2 cups snow peas
1 tablespoon butter
Salt and ground black pepper

Steps:

  • In a medium skillet, saute the snow peas in the butter over medium-low heat until tender-crisp. Season with salt and black pepper, to taste.

1 tablespoon extra-virgin olive oil
Pinch of red-pepper flakes
1 clove garlic, smashed
8 ounces snow peas, trimmed and sliced in half
8 ounces pea shoots, cut into 2-inch lengths
Coarse salt
1/2 lemon

Steps:

  • Heat oil, red-pepper flakes, and garlic in a large skillet over medium-high, stirring constantly, until garlic is golden, about 1 minute. Add snow peas and cook, stirring, until bright green and still crisp, about 1 minute.
  • Add pea shoots in batches along with 1 tablespoon water. Cook, stirring, until just wilted, about 30 seconds. Season with salt, squeeze lemon over top, and serve.

1 tablespoon canola oil
6 large cloves garlic, finely chopped
1/2 cup chicken stock (or water)
1/3 cup oyster sauce
3 cups snow peas, strings removed
4 cups sugar snap peas, strings removed
5 cups pea shoots

Steps:

  • Heat oil in a large, shallow pan over high heat. Cook garlic 30 seconds, stirring to prevent burning. Combine stock and oyster sauce in a bowl; add to pan. Add peas; cook, turning peas constantly, until bright green and crisp, about 2 minutes. Divide among 8 bowls; top each with a handful of pea shoots.

3/4 pound snow peas, trimmed
1 tablespoon vegetable oil

Steps:

  • In a large saucepan of boiling salted water boil snow peas 30 seconds and drain. Refresh snow peas under cold water and drain. Snow peas may be prepared up to this point 8 hours ahead and chilled, covered.
  • In a heavy skillet sauté snow peas in oil over moderately high heat, until heated through and season with salt and pepper.

1 tablespoon butter
2 medium carrots, julienned
1 garlic clove, minced
3 tablespoons honey
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet, saute snow peas in butter for 3 minutes.
  • Add carrots and garlic and continue to saute for 1-2 minutes longer or until veggies are crisp-tender.
  • Add honey, salt and pepper and heat through. Serve immediately.

  • Soak snow vegetables in a large bowl or other container for 1 to 2 hours. Then wash thoroughly (2 to 3 times) to get rid of all the dirt and sand clinging to the leaves and stems. Drain off all the water.
  • Using very high heat, heat oil in your wok until it just starts to smoke a bit. Quickly add the garlic and the veggies, taking care not to burn them by constantly stirring. After a minute, add salt, cracked white pepper, and sesame oil. Stir and mix well.
  • Put the lid on the wok and cook for about 1-2 minutes. Remove lid, stir briefly, and transfer to a dish.
  • Tip: don't open the lid more than once during cooking, as it will cause the vegetables to lose their green color!
