of dressing completely, the second addition keeps it glossy, and a fistful of walnuts and breadcrumbs means there's always something to bite into.

Number Of Ingredients 12

1 cup raw walnuts
3 oz. country-style bread, crust removed, cut into 1" pieces (about 1 1/2 cups)
4 whole roasted red peppers from a jar
Zest and juice of 1 lemon
2 garlic cloves
1 tsp. crushed red pepper flakes, divided
1/2 cup plus 2 Tbsp. extra-virgin olive oil
Kosher salt
1 lb. fusilli giganti (large spiral-shaped pasta) or medium shell pasta
1 lb. mixed ripe tomatoes, cut into bite-size pieces (about 3 cups)
4 oz. Parmesan, finely chopped
1 cup basil leaves, torn if large

Steps:

  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing halfway through, until golden brown, 10-12 minutes. Let cool.
  • Meanwhile, process bread in long pulses in a food processor until coarse crumbs form (you should have about 1 cup). Transfer to a small bowl.
  • Purée roasted red peppers, lemon juice, garlic, 1/2 tsp. red pepper flakes, and about one-quarter of the cooled walnuts in food processor (no need to clean) until smooth. With the motor running, very gradually stream in 1/2 cup oil. Process until thick; season romesco dressing generously with salt.
  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain and rinse under cold water (this stops cooking and removes surface starch so the pasta will be less gummy). Shake off excess water and transfer to a large bowl. Toss pasta with half of the romesco to coat; set aside. Finely chop remaining walnuts; set aside.
  • Heat remaining 2 Tbsp. oil in a medium saucepan over medium and cook breadcrumbs, lemon zest, and remaining ½ tsp. red pepper flakes, stirring often, until breadcrumbs are golden, 5-7 minutes. Remove from heat.
  • Toss reserved pasta with remaining dressing, then fold in tomatoes, Parmesan, and reserved walnuts just to distribute. Sprinkle breadcrumb mixture over pasta and top with basil.

1 red onion, peeled and minced
1 bunch basil, rinsed and torn
2 teaspoons salt, plus more to taste
Freshly ground pepper to taste
1/2 pound rigatoni

Steps:

  • In a large bowl, toss together the tomatoes, onion, basil, 2 teaspoons salt and pepper. Let stand at least 2 hours.
  • Bring a large pot of lightly salted water to boil. Add the rigatoni and cook until al dente, about 10 minutes. Drain. Toss the warm pasta into the salad, season with additional salt and pepper to taste and serve.

This is a lovely cold pasta salad I found in Redbook magazine. I use the ditalini pasta which works perfectly and I like to chill it before serving. The fresh garlic give a wonderful zing.

3 medium size ripe tomatoes (1 3/4 pounds)
1/4 cup extra virgin olive oil
1 garlic clove, finely chopped (1 tsp)
20 basil leaves, thinly sliced (1/2 cup)
2 tablespoons salt
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 lb tubetti (tiny tubes) or 1 lb ditalini (tiny tubes)
1 1/2 cups fresh mozzarella cheese, cut into small cubes (8 oz)

Steps:

  • Cut the tomatoes in half, remove cores. Squeeze out the seeds and chop. Place in a medium bowl and add the oil, garlic, basil. 1/2 teaspoon of the salt, and the pepper: mix well. (This sauce can be made ahead and left at room temperature for up to 2 hours).
  • In a large pot, heat 4 quarts of water to boiling. Add remaining 2 tablespoons salt, then the pasta and cook according to package directions, until the pasta is al dente (tender yet still firm to the bite). Drain the pasta and toss with the sauce. Stir in the mozzarella and toss again.
  • Serve.

1 lb tri-colored pasta or 1 lb pasta shells
4 plum tomatoes, diced
12 pitted black olives, sliced
1 medium red onion, chopped
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
2 garlic cloves, blanched and minced
4 tablespoons extra virgin olive oil
4 teaspoons balsamic vinegar
1 tablespoon fresh lemon juice
4 ounces mozzarella cheese, chopped
salt (optional)
fresh ground black pepper

Steps:

  • Cook the pasta, drain well, and immediately rinse in cold water. Shake off the excess water and chill.
  • In a large mixing bowling, add the tomatoes, olives, onion, basil, thyme, garlic, olive oil, vinegar, lemon juice, and chilled pasta and then top with the cheese.
  • Toss well, adding salt and pepper. Refrigerate for at least 2 hours before serving.
