1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
1 cup shredded parmesan asiago and romano cheese blend
32 medium peeled and de-veined raw shrimp
1 cup vegetable oil (for frying)
4 -6 ounces refrigerated basil pesto

Steps:

  • Mix the potatoes and cheese.
  • Heat a thin layer of oil in large oil or on griddle, to medium heat.
  • Spread potato mixture in small circles (about 2 tablespoons per circle, spreading to about 2 inches round), in skillet, and place two shrimp in a single layer in center of each.
  • Spread another 2 tablespoons potato mixture on top of each. Cook until golden and crispy on bottom, then turn and cook until golden and crisp on second side, and shrimp is just cooked through.
  • Transfer to drain; keep warm. Repeat until all are cooked (should have 16 rounds).
  • Serve 4 per person, with pesto.

This recipe has a touch of Mexico with the poblano peppers and the Oaxaca cheese, it has a little kick that the poplano peppers give it, the saute onions complements the dish with its sweetness and the melted cheese gives the creamy texture, and the bacon it's just an extra, it's my husband favorite potato dish. The poblano peppers have to be roasted before you saute them with potatoes. You will love these potatoes for breakfast with fried eggs on the side and your favorite salsa or just the with a flour tortilla and make a burrito. Tip put the peppers in a plastic bag for 5 minutes and it will be very easy to peel and clean them.

  • Roast peppers and cut into strips, chopped the onions, and shred the oaxaca cheese.
  • In a frying pan fry the bacon bits until almost done they should look crispy not burn, add the onions saute until onions are lightly brown.
  • Then add the potatoes and peppers stir constantly so potatoes wont stick and burn cook until potatoes are done depending how crispy you want the potatoes.
  • When done turn heat off and flavor with salt and pepper and add cheese and mix well so cheese wont stay just on top.

So I used the Simply Potato Shredded Hash Browns which I did have in my frig to substitute for the pasta and added Hot Italian Sausage, Pesto, Spaghetti sauce and cheese and it turned out delicious! I served this for dinner to not only my family but my neighbors as well and we all loved it! And I promise you will too! ENJOY!

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
13 tablespoons basil pesto
4 cups pre-shredded mozzarella cheese
3/4 lb hot Italian sausage
1 (24 ounce) jar pasta sauce with mushrooms

Steps:

  • Preheat oven to 375 degrees.
  • In a medium bowl put the potatoes, 6 tablespoons of the pesto and 1 ¼ cups of the mozzarella cheese and toss until well mixed. Set aside.
  • In a small dish put 1 tablespoon of the pesto and ¼ cup of the cheese and toss well. Set aside for part of the garnish.
  • In a medium skillet cook the sausage until cooked through, browned and crumbled. Pour off grease into a small heat safe dish and set aside. Add the jar of spaghetti sauce and the remaining 6 tablespoons of the pesto and mix well with the meat mixture. Bring to a simmer stirring and remove from heat. Reserve ½ cup of the meat sauce for the garnish.
  • In a 9x9 inch square baking dish pour one teaspoon of the reserved sausage grease into the dish. Brush sides and bottom of dish well with the grease. Add more if necessary to cover the dish. Set dish aside.
  • Pour the meat sauce and 2 Tablespoons of the remaining leftover sausage grease over the bowl of potatoes and toss mixing well until the potatoes are all covered.
  • Pour half the potato mixture into the prepared baking dish. Smooth out. Sprinkle 1 ¼ cups of the cheese over top. Pour remaining potato mixture on top of the cheese and again smooth out. Cover dish tightly with foil and bake for 30 minutes. Remove from oven and sprinkle the top with the remaining 1 ¼ cups cheese and put back into the oven UNcovered for 10 minutes until cheese is melted.
  • Remove pan from oven. Cut into desired amount of pieces. Put about one tablespoon or more of the reserved meat sauce on top and in the center of each piece as a garnish. Then divide evenly the reserved pesto/cheese mixture and put in center of the sauce on each piece to finish as the garnish. Serve hot. Makes 4-6 servings.

I saw a similar recipe online and wanted to have a written copy for the kitchen so I did not have to watch the video each time I made these.

3 medium russet potatoes, peeled and shredded
½ medium yellow onion, chopped
¼ cup all-purpose flour

2 1/2 cups canola oil

Steps:

  • Place Simply Potatoes Shredded Hash Browns on large cutting board.
  • Press with paper towels to remove as much liquid as possible. Using a large knife, chop shredded hash browns into small dice. Press again with paper towels.
  • Place eggs in shallow dish and whisk until completely blended.
  • Place flour on a shallow plate.
  • Run Tilapia through eggs, press flour into both sides and shake off excess, and then press firmly into finely diced Hash Browns. Place on wax paper or parchment paper and let sit for 15 - 20 minutes.
  • Place canola oil in a large skillet over high heat and bring to frying temperature (very hot without smoking). To test, drop a few of the Hash Browns into the oil and if the oil bubbles all around them, it's hot enough. Carefully place 2-3 filets into the hot oil. Cook on one side until golden brown, then flip and bring the other side to golden brown, about 6- 8 minutes total.
  • Remove from oil and drain on paper towels. Repeat with the remainder filets. Serve immediately.
