SPICY ASIAN-STYLE GINGER HUMMUS



Spicy Asian-Style Ginger Hummus image

2 teaspoons chopped garlic
1 tablespoon fresh ginger, peeled and finely chopped
2 cups cooked garbanzo beans, drained and rinsed
1/4 cup cashew butter or peanut butter
1 tablespoon soy sauce
1 teaspoon Asian chili sauce, such as Sriracha*
1/4 teaspoon ground cumin
1/3 cup vegetable stock, or water
1/4 cup fresh lemon juice, or to taste
1/4 cup chopped fresh cilantro
1 green onion, chopped

Steps:

  • Add garlic, ginger, beans, cashew butter, soy sauce, chili sauce, and cumin to a food processor and pulse to chop. Add the water and lemon juice and process till nearly smooth but still with a little texture. Add cilantro and green onion and pulse a couple of times to just combine. Store covered and refrigerated up to a week. * Available in the Asian foods section of many supermarkets and at Asian markets.

A spicy twist on traditional hummus. This recipe is especially creamy and is garlicky without being overwhelming. Use as a dip, a spread, or eat it by the spoonful like I do! Gluten-free, soy-free, dairy-free and kosher (pareve).

16 ounces garbanzo beans (or 1 15-ounce can)
1/3 cup sesame tahini
1/4 cup olive oil
1/4 cup warm water
1 1/2 lemons, juice of
1 raw garlic clove
1/8 teaspoon kosher salt
2 -3 teaspoons hot chili oil
1/8 teaspoon ground pepper (optional)

Steps:

  • Combine tahini, olive oil and garlic in food processor or blender. Blend until pureed.
  • Add remaining ingredients, blend until smooth and creamy consistency.
  • Serve at room temperature, with pita bread, on crackers, as a sandwich spread, or as a dip for raw vegetables. Store in refrigerator. It will keep for up to 2 weeks.

2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon minced garlic
1 teaspoon cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon sesame oil
5 dashes hot pepper sauce (such as Cholula®)
1 (15 ounce) can garbanzo beans, drained and rinsed
2 tablespoons cold water

Steps:

  • Combine tahini, olive oil, lemon juice, garlic, cayenne pepper, cumin, salt, sesame oil, and hot sauce in a food processor or blender; blend until very smooth, about 3 minutes. Add garbanzo beans and blend for 2 minutes. Add water and blend for 3 minutes more. Chill in refrigerator.

Serve with freshly cut veggies, pita chips, naan bread, tortilla chips, crackers, or crostini.

2 large carrots, peeled and cut into 1 1/2-inch pieces
3 cloves garlic, peeled
2 teaspoons sesame oil
kosher salt to taste
1 (15 ounce) can garbanzo beans, drained (reserve liquid) and rinsed
¼ cup finely chopped roasted cashews
¼ cup seasoned rice vinegar (such as Nakano®)
3 tablespoons lime juice
2 tablespoons tahini
2 teaspoons freshly grated ginger
1 teaspoon Sriracha sauce, or to taste
½ teaspoon ground paprika
¼ teaspoon salt
1 drizzle sesame oil (optional)
1 tablespoon chopped cilantro

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with foil.
  • Distribute carrots and garlic cloves on the baking sheet. Drizzle with 2 teaspoons sesame oil and season with kosher salt; toss to coat.
  • Roast in the preheated oven until carrots are tender, stirring halfway through, about 25 minutes. Remove from the oven and allow carrots to cool to room temperature, 10 to 15 minutes..
  • Add the carrot-garlic mixture, garbanzo beans, cashews, rice vinegar, lime juice, tahini, ginger, Sriracha, paprika, and salt to a food processor; blend until well combined. Stream in the reserved bean liquid though the feed tube, one tablespoon at a time, until hummus is smooth and creamy and has reached desired consistency.
  • Taste, and adjust seasoning, if necessary. Transfer to a bowl, and garnish with a drizzle of sesame oil and chopped cilantro.
