SAUTEED TROUT WITH LEMON CHIVE BUTTER



Sauteed Trout with Lemon Chive Butter image

5 tablespoons unsalted butter, softened and divided
1 teaspoon finely grated lemon zest
1 tablespoon freshly squeezed lemon juice
1 tablespoon finely chopped shallot
3 tablespoons finely chopped fresh chives, divided
Kosher salt and freshly cracked black pepper
4 pieces trout fillet

Steps:

  • Mix 3 tablespoons butter, the lemon zest, juice, shallots and 2 tablespoons chives until well combined. Place the butter onto a small piece of plastic wrap and, using both ends of the plastic wrap, spin it around to make a cylinder. Chill for at least 30 minutes.
  • Using needle nose tweezers, remove all the bones from the trout. Melt the remaining 2 tablespoons butter over moderate heat in a large nonstick skillet. Sprinkle the trout with salt and pepper. Place the fish skin-side down and cook until golden brown, 3 to 4 minutes. Flip and cook for another 3 minutes. Using a sharp paring knife, slide the knife into the thickest part of the fish. If you don't feel any resistance, your fish is done. Transfer the fish to serving plates, top with butter and garnish with the remaining chives.

A tasty, quick dish. Removed head and bones from trout, but otherwise leave whole. I leave the crispy skin, but it can be removed before serving. Serve with a rice pilaf (Recipe #202897 is good) and green veggie.

1/3 cup macadamia nuts, chopped
2 trout, cleaned and boned
3 tablespoons flour
2 teaspoons olive oil
1 shallot, peeled and minced
1/2 cup dry white wine
2 teaspoons unsalted butter
1/4 teaspoon salt
ground pepper
1/4 cup fresh parsley, chopped

Steps:

  • Toast the macadamia nuts in a dry skillet set on medium heat for about 5 minutes. Set aside.
  • Dredge the trout in the flour.
  • In a large nonstick skillet, heat the oil over medium heat. Sauté the trout for 6 minutes; turn and sauté the other side about 8 minutes.
  • Remove the fish from the pan and keep warm.
  • Put the shallots and wine into the hot pan and cook down for about 2 minutes. Stir in the parsley, butter, and nuts. Season with salt and pepper. Pour over the trout and serve.

8 scampi, shelled
Salt and pepper
15 nicoise olives, pitted, plus 6 more pitted olives, quartered
5 capers
4 bunches fresh basil

Steps:

  • Warm a little macadamia nut oil in a non-stick frying pan just enough to cover the bottom.
  • Salt and pepper the scampi. When the oil is heated, saute the scampi quickly and uniformly, 2 to 3 minutes will suffice, just to cook through and until they curl slightly and turn red. The scampi must remain crispy. Set aside.
  • Chop the olives finely with the capers and 3 leaves of the basil. Set aside.
  • In the center of the plate, arrange the olive mixture. Place 2 pieces of scampi, and several small pieces of nicoise olives on top, and garnish with a bouquet of fresh basil.

4 trout, about 1/2 pound each, cleaned weight
2 tablespoons milk
Salt to taste if desired
Freshly ground pepper to taste
4 large mushrooms, about 1/4 pound
2 fresh limes
1/4 cup flour
1/3 cup corn, peanut or vegetable oil
4 tablespoons butter

Steps:

  • Put the trout in a dish and add the milk, salt and pepper. Turn the fish in the milk to coat well. Set aside.
  • Cut the mushrooms into thin slices. There should be about two cups.
  • Peel the limes. Cut the flesh from the white pulpy sections to make wedges. Set aside.
  • Remove the fish from the milk without patting it dry. Dip the fish in the flour to coat on all sides. Shake off the excess.
  • Heat the oil in a skillet large enough to hold the fish in one layer. Add the fish and cook over moderately high heat 2 to 3 minutes, or until golden brown on one side. Turn and cook on the second side, basting often, 8 to 10 minutes.
  • Transfer the fish to a hot serving platter.
  • Meanwhile, heat one tablespoon of the butter in a skillet and add the mushroom slices. Cook, shaking the skillet and stirring, until mushrooms wilt. Cook until the liquid evaporates. Continue cooking until browned, about three minutes in all.
  • Arrange the mushroom slices neatly over the trout. Arrange the lime slices symmetrically between the mushroom slices. Sprinkle any accumulated lime juice over the trout.
  • Heat the remaining three tablespoons butter in a skillet until it melts. Continue cooking until the butter is lightly browned. Pour this over the trout. Sprinkle with parsley and serve.

4 rainbow trout, about 1/2 pound each, butterflied, with bones, heads and tails removed
1/4 cup milk
1/2 cup all-purpose flour for dredging
Salt and freshly ground pepper to taste
2 tablespoons olive or vegetable oil
24 orange sections with membranes removed
2 tablespoons chopped shallots
4 sprigs fresh lemon thyme, leaves only, or 1/2 teaspoon dried thyme
1 tablespoon lemon juice
3 tablespoons lemon-flavored vodka, like Absolut Citron
2 tablespoons soft butter
4 sprigs fresh basil or parsley for garnishing

Steps:

  • Place the trout in a large pan and pour in the milk. Spread the flour over a flat dish and season with salt and pepper. Remove the trout from the milk and dredge them in the flour, shaking to remove excess flour.
  • Heat the oil in a large nonstick skillet or black steel pan over high heat. Add the trout, flat side down, for about 3 minutes, or until lightly browned. Turn and saute for another 2 minutes or until fully cooked. Remove and set aside. Keep warm.
  • Pour off the excess fat from the pan. Add the orange sections, shallots and lemon thyme, and cook briefly, just to warm through. Do not brown the shallots. Stir in the lemon juice, the vodka and the soft butter. Blend well.
  • To serve, place trout, one each, on warm plates, and spoon the sauce over it. Garnish with the basil.

4 trout fillets with skin
1/4 teaspoon cayenne
1/2 cup all-purpose flour
1 1/4 sticks unsalted butter, divided
3/4 cup pecans, chopped
2 tablespoons fresh lemon juice
1/3 cup chopped parsley

Steps:

  • Pat fillets dry and rub flesh sides with cayenne, 1/2 teaspoon salt, and 1/4 teaspoon black pepper (total). Dredge in flour.
  • Heat 1/2 stick butter in a 12-inch heavy skillet over medium heat until foam subsides, then cook trout, skin side down, until skin is golden-brown, about 4 minutes. Turn fish over and cook until just cooked through, 1 to 2 minutes more. Transfer to a plate with a slotted spatula and keep warm, loosely covered with foil.
  • Pour off butter from skillet and wipe clean, then cook pecans with remaining 3/4 stick butter, 1/4 teaspoon salt, and 1/8 teaspoon pepper over medium heat, stirring occasionally, until golden-brown, about 2 minutes. Stir in lemon juice and parsley and spoon over trout.

4 (8-oz) trout fillets such as lake (preferably) or rainbow trout
3 tablespoons olive oil
1 1/4 lb baby spinach, any coarse stems discarded
1/2 stick (1/4 cup) unsalted butter
1/4 cup pine nuts, toasted
Accompaniment: Lemon wedges

Steps:

  • Put cornmeal on a large plate. Lightly pat fish with paper towels and season with salt and pepper, then coat fillet well with cornmeal.
  • Heat 1 tablespoon oil in a large heavy skillet over moderately high heat until hot but not smoking, then sauté one third of spinach, stirring constantly, until slightly wilted but still bright green, 15 to 30 seconds. Transfer cooked spinach to a bowl. Sauté remaining spinach with remaining oil in same manner. Season with salt.
  • Wipe skillet with a paper towel, then heat 2 tablespoons butter over moderate heat until foam subsides. Increase heat to moderately high and sauté two fillets, skin sides down first, turning once, until golden brown and just cooked through, about 4 minutes (do not clean skillet). Repeat with remaining butter and fillets, then reserve browned butter in skillet.
  • Divide spinach among plates and top with pine nuts and fish, then drizzle fish with browned butter.
