Categories     Appetizers

Time 30m

Number Of Ingredients 13

1 ounce pork fat ((30g, optional))
½ pound shrimp ((225g, peeled and deveined))
¼ cup chopped cilantro
2 scallions ((finely chopped))
1 teaspoon ginger ((grated))
1/4 teaspoon sesame oil
½ teaspoon sugar
½ teaspoon salt
2 teaspoons cornstarch
1 egg white
4 slices white sandwich bread
2 tablespoons toasted sesame seeds
Vegetable oil (for frying)

Steps:

  • If you're going the traditional route and using pork fat, add the pork fat to a food processor and process until smooth. Then add the shrimp, cilantro, scallions, ginger, sesame oil, sugar, salt, cornstarch and egg white. Process until smooth.
  • Divide the mixture among 4 slices of sandwich bread, spreading it evenly out to the ends. Sprinkle with sesame seeds, and lightly press the sesame seeds into the shrimp mixture. Cut each slice into quarters on a diagonal to create little triangles.
  • In a large nonstick or cast iron skillet, heat ⅛ inch of oil until shimmering. Fry the triangles in the skillet, shrimp-side down first, until golden--about 2-3 minutes.
  • Use a spatula to carefully turn them over, and fry the other side for about 1 minute. Transfer to paper towels to drain. Serve immediately!

DADDY'S SHRIMP TOAST

Daddy's Shrimp Toast image

My father made this for me while experimenting in the kitchen. It was absolutely the most delicious way to use shrimp. I think I've gotten pretty good at making this dish but it still doesn't compare to my father's! Don't be fooled by the ingredients. Most are optional and this is easy to make! Great for parties as appetizers or a main dish.

1 lb medium shrimp in shell (31 to 35 per lb), peeled and deveined
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup minced onion
2 1/2 teaspoons fresh lemon juice
1/8 teaspoon cayenne
For toast points
10 slices firm white sandwich bread, crusts discarded and each slice cut to form 4 triangles
3 tablespoons unsalted butter, melted
Garnish: whole cooked shrimp

  • Cook onion in 1 tablespoon butter in skillet over moderately low heat, stirring occasionally, until softened, 2 to 3 minutes. Scrape onions into processor and cool mixture to room temperature, about 15 minutes. Add lemon juice, cayenne, and remaining 9 tablespoons butter and pulse until shrimp are finely chopped. Pack shrimp butter into a 2-cup ramekin or serving bowl and chill, its surface covered with plastic wrap, at least 6 hours (to allow flavors to develop). Bring to room temperature 45 minutes before serving.
  • Make toast points:
  • Put oven rack in upper third of oven and preheat oven to 400°F.
  • Brush 1 side of bread triangles lightly with melted butter and toast, buttered sides up, in a large shallow baking pan until golden around edges, 6 to 8 minutes. Transfer to a rack to cool. Serve toast points with shrimp butter.

SESAME SHRIMP TOASTS

Sesame Shrimp Toasts image

Enjoy a Chinese dim sum favorite with your party guests. The shrimp paste is easy to make, and the deep frying doesn't require a big time commitment. Look for very thinly sliced white bread in the grocery store-if you can't find it, regular sliced bread can be thinned out with a quick pass of a rolling pin!

Provided by Food Network Kitchen

Categories     appetizer

Time 1h15m

Yield 40 toasts (12 to 15 servings)

Number Of Ingredients 17

2 tablespoons lemon juice
Vegetable oil, for frying
1 large egg white
1-inch piece ginger, roughly chopped
1 small clove garlic, roughly chopped
3 tablespoons soy sauce
1 tablespoon plus 1 teaspoon toasted sesame oil
1 tablespoon dry sherry
Kosher salt
1 1/2 teaspoons light brown sugar
Freshly ground black pepper
3/4 pound peeled and deveined large shrimp, tails removed
3 scallions, thinly sliced
1 small inner stalk celery, very finely chopped
6 whole water chestnuts, very finely chopped
2 teaspoons sesame seeds, plus more for garnish
10 slices very thinly sliced white sandwich bread

Steps:

  • Make the shrimp paste: Process the egg white, ginger, garlic, 1 tablespoon of the soy sauce, 1 tablespoon of the sesame oil, the sherry, 3/4 teaspoon salt, 1/2 teaspoon of the brown sugar and several grinds of pepper in a food processor until all the ginger and garlic are pureed. Add the shrimp, and pulse until a thick paste forms. Transfer to a medium bowl, and fold in 2/3 of the scallions, the celery, water chestnuts and sesame seeds. (The shrimp paste can be refrigerated for up to 1 day.)
  • Trim the crusts from the bread, and evenly divide the shrimp paste among the slices (about 2 heaping tablespoons each). Spread out into an even layer that completely covers the bread.
  • Make the dipping sauce: Whisk together the remaining 2 tablespoons soy sauce, 1 teaspoon sesame oil and 1 teaspoon brown sugar, the lemon juice and a large pinch of salt in a small bowl.
  • Fry the toasts: Line a baking sheet with paper towels. Fill a large, wide skillet with straight sides, with about 1 inch of vegetable oil. Attach a deep-fry thermometer to the skillet, and bring the oil to 375 degrees F over medium heat. Being careful of the hot oil splashing, put 5 to 6 shrimp toasts in the oil shrimp-side down and fry until the shrimp and the edges of the bread are golden brown, 2 to 3 minutes. Flip the pieces, and continue to fry until the bottoms are golden brown, about 1 minute more. (Adjust the heat as needed to maintain the temperature.) Transfer the shrimp toasts to the prepared baking sheet, and dab the tops with a paper towel to absorb some of the excess oil. Sprinkle the toasts all over with the remaining scallions and some sesame seeds and salt. Cut each toast into 4 triangles, and serve hot with the dipping sauce on the side.

NORI-SESAME SHRIMP TOASTS

Nori-Sesame Shrimp Toasts image

Provided by Food Network

Categories     appetizer

Time 50m

Yield 12 toasts

Number Of Ingredients 14

6 ounces uncooked shrimp, shelled and deveined
1 large egg white
2 tablespoons chopped green onion
2 teaspoons cornstarch
1 teaspoon Chinese rice wine or dry sherry
1 teaspoon minced ginger
1/2 teaspoon salt
1/8 teaspoon sesame oil
1/8 teaspoon ground white pepper
3 slices day-old white sandwich bread
1 large egg, lightly beaten
3 sheets Japanese seaweed (Nori)
1 tablespoon black sesame seeds
Vegetable oil for deep-frying

Steps:

  • Make the shrimp paste: Combine the shrimp, egg white, green onion, cornstarch, rice wine, ginger, salt, sesame oil and pepper in the workbowl of a food processor. Process until the mixture is smooth, stopping once or twice to scrape down the sides.
  • Trim the crusts from the bread. Brush 1 side of 1 of the bread slices with the beaten egg and lightly press the nori sheet over the egg. Place the bread on a cutting board, nori side down, and trim any of the nori that extends past the edge of the bread. Spread about 1/3 of the shrimp paste over the bare side of the bread, mounding it slightly in the center. Sprinkle 1/3 of the black sesame seeds over the shrimp paste. With a chef's knife, cut each slice into 4 triangles. Repeat with the remaining ingredients.
  • Pour enough oil into a wok or a high-sided frying pan to come to a depth of 2 inches and heat over medium heat to 350 degrees F.
  • Slide 3 or 4 toasts, shrimp side down, into the oil. Cook for about 1 minute, turn over and continue cooking until edges are golden brown, about 1 minute longer. Scoop the toasts from the oil with a slotted spoon and drain on paper towels. Repeat with remaining shrimp toasts. Serve warm.

CREAMY GARLIC SHRIMP TOAST

Creamy Garlic Shrimp Toast image

Sweet, butterflied shrimp in a garlicky cream sauce with a smoky paprika flavor are served over thick slices of buttery, pan-toasted French bread in this simple recipe for two! This sauce would be good over pasta, rice, or potatoes, but I think enjoying it like this is the best way to go.

Provided by Chef John

Categories     Shrimp Recipes

Time 30m

Yield 2

Number Of Ingredients 11

12 ounces large shrimp, peeled and deveined
1 pinch cayenne pepper
¼ teaspoon smoked paprika
3 cloves garlic, crushed, or more to taste
2 thick slices French bread
6 tablespoons clarified butter, melted, divided
2 teaspoons fresh lemon zest
2 tablespoons fresh lemon juice
½ cup heavy cream
2 tablespoons minced fresh Italian parsley
1 pinch salt, or to taste

Steps:

  • Butterfly shrimp and place in a mixing bowl. Add cayenne, paprika, and garlic and stir until shrimp are evenly coated. Refrigerate until needed.
  • Trim most of the crusts off of the bread.
  • Add 4 tablespoons melted butter to a skillet over medium heat. Add both slices of bread and toast until golden brown, 3 to 4 minutes per side. Remove bread to a plate and wipe out any crumbs.
  • Add remaining melted butter to the skillet and increase heat to high. When the pan is very hot and you see the first wisp of smoke, add shrimp and use tongs to spread into an even layer. Sear, without stirring or tossing, for 1 minute.
  • Sprinkle with lemon zest and add lemon juice and cream. Stir with a spoon to scrape any browned bits off the bottom. Let cream boil and reduce for 1 ½ to 2 minutes as the shrimp finishes cooking and the sauce thickens up.
  • Turn off the heat and stir in parsley. Taste and add salt if needed.
  • Divide shrimp and sauce evenly over each piece of toasted bread.

SHRIMP TOAST

Shrimp Toast image

Shrimp toast is one of the tastiest bites at the dim sum table. I didn't actually like shrimp toast growing up, but when I finally got around to trying it, I couldn't believe how much flavor was packed into one tiny unassuming square. These are crunchy on the outside, soft in the middle and really dangerous because they are so so addictive.

Provided by Molly Yeh

Time 25m

Yield 12 servings

Number Of Ingredients 12

8 ounces raw shrimp, peeled, deveined and tails removed (the size does not really matter here)
1 large egg white
1 teaspoon sriracha, plus more for serving
1/2 teaspoon kosher salt
1/2 teaspoon toasted sesame oil
5 turns black pepper
2 cloves garlic, minced
2 scallions, trimmed and thinly sliced
1 stalk lemongrass, end trimmed, dry outer leaves discarded, bottom few inches of white part bruised with the back of a knife and finely minced
3 slices potato bread (or white bread), crusts removed
2 to 3 quarts neutral oil (vegetable or peanut are fine)
1 teaspoon sesame seeds

Steps:

  • Put the shrimp and egg white in a food processor and pulse until pasty but still a little chunky. Add the sriracha, salt, sesame oil, black pepper, garlic, scallions and lemongrass and pulse until just combined.
  • Divide the mixture among the bread slices and spread in an even layer to the edge. At this point, you can freeze the toasts while you heat the oil (although freezing is not totally necessary, it makes for cleaner cuts and easier handling).
  • Bring 1 1/2 inches of oil to 350 degrees F in a heavy-bottomed pot.
  • Cut each bread slice into 4 squares and sprinkle with the sesame seeds. Carefully place each piece shrimp-side down into the oil. Fry until golden, 2 to 3 minutes. Remove onto a rack or paper towel. Serve immediately drizzled with sriracha.

SARASOTA'S SIMPLE SHRIMP SALAD SANDWICH

Sarasota's Simple Shrimp Salad Sandwich image

Basic, quick and easy and the perfect light summer time sandwich. Now fresh shrimp is great, however, I used a previously frozen shrimp, but uncooked and I loved to serve this on a nice whole wheat sandwich bun which to me add lots of flavor. Top with a fresh tomato slice and lettuce. I prefer to use a butter, Bibb, or Boston type of lettuce.

Provided by SarasotaCook

Categories     Lunch/Snacks

Time 25m

Yield 6 sandwiches, 6 serving(s)

Number Of Ingredients 15

1 lb shrimp, I used extra large
1 teaspoon Old Bay Seasoning
2 medium celery ribs, cut lengthwise and then diced fine (more or less to taste, I happen to love celery in mine)
1 small onion, fine diced
1/4 cup mayonnaise (I really prefer Hellmanns or Dukes not Miracle Whip)
2 scallions, white and green parts fine chopped (optional)
1/2 lemon, fresh squeezed (about 1 teaspoon is all you need)
1/2 teaspoon lemon zest
1 1/2 teaspoons fresh parsley, fine chopped
1/4-1/2 teaspoon Old Bay Seasoning (to taste)
salt
pepper
6 whole wheat sandwich buns
6 tomatoes, slices
6 lettuce leaves

Steps:

  • Shrimp -- Bring a medium pot of water and bay seasoning to a medium boil. Heat should be medium / high. Add the shrimp and bring back up to a boil. Remove from the heat and let the shrimp to continue to cook 1-2 minutes until they just turn pink and begin to curl. You don't want to overcook them. Remove from the water and set on a baking sheet or pan and spread out and let to cool. Once slightly cooled, peel and rough chop.
  • Salad -- In a medium size bowl, add the shrimp, and squeeze the lemon over the top. Add the onion, celery, parsley, mayo and mix well. If you are adding in the scallions, add them at this time as well. Season with a pinch of the Old Bay, start slow, you can always add more; then salt and pepper to taste. Mix well to combine. Continue to season with any additional salt, pepper or Old Bay until you get the taste you want.
  • Sandwich -- I like to toast my sandwich rolls, but it is not necessary. I just like the added flavor. No butter, No oil, just toasted. Then top with the shrimp salad, lettuce and tomato. I also like to lightly salt and pepper the tomato slice, finish with the top sandwich roll.
  • Serve -- Fries, chips, a pickle or a fresh fruit salad. Just ENJOY!

SARASOTA'S SIMPLE PESTO SHRIMP CALZONES

Sarasota's Simple Pesto Shrimp Calzones image

For a quick week night dinner try these shrimp calzones. Gooey cheese, savory pesto, shrimp, and served with a sweet marinara sauce if you want. Add a quick tossed salad, and save some room for some fresh summer fruit for dessert. These can be made on the grill or a pizza stone, but I make them right in the oven to make this as easy as possible. And to make things even easier ... take advantage of shrimp you can buy steamed fresh right at the seafood counter; or even frozen shrimp will work, but not quite as well. Store bought pesto, marinara sauce, and pizza dough and you have dinner in 30 minutes. Now, please make your own crust, pesto, and steam your own shrimp if time allows, but this is just one of those quick dinners I like to have on hand when you need it - or just to tired to cook, but it is so much better and cheaper than take out. You can even use one of those "bagged" lettuce to make a great quick side salad and add your favorite toppings. And remember ... these are my favorite ingredients, but please feel free to add olives, peppers, mushrooms, or other cheeses - use your imagination!

Provided by SarasotaCook

Categories     < 60 Mins

Time 35m

Yield 4 Calzones, 4 serving(s)

Number Of Ingredients 14

2 (8 ounce) cans pillsbury pizza dough (I like to have a little leftover and make my calzones a bit bigger. Besides, any leftover pizza doug)
1 lb shrimp, large, tails off and rough chopped
1 small onion, fine diced
2 teaspoons garlic, minced
1/4 cup roasted red pepper, chopped (I just used a jar)
1 (3 ounce) jar basil pesto (or any store bought brand and type)
1 cup Fontina cheese, shredded (you could use all mozzarella, but I like the mix of fontina with mozzarella)
1 cup mozzarella cheese, shredded
4 tablespoons parmesan cheese, grated fine
1 tablespoon butter (to saute the shrimp, onion and garlic)
1 tablespoon olive oil (to brush the pizza crust)
salt
pepper
2 cups marinara sauce (your favorite brand)

Steps:

  • Shrimp -- In a medium size saute pan, add the butter and bring to medium heat. Add in the onion and garlic and cook 2-3 minutes until tender but not soft. NOTE: At this point if you decide to add any other ingredients, such as peppers, mushrooms or olives, you can add them too. Saute 2-3 minutes until tender. Then add in the shrimp (seasoned with salt and pepper) and cook 1-2 minutes, as they will continue to cook in the calzone - I actually under cook the shrimp so they don't get tough. Immediately remove from the heat and transfer to a plate to cool.
  • Filling -- Once the shrimp have cooled a couple of minutes, add to a medium size bowl along with the pesto, fontina, and mozzarella and lightly toss to combine.
  • Pizza Dough -- Cut the dough into 4 equal pieces and then roll into a 8-9" circles. I like to bake mine on either a pizza stone, or either a baking sheet lined with parchment paper and sprayed with a non-stick spray. Makes for an easy clean up.
  • Lay your 4 pizza circles on the baking sheet or whatever you choose to use, and then add the shrimp filling on the crust, a little to the right or left of center. Then fold over the crust to make a half moon and to cover all the filling.
  • Wet the edge of the pizza crust with a little water. I just use my finger and then press the top and bottom together. Now, you can use your fork or you can use your finger to press the edges together. I just squeeze them and make a little "Pie Crust" like technique. It doesn't have to be fancy. Just as long as the top and bottom is pressed together and sealed well.
  • Brush the calzones with olive oil and sprinkle the parmesan cheese over the top. Make 3-4 thin cuts with a knife in the calzone so the steam can escape and the calzone can puff up and get golden brown.
  • Bake -- Oven, middle shelf to 400 degrees. Bake for 25-35 minutes until golden brown. Make sure to let them cool about 5 minutes before serving.
  • Marinara -- Simply heat some marinara in the microwave or stove top and serve with the calzones.
  • Serve -- A nice crisp salad is all you need. Enjoy!

SARASOTA'S SEAFOOD NEWBERG OVER PARSLEY TOAST POINTS

Sarasota's Seafood Newberg over Parsley Toast Points image

This is traditional Lobster Newberg with my twist. Living in Florida we have great seafood year round basically. And I also love fresh citrus. So I tried to combine both. By the way ... Mom I love you, but those little toast points and puff pastry shells, I just didn't like. I like a nice hearty thick slice of Italian Bread toasted with parsley butter - and then you can cut them in those cute little points. Serve with a cup of creamy roasted tomato soup to start and a side of crisp chilled asparagus salad. Quite Note: I like to use shrimp, scallops and lobster, but you can substitute crab for lobster. To me, the lobster and crab are too similar, so I use one or the other. Also, you can use canned, but for this dish, but ... I highly recommend fresh, it will be well worth it.

6 tablespoons flour
3 cups half-and-half cream (I often use 1/2 heavy cream, 1/2 half and half)
2 egg yolks (large or ex large eggs)
1 1/2 teaspoons salt
1 pinch cayenne pepper
1/4 teaspoon nutmeg
1 Italian bread, cut in thick slices (this recipe serves 8, so 1-2 slices per person - 16 slices)
1/2 cup butter
2 tablespoons fresh parsley
paprika
orange slice (slice up the remaining orange for a garnish)
4 teaspoons fresh chives, chopped

Steps:

  • Seafood -- Marinade the seafood in the sherry wine, fresh orange juice, and pepper. You want to marinade only 15-20 minutes is all. Up to 30 minutes.
  • Sauce -- In a medium pot slowly melt the butter over medium heat, Then add in the flour, salt, cayenne, nutmeg and mix well. Keep the heat on medium and slowly add the cream, whisking often so you don't get any lumps. Cook until slightly thickened.
  • Seafood -- The seafood is all chopped, so it will not take long at all to cook. Add in the seafood, including the marinade (sherry, orange and pepper) and cook 4-5 minutes until the seafood is done. It won't take long as the seafood is all rough chopped.
  • Eggs and Finishing -- In a small bowl, make sure the eggs are well beaten. After the seafood is cooked, take a little of the seafood sauce and add to the eggs. This will "temper" the eggs. Basically, it will heat the eggs, so when mixed with the sauce, they will not scramble. Otherwise, if you tried to add all the eggs directly to the sauce you would just end up with scrambled eggs. Once you have tempered the eggs, slowly add the eggs into the seafood sauce and continue to stir on medium heat until thickened.
  • Butter -- Mix the 1/2 cup or stick of butter and parsley together.
  • Bread -- Under the broiler, lay your bread slices (1-2 slices per person) on a baking sheet and lightly toast on the first side. In the broiler it will take just a minute, so don't walk away, and keep an eye on it. Then remove from the oven, flip your bread and toast the other side. Again, just a minute. Remove from the oven and spread with the parsley butter. Cut from corner to corner to make those "little toast points.".
  • Serve -- Plate up those toast points and top with the rich seafood newberg. Top with chives, a pinch of paprika for a little color and a orange wedge.

SARASOTA'S SHRIMP TOAST

Sarasota's Shrimp Toast image

This is a great appetizer, but this is also amazing as a side to a bowl of hearty tomato soup or even or broccoli zucchini soup. Or even try a salad with fresh roasted vegetables. This makes a wonderful side to a great garden dinner. Dinner to me doesn't always have to be meat and potatoes. These are filling and added to a great fresh soup is a wonderful pairing. This is sort of a old classic, but it still really good. Now I DON'T use white bread. I use a nice baguette and fresh ingredients to make it stand out. Also ... this isn't the kind you get in the Chinese or Asian restaurants, however it does have water chestnuts. But to me being baked and golden brown it has a whole different flavor. Give it a try.

Time 35m

Yield 10-12 serving(s)

Number Of Ingredients 13

1 baguette, thin sliced, toasted
1 lb medium cooked shrimp, peeled and tails removed
1/2 cup water chestnut, chopped fine
3 scallions, green and white parts chopped fine
1/2 teaspoon grated ginger
1 large egg, separated
2 tablespoons heavy cream
1 tablespoon vodka
1 teaspoon kosher salt
1 tablespoon fresh parsley, chopped fine
1/2 teaspoon fresh ground black pepper
2 tablespoons melted butter (to brush on the toast)
3 tablespoons water

Steps:

  • Bread -- just brush with melted butter and bake at 375 until golden brown, flip to make sure both sides are golden. Just a few minutes per side is all it takes.
  • Shrimp -- add the shrimp to the food processor but make sure they are not wet. Slightly puree, for just a few seconds and then add the egg white, cream, salt and pepper.
  • Transfer to a bowl and add the water chestnuts, ginger, scallions, salt, pepper and parsley.
  • Time to make the toast -- On the very nicely toasted baguettes, spread a teaspoon or 2 of the shrimp mix on top. Top with the egg yolk mixed with the water, just to give it a nice topping (or a light glaze) as it bakes.
  • Bake at 350F for 10-12 minutes on a lined cookie sheet either with foil or parchment. Just make sure the shrimp topping is heated through.
