1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
2 teaspoons extra-virgin olive oil plus additional for brushing and drizzling
4 large green onions, chopped
1 8-ounce ahi tuna steak, cut crosswise into twelve 1/4-inch-thick slices
1/2 8-ounce ball fresh mozzarella cheese, cut into 12 thin slices, drained on several layers of paper towels
12 large fresh basil leaves
4 cherry tomatoes, quartered
4 Kalamata olives, pitted, quartered
2 radishes, thinly sliced
1 teaspoon minced peeled fresh ginger

Steps:

  • Position rack in center of oven and preheat to 400°F. Roll out puff pastry on floured work surface to 11-inch square. Using 4 1/2-inch bowl as guide, cut out 4 rounds from pastry. Transfer pastry to large ungreased baking sheet, spacing apart. Place another baking sheet atop pastry rounds to weigh down slightly. Bake until pastry is golden brown and baked through, about 20 minutes. Uncover pastry and cool completely. DO AHEAD: Pastry can be made 6 hours ahead. Let stand at room temperature.
  • Preheat oven to 400°F. Heat 2 teaspoons olive oil in medium nonstick skillet over medium heat. Add green onions; sauté until soft but not brown, about 2 minutes. Remove from heat. Divide green onions among pastry rounds. Brush tuna lightly with olive oil; sprinkle with salt and pepper. Alternate 3 tuna slices, 3 mozzarella slices, and 3 basil leaves in concentric circles, slightly overlapping, atop green onions on each pastry round. Scatter tomatoes, olives, and radish slices over each. Sprinkle each with ginger and drizzle with olive oil. Bake just until tuna is opaque around edges but still translucent in center, about 3 minutes. Transfer to plates.

1 garlic clove
3 tablespoons canned tomatoes
1 tablespoon tomato paste
1 teaspoon extra virgin olive oil
1 frozen pizza crust
6 basil leaves
1/2 green capsicum
180 g tuna in vegetable oil
75 g mozzarella cheese, grated

Steps:

  • Mix together the tomatoes, tomato paste and garlic and season well with salt and pepper. Spread thinly over the pizza base.
  • Place the tuna, basil and capsicum on top.
  • Sprinkle the cheese over the pizza.
  • Bake in a hot oven (230°C) for 10 minutes until the cheese has melted.

I got this recipe from watching my great-grandmother cooking. She was from Sicily and that's why I dubbed this Sicily Spinach Pie.

1 lb fresh spinach
1 fresh pizza dough (or store bought)
6 -10 slices genoa salami (sliced thin)
6 -10 slices white processed cheese
6 -10 fresh Greek olives
salt and pepper
olive oil

Steps:

  • Preheat Oven to 425' Use a pizza stone if you have one.
  • Wash and Clean and Dry Spinach ·Roll out dough to (in form of a round pizza) ·Spread cheese all around center dough ·Spread Genoa Salami all around center dough ·Place Spinach in center of dough ·Take pits out of Olives and place throughout spinach ·Add Salt and Pepper to taste ·Sprinkle with a little Olive Oil Fold the ends of the dough to center (to tuck in spinach).
  • Turn on to pizza pan/ stone.
  • Poke a few air vents on top of pie.
  • Let cook for around 25-30 minutes (turning it once).
  • Let cool for 10 minutes, then slice and eat.

3 anchovy fillets, finely chopped
1 garlic clove, finely chopped
2 teaspoons finely chopped oregano
4 (6-ounces) tuna steaks, preferably albacore (1 inch thick; see cooks' note, below)
For sauce:
2 tablespoons extra-virgin olive oil
2 celery ribs, cut into 1/4-inch dice, plus 3 tablespoons celery leaves, coarsely chopped
2 ripe tomatoes, cut into 1/4-inch dice
1/4 cup Kalamata or other brine-cured black olives, pitted and coarsely chopped
2 tablespoons small capers, drained and chopped
3 tablespoons finely chopped basil
1 tablespoons fresh lemon juice
Equipment: a 2-burner grill pan

Steps:

  • Marinate tuna:
  • Combine oil, lemon juice, anchovies, garlic, oregano, and tuna in a large sealable bag and seal bag, pressing out excess air. Let stand at room temperature, turning occasionally, 30 minutes.
  • Grill tuna:
  • Remove tuna from marinade and shake off any excess. Lightly oil grill pan and heat over medium-high heat until smoking. Grill tuna, turning once, until pale pink in center, 5 to 7 minutes. Transfer to a platter and cover with foil to keep warm.
  • Meanwhile, make sauce:
  • Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers. Add diced celery and cook, stirring, until tender, about 5 minutes. Stir in tomatoes, olives, and capers and cook until sauce is slightly thickened, about 5 minutes.
  • Stir in basil, lemon juice, and 1/4 teaspoon each of salt and pepper and remove from heat. Spoon sauce over tuna and sprinkle with celery leaves.
