MINI SHEPHERD'S PIE MUFFINS
Steps:
- Add water to a large pot and insert a steamer basket, making sure the surface of the water doesn't come above the basket. Bring to a boil. Add potatoes, cover and steam for 10 minutes. Add broccoli on top, cover and steam for 6-8 more minutes, until potatoes and broccoli are easily mashed with a fork.Transfer to a large bowl. Add the rest of the ingredients and continue mashing to desired consistency.
- Preheat oven to 375 degrees Fahrenheit.
- Heat oil in a large pan over medium heat. Add onion, garlic, and carrots. Cook for 5min. Add tomato paste and thyme and combine until well incorporated, about a minute or so.
- Transfer to a mixing bowl and set aside to cool. To the same bowl, add the ground beef, egg, and worcestershire, if using. Be careful not to overwork the mixture. Divide mixture into greased or lined 12 muffin cups.
- Add mashed potatoes on top. Bake for 25-30 minutes.

- In a large bowl, combine ground beef, ground pork, onion, coconut aminos, salt #1, garlic, carrots, chili powder, cayenne, garlic powder, eggs and almond flour. Mix until well combined. Divide meat mixture evenly between foil lined muffin tins, pressing down on tops. In a food processor, combine sweet potato, cauliflower coconut milk, lemon juice and salt #2, pureeing until smooth. Divide sweet potato mixture over the top of meat mixture. Bake at 375 for 40 minutes.

- Special equipment: eight 6- to 8-ounce ramekins
- For the stew: Melt the butter in a large skillet over medium-high heat. Add the onion, celery, carrot and thyme, and cook, stirring occasionally, until the onion and celery soften, 2 minutes. Add the ground beef, salt and pepper, and cook, stirring and breaking up any clumps, until brown, about 5 minutes.
- Stir in the tomato paste and then evenly sprinkle the flour over the meat mixture; stir to coat. Add the beef stock and Worcestershire, and bring to a simmer. Lower the heat to medium and simmer, stirring occasionally, until the most of the liquid has evaporated and the carrots are tender, about 10 minutes. Stir in the parsley and peas, and season again with salt and pepper if needed.
- For the mashed potatoes: Put the potatoes in a large pot; cover with cold water by 2 inches and add a big pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer and cook until the potatoes are easily pierced with a paring knife, 20 to 25 minutes. Drain, then pass the potatoes through a ricer and return them to the dry pot.
- In the microwave or a small pot, warm the cream along with the butter and some salt; pour into the potatoes, and mix well incorporated and the potatoes are very smooth. Season with salt and pepper. Fold in the cheddar.
- Finish the shepherd's pies: Preheat the oven to 400 degrees F. Divide the stew evenly among eight 6- to 8-ounce ramekins. Place the ramekins on a parchment-lined baking sheet. Using a re-sealable bag fitted a 1/2-inch star tip, pipe dollops of mashed potatoes around the top of each ramekin until the stew is covered.
- Bake until the potatoes are golden brown in spots and the meat mixture is bubbling, about 20 minutes.

- Spray a 12-count muffin pan with cooking spray. Mold biscuits to the shape of each muffin cup. Par-bake biscuits for 6 to 8 minutes until light golden. Remove from oven and set aside.
- Heat the oil in a large skillet over medium heat. Add ground beef and brown. Stir in the onions, salt, pepper and garlic and allow to cook together for a couple of minutes.
- Mix flour into the meat mixture and stir until a paste consistency is reached. Add beef stock to pan and stir in vegetables and herbs, the last few minutes, until combined.

- Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.

- Preheat oven to 375°. In a large skillet, cook and crumble beef with onion and garlic over medium heat until no longer pink, 5-7 minutes; drain. Enjoy! A little history: The key to dating Shepherd's pie is the introduction (and acceptance) of potatoes in England. Potatoes are a new world food. They were first introduced to Europe in 1520 by the Spanish. Potatoes did not appeal to the British palate until the 18th Century. (Foods America Gave the World, A. Hyatt Verrill, page 28). Shepherd's Pie, a dish of minced meat (usually lamb, when made with beef it is called "Cottage Pie") topped with mashed potatoes was probably invented sometime in the 18th Century by frugal peasant housewives looking for creative ways to serve leftover meat to their families. It is generally agreed that it originated in the north of England and Scotland where there are large numbers of sheep--hence the name. SHEPHERD'S PIE IV
Shepherd's Pie is a wonderful 'company meal' to share or to send for my husband's lunches. We like to pack it in disposable containers and share it with home bound friends who are recovering from an illness or with our grandma. Since everything is in one container, it is easy to transport and hearty to eat. If desired, replace the chives with parsley.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15x2 inch baking dish.
- Place ground sirloin in a large skillet over medium heat and saute 1 minute. Add chopped onion and continue to cook until meat is no longer pink and onion is beginning to brown. Pour mixture into greased baking dish.
- Top meat layer with green beans and cauliflower. Sprinkle cheese over vegetables, then spread evenly with cream of mushroom soup.

- To potatoes add softened cream cheese and butter or margarine. Whip until all ingredients are combined. Pour in milk and continue to whip until potatoes are smooth and fluffy. Add garlic powder, salt, and pepper to taste. Spread potatoes over soup layer. Sprinkle lightly with chives.
- Bake uncovered in preheated oven for 35 to 45 minutes, until potatoes are golden brown.
