SAVORY BURMESE SLAW



Savory Burmese Slaw image

Fermented tea leaves are one of Myanmar's favorite national ingredients, and for a 2015 article in The Times, the San Antonio chef Quealy Watson used them to provide a jolt of big flavor to a crunchy slaw that goes well with barbecued or grilled meats. You can find fermented tea leaves in some Asian markets and online, occasionally sold as Burmese tea salad dressing.

Number Of Ingredients 6

2 small heads savoy cabbage, cored and sliced into thin shreds
4 shallots, peeled and sliced very thinly
1/2 cup lime juice
3 tablespoons pickled or fermented tea leaves, chopped
6 cloves garlic, peeled and minced
3 tablespoons mint leaves, torn

Steps:

  • In a large bowl, combine cabbage and shallots and mix well to combine.
  • In a small bowl, combine lime juice, tea leaves and garlic, and whisk to make a dressing for the slaw.
  • Add dressing to slaw, and mix to combine.
  • Add mint leaves to slaw, mix lightly and serve.

Number Of Ingredients 12

1 teaspoon Dijon mustard
1/2 teaspoon salt
2 tablespoons apple cider vinegar
1 tablespoon applesauce
1/3 cup olive oil
4 cups savoy cabbage, sliced as thinly as possible
1 large bunch red radishes
3 or 4 Granny Smith apples
1 lemon, juiced
1 teaspoon mustard seeds
1/2 cup walnuts, toasted and chopped
Salt and black pepper to taste

Steps:

  • Put cabbage in a large bowl. Using the shredding blade of a food processor or a box grater, shred radishes until you have 1 cup. Add to bowl.
  • Core apples and shred in food processor or with box grater until you have 2 cups. Put shredded apple into a bowl filled with lemon juice and 2 cups water, to prevent apple from browning.
  • When ready to serve, gently squeeze water from apple, add to cabbage and toss slaw with vinaigrette. Add mustard seeds and toss again. Sprinkle walnuts on top of slaw. Season with salt and pepper.

1 apple , cored and grated
2 carrots , cut into matchsticks
½ red onion , finely sliced
100g pot fat-free Greek yogurt
juice ½ lemon
2 tsp cider vinegar
2 tsp Dijon mustard

Steps:

  • Mix the cabbage, apple, carrots and onion in a large bowl. In a separate bowl, mix the yogurt, lemon juice, vinegar and mustard. Season, then pour over the vegetables. Give everything a good stir to coat in the dressing and eat immediately, or chill until you are ready to serve.

5 tablespoons seasoned rice vinegar
1 tablespoon sugar

1 1/2 teaspoons Asian sesame oil
1 1/2 pounds Savoy cabbage, thinly sliced (6 cups)
1/4 pound snow peas, trimmed and very thinly sliced lengthwise (1 cup)
1/4 red bell pepper, cut into thin matchsticks

Steps:

  • Whisk together vinegar, sugar, and salt in a large bowl until sugar and salt are dissolved, then whisk in chile, ginger, and sesame oil. Add remaining ingredients and toss well. Let stand, uncovered, at room temperature, tossing occasionally, until wilted, about 30 minutes.

WARM SAVOY CABBAGE SLAW



Warm Savoy Cabbage Slaw image

Extra-virgin olive oil
6 slices thick cut bacon, cut into lardons
2 red onions, julienned
Kosher salt
3 carrots, peeled and grated
1 medium head savoy cabbage, thick ribs removed, shredded
1 1/2 cups apple cider vinegar
3 tablespoons mustard seeds
1 bundle fresh thyme, tied with string
4 bay leaves
1/4 cup to 1/2 cup apple cider
1 small bunch fresh chives, cut into 2-inch pieces

Steps:

  • Coat a large, wide pot with olive oil and add the bacon. Render the bacon over medium heat. Add the red onions, season with salt, and sweat for 4 to 5 minutes. Add the carrots and stir to combine. Add the cabbage, cider vinegar, mustard seeds, thyme, and bay leaves. Season with salt and taste. This will taste very vinegary but the salt will help offset the sharpness of the vinegar.
  • Reduce to a simmer, cover, and cook until the cabbage is very soft, 15 to 20 minutes. Remove the lid, add the apple cider, and simmer until most of the vinegar has absorbed but the cabbage is still moist but not soupy, an additional 10 minutes. Serve right away or let it hang out in the refrigerator. It will probably be better in a couple of days. Garnish with chives.

This is a variation on a classic. It is colorful and has a milder flavor than a traditional coleslaw recipe with just a touch of sweetness. The mango vinegar makes all the difference. Great as a starter or side dish for a picnic or barbecue.

1 small head savoy cabbage
3 small carrots, peeled and grated
1 small red onion, finely chopped
⅓ cup mayonnaise
2 tablespoons mango-flavored balsamic vinegar
2 teaspoons white sugar
½ teaspoon salt
freshly ground white pepper to taste

Steps:

  • Quarter and core cabbage, reserving outer leaves for presentation. Roughly chop cabbage and rinse in a salad spinner.
  • Transfer cabbage to a large bowl. Add carrots and red onion.
  • Mix together mayonnaise, balsamic vinegar, sugar, salt, and white pepper. Pour over the slaw mixture and mix until well combined. Cover and refrigerate until chilled, at least 2 hours.
  • Arrange reserved cabbage leaves on a platter with chilled slaw on top.
