SPICY SAUSAGE LASAGNA
A spicy lasagna with both a creamy white sauce and a red sauce.

Steps:
- Preheat oven to 350 degrees F. Lightly butter a 9-by 13-inch baking dish.
- Melt the butter in medium skillet over medium heat. Add the flour and stir with a wooden spoon until lightly toasted, about 2 minutes. Whisk in the milk and bring to a boil while stirring. Add the garlic, reduce the heat to maintain a simmer and continue to cook, whisking occasionally until thick, about 20 minutes. Stir in the nutmeg and 1 teaspoon salt.
- Bring a large pot of salted water to a boil. Add the noodles and cook according to the package directions for al dente. Drain and lay out on a cutting board so they don't stick to each other.
- Heat the oil in a large skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon until browned and cooked through, about 5 minutes. Add the spinach, pepper flakes and 1/2 teaspoon salt and cook, stirring occasionally, until the spinach is dry. Remove from the heat and stir in the basil.
- Toss the mozzarella and Parmesan together in a small bowl. Remove the garlic from the cream sauce. Cover the bottom of the prepared dish with 3 noodles. Top with 1/4 cup of the cheese mixture, 3/4 cup marinara, 1/2 cup cream sauce and 1/3 of the sausage mixture. Repeat the layers until all the noodles have been used. Top the final sausage layer with the remaining cream sauce, marinara and cheese, making sure the edges of the noodles are covered. Bake until bubbly, about 45 minutes. Let lasagna stand for 10 minutes before slicing. Garnish with more basil if using.

SAUSAGE MEATBALL LASAGNA

- Make the meatballs: Mix the sausage and parsley in a bowl with your hands until combined. Dampen your hands and form the meat into 3/4-inch balls (you should have about 40). Heat the olive oil in a large pot over high heat. Working in batches, add the meatballs and cook, turning, until browned, about 7 minutes. Transfer to a plate using a slotted spoon.
- Reduce the heat to medium high and add the soppressata, onion, celery, carrots and garlic. Cook, stirring occasionally, until the vegetables are slightly softened, about 6 minutes. Add the tomato paste and basil and cook, stirring, 3 minutes. Stir in the wine, tomato puree and 3 cups water. Reduce the heat to medium low and return the meatballs to the pot. Simmer, stirring occasionally, until the sauce thickens, 1 hour, 20 minutes.
- Prepare the lasagna: Whisk the ricotta, eggs and parmesan in a medium bowl. Fill a large bowl with hot water. Working in batches, soak the noodles until just pliable, about 5 minutes. Lay out on a clean kitchen towel and pat dry.
- Preheat the oven to 400 degrees F. Butter the bottom and sides of a deep 10-by-13-inch baking dish. Lay 6 noodles in the bottom of the dish so they go partway up the sides and overlap slightly. Spread half of the ricotta mixture over the noodles, then top with half of the meatballs and 1 1/2 cups sauce. Sprinkle with half each of the mozzarella and pecorino. Repeat the layers (noodles, ricotta mixture, meatballs, sauce, mozzarella and pecorino). Top with the remaining 6 noodles and cover with the remaining sauce.
- Tightly cover the dish with foil and bake until bubbly, about 30 minutes. Uncover and bake until browned, about 15 more minutes. Let stand 20 minutes before serving.
SPICY LASAGNA WITH SAUSAGE MEATBALLS
Spicy, gooey, cheesy lasagna is like heaven on a plate. The fresh sheets of pasta make this lasagna lighter than regular lasagna noodles. They cost a little more but are definitely worth the expense.

- Preheat oven to 350 degrees. Heat a large pan over medium heat; drizzle in a little olive oil. Remove sausage meat out of the casing by squeezing small balls out with your hands, letting them drop into the pan. Cook sausage balls until golden brown and cooked through, browning on all sides; set aside. Mix Ricotta, egg and parsley together in a bowl until egg is thoroughly incorporated; season with salt and pepper; set aside. Heat pasta sauce, red pepper chili flakes and fennel seeds to a simmer. Drizzle a little more oil on the bottom of a lasagna pan. Lay one of the pasta sheets down; spoon about one fifth of the Ricotta mixture over it. Sprinkle on some Mozzarella; ladle on some sauce. Repeat with 4 more pasta sheets, layering them with the cheeses and sauce. Finish with a top layer of pasta. Spread on the remaining Ricotta; lay meatballs evenly across the entire top. Drizzle sauce over the meatballs; cover with the rest of the Mozzarella. Cover loosely with non-stick aluminum foil. Bake about 1 hour, until bubbly and hot throughout.

- Place first eight ingredients in a 6-qt. slow cooker. Chop onion and peppers; stir into tomato mixture., Shape sausage into 1-3/4-in. balls; roll in flour to coat lightly. In a large skillet, heat oil over medium-high heat; cook meatballs in batches until lightly browned, 5-8 minutes, turning occasionally. Drain on paper towels. Add to slow cooker, stirring gently into sauce., Cook, covered, on low 5-6 hours or until meatballs are cooked through and vegetables are tender. Serve with pasta. Freeze option: Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. - Preheat oven to 400°. In a large skillet, cook and crumble sausage with onion over medium heat until no longer pink, 5-7 minutes; drain. Add garlic and tomato paste; cook and stir 1 minute. , Stir in tomatoes, tomato sauce, basil, 1/2 teaspoon pepper and salt; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 10-15 minutes., In a bowl, mix egg, ricotta cheese, 1-1/4 cups Parmesan cheese and the remaining pepper. - Sauce:
- Heat oil in heavy large pot over medium-high heat. Add sausages, onion, garlic, oregano and crushed red pepper and sauté until sausage is cooked through, mashing sausage into small pieces with back of fork, about 10 minutes. Add crushed tomatoes and diced tomatoes with juices. Bring sauce to boil. Reduce heat to medium and simmer 5 minutes to blend flavors. Season with salt and pepper. (Can be made 1 day ahead. Chill until cold, then cover and keep chilled.)
- Filling:
- Using on/off turns, chop fresh basil leaves finely in processor. Add ricotta, mozzarella, Parmesan, egg, 1/2 teaspoon salt and 1/4 teaspoon pepper. Using on/off turns, process filling until just blended and texture is still chunky.
- Assembly:
- Preheat oven to 375°F. Spread 1 1/4 cups sauce in 13x9x2-inch glass baking dish. Arrange 3 noodles on sauce. Drop 1 1/2 cups filling over noodles, then spread evenly to cover. Sprinkle with 3/4 cup mozzarella cheese and 1/4 cup Parmesan cheese. Repeat layering of sauce, noodles, filling and cheeses 2 more times. Top with remaining 3 noodles. Spoon remaining sauce atop noodles. Sprinkle with remaining cheeses. Spray large piece of foil with nonstick olive oil spray. Cover lasagna with foil, sprayed side down.
- Bake lasagna 40 minutes. Carefully uncover. Increase oven temperature to 400°F. Bake until noodles are tender, sauce bubbles thickly and edges of lasagna are golden and puffed, about 20 minutes. Transfer to work surface; let stand 15 minutes before serving.
SPICY LASAGNA
I like the vegetables in this Lasagne. Since we never had ricotta cheese around, this recipe uses cottage cheese.

- In skillet cook sausage, onion, celery and carrot until meat is lightly browned.
- Drain off excess fat and stir in tomatoes, tomato paste, salt, oregano and first 1/4 tsp pepper.
- Simmer, uncovered, 30 minutes stirring occasionally.
- Cook lasagna according to package directions and drain well.
- In a small bowl combine cottage cheese, parmesan cheese, eggs, parsley and the remaining pepper.
- Place half the noodles in a greased 13 x 9 baking dish.
- Spread with half the cheese filling and half the meat sauce. Top with half the mozzarella.
- Repeat layer.
- Bake uncovered in 375 degree oven for 30 minutes.
- Let stand 10 to 15 minutes before serving.
ITALIAN SAUSAGE MEATBALLS
I developed this recipe as I was reviewing many other meatball recipes. The spices in the sweet Italian sausage give it the extra kick. These meatballs can be frozen for use later. Or used immediately in your favorite sauce. These are also a great appetizer with dipping sauce.

- Put all ingredients in a large mixing bowl.
- Mix together throughly.
- Using the palm of your hands. Roll into a ball shape. About one inch diameter.
- Place oil in a frying pan over medium heat.
- Place meatballs in hot oils.
- Move them around continuously to ensure that they do not burn, and are throughly cooked.
- Cook for 5 to 7 minutes (golden brown).
- Remove from oil and sit on paper towel to absorb any oil.
