Easy Sauteed Peppers image

Sauteed peppers are a quick and easy recipe that's bursting with flavor! Eat them as a side dish or throw onto sandwiches or pizzas.

3 multi-colored bell peppers
1 1/2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon kosher salt
Fresh ground black pepper

Steps:

  • Thinly slice the peppers. Toss them in bowl with 1/2 tablespoon olive oil and the oregano, kosher salt and several grinds of black pepper.
  • In a large skillet, heat the remaining 1 tablespoon olive oil over medium high heat. Cook the peppers until tender and lightly charred, about 10 to 12 minutes for crisp tender or about 15 minutes for tender, stirring occasionally. Add additional salt to taste (we usually add a few more pinches).

1 tablespoon olive oil
1/2 small red onion, diced
Coarse salt and ground pepper

Steps:

  • Remove seeds and ribs from peppers; cut lengthwise into strips and halve crosswise.
  • Heat oil in a large nonstick skillet over medium heat. Add bell peppers and onion; season with salt and pepper. Cook, stirring occasionally, until peppers are just tender, about 10 minutes.

Number Of Ingredients 16

6 green, red or yellow bell peppers, or a combination
1 tablespoon olive oil, plus additional for drizzling tops of peppers
1 onion, minced
2 large garlic cloves, minced or to taste
1 teaspoon hot Madras curry powder, or to taste
1 teaspoon ground ginger
3 cups cooked long grain rice, preferably basmati
1 pound ground veal
10-ounce package frozen peas, cooked according to package directions
3 firm, ripe tomatoes, diced
1 tablespoon minced fresh oregano. or 1 teaspoon dried oregano, crumbled
3 tablespoons minced fresh cilantro, or to taste
Salt, to taste
Cayenne pepper, to taste (optional)
3 tablespoons fresh or dry bread crumbs
Lemon juice or wedges

Steps:

  • Preheat oven to 375 degrees. Cut off tops of peppers and remove seeds and ribs, reserving tops. Discard stems and dice reserved tops. Set aside. In a large saucepan of boiling water blanch the peppers to 3 to 4 minutes, or until they are slightly soft. Drain, refresh, and pat dry. Cut off a thin slice from the bottom of each pepper so that it stands straight. In a nonstick skillet set over moderate heat, warm 1 tablespoon olive oil until it is hot, add the onion and reserved diced pepper and cook, stirring occasionally, for 3 to 5 minutes, or until vegetables are softened. Add the garlic, curry powder and ginger and cook, stirring 2 minutes more. Transfer mixture to a large bowl. Add the remaining ingredients, except the bread crumbs and lemon, to the bowl and gently stir to combine well. Stuff the peppers with the filling and arrange them in a shallow baking pan. Sprinkle tops of peppers with the bread crumbs and drizzle each with a little olive oil. Bake the peppers for 40 to 45 minutes, or until stuffing is completely cooked. Transfer peppers to a serving platter and sprinkle with lemon juice or serve with lemon wedges.

Garlic and herb bell peppers are easy to prepare and can be served as an appetizer, as part of an antipasto platter, or as a colorful side dish.

3 tablespoons olive oil
2 large red bell peppers, seeded and cut into 1/2-inch strips
2 large yellow bell peppers, seeded and cut into 1/2-inch strips
2 cloves garlic, finely minced
Salt to taste
Ground black pepper to taste
1 tablespoon ​ red wine vinegar
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
Optional: toasted​ Italian bread

Steps:

  • Gather the ingredients.
  • In a large skillet, heat the olive oil over high heat.
  • Add the pepper strips, and sauté for 4 to 5 minutes or until the peppers begin to soften.
  • Turn down the heat to low and add the garlic , salt, and pepper. Sauté for 2 more minutes, being careful the garlic doesn't brown as it will turn bitter.
  • Turn off the heat and add the vinegar, basil, and parsley. Toss to combine.
  • Transfer to a bowl and allow to cool to room temperature.
  • Toss again before serving. Taste and adjust the seasoning if needed. Serve with toasted bread if desired.

four 1/2-pound whole green or red bell peppers plus 1/4 cup minced red bell pepper
3 tablespoons olive oil
1 onion, chopped
1 tomato, peeled, seeded, and chopped
1 garlic clove, minced
3/4 cup long-grain rice
2 1/4 cups chicken broth
2 tablespoons slivered almonds, toasted lightly
1/2 cup fresh or thawed frozen peas
1/2 pound zucchini, scrubbed and cut into 1/4-inch cubes
1/2 teaspoon ground cumin
lemon wedges for garnish

Steps:

  • Halve 3 of the whole bell peppers lengthwise, leaving the stem ends intact, core and seed them, and in a large saucepan of boiling salted water blanch them for 3 minutes, or until they are just tender. Remove the peppers and invert them on paper towels to drain (they will soften while they stand.)
  • In a heavy 11- to 12-inch skillet heat the oil over moderately high heat until it is hot but not smoking and in it sauté the onion, the remaining whole bell pepper, chopped, the tomato, and the garlic over moderate heat, stirring, for 15 minutes. Stir in the rice and cook the mixture, stirring, for 1 minute. Stir in the broth, heated, and salt and pepper to taste, bring the liquid to a boil, and simmer the mixture, uncovered, for 20 minutes, or until the rice is barely tender. Stir in the almonds, the peas, the minced bell pepper, the zucchini, and the cumin and divide the mixture among the bell pepper shells, mounding it. Bake the stuffed peppers in an oiled baking dish, covered, in a preheated 325°F. oven for 15 minutes, or until the rice is tender, and serve them with the lemon wedges.

SWEET BELL PEPPERS SAUTE

This side dish is delicious with almost anything but it goes especially well with barbequed meats. If you like a little heat to your sautes, throw in a hot pepper as well.This is also good using just green peppers.

3 tablespoons olive oil
2 red bell peppers
1 yellow bell pepper
1 orange bell pepper
salt
2 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil or 1 teaspoon dried basil
1 tablespoon chopped fresh parsley
1 garlic clove, minced

Steps:

  • Cut peppers in 1/4" strips.
  • Heat oil in large skillet over high heat until very hot.
  • Add peppers and saute until they begin to colour in some places.
  • Reduce heat and season with salt to taste.
  • Cover pan and cook 10 minutes, or until peppers are softened.
  • Increase heat and add balsamic vinegar.
  • Stir and toss peppers until vinegar is evapourated.
  • Remove from heat.
  • Stir in basil,parsley and garlic.

BLINK OF AN EYE BELL PEPPER SAUTE

I am not a fan of overly cooked bell peppers. To my palate they become bitter; look and taste slimy. However, put a plate of grilled, stir fried or sauteed bell peppers in front of me and that's a different story. This is from Martha Stewart's Everyday Food supplemental magazine. The trick is NOT to overcook the bell peppers to both maintain the sweet taste and the lovely colors. Try to use 2 different color of bell peppers if you can; orange, red, yellow or all three if you wish.

2 large bell peppers (red, yellow or orange, green not recommended.)
1 tablespoon olive oil
1/2 small red onion, sliced into crescents
1 garlic clove, minced (my addition, can omit)
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Remove stems from peppers. Halve the bell peppers crosswise then cut into 1/2" strips.
  • Heat the olive oil in a non-stick pan over medium heat.
  • Add bell peppers and sauté for about 2-3 minutes. Then add the red onion crescents (and garlic if using) and sauté another 2 minutes. Be careful not to burn.
  • You want the bell peppers to be slightly softened but still firm. Does that make sense?.
  • Season with salt and pepper and transfer to serving platter. Great as a side dish or served over pasta or rice.

Summer is the prefect time to make the luscious Spanish classic, piperade, when peppers of all colors are abundant and, for a short time, relatively inexpensive. This is a great partner for almost any sort of pasta or grain dish, hot or cold, or to serve alongside a summertime sandwich. Use leftovers in wraps.

2 tablespoons olive oil
1 medium onion, quartered and thinly sliced
2 garlic cloves, minced
2 medium red bell peppers, cut into narrow strips
2 medium green bell peppers, cut to match red pepper
2 medium yellow bell peppers, cut to match red pepper
1/4 cup dry white wine
1/4 cup oil-packed sun-dried tomatoes, cut into strips
2 medium tomatoes
2 to 3 tablespoons minced fresh parsley, optional
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil in a large skillet. Add the onion and sauté over medium heat until translucent.
  • Add the garlic, bell peppers, wine, and sun-dried tomatoes. Stir in 1/4 cup water and bring to a simmer. Cook, covered, over medium-low heat until the peppers are tender but not overdone, about 8 minutes.
  • Stir in the fresh tomatoes and continue to cook, uncovered, just until they have lost their raw quality, 3 to 4 minutes. Add the optional parsley and season with salt and pepper. Serve at once.
