Yield Makes about 40 cookies

Number Of Ingredients 11

3/4 cup vegetable shortening at room temperature
1 cup firmly packed light brown sugar
1 large egg, beaten lightly
1/4 cup unsulfured molasses
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
granulated sugar for dipping the balls of dough

Steps:

  • In a bowl cream the shortening with the brown sugar until the mixture is light and fluffy and stir in the egg and the molasses. Into another bowl sift together the flour, the baking soda, the cinnamon, the ginger, the cloves, and the salt, add the flour mixture in batches to the shortening mixture, and blend the dough well. Chill the dough, covered, for 1 hour.
  • Roll level tablespoons of the dough into balls, dip one side of each ball into the granulated sugar, and arrange the balls, sugared sides up, about 3 inches apart on greased baking sheets. Bake the cookies in batches in the middle of a preheated 375°F. oven for 10 to 12 minutes, or until they are puffed and cracked on top. Transfer the cookies with a metal spatula to racks and let them cool.

GRAMMY'S SPICE COOKIES

Grammy's Spice Cookies image

This recipe for spice cookies came to The Times from Claire Will of San Francisco after a callout for favorite holiday recipes. At first, it seemed rather plain Jane, but the hefty dose of ground cloves (3/4 teaspoon) was what lured me into testing it, and I have to admit I was skeptical. I was soon a believer. Of the five kinds of cookies I served to a group at a holiday party, those crisp-edged, soft-centered beauties were the first to vanish. One friend texted on his way home, "send recipe for spice cookies a.s.a.p."

Categories     dessert

Time 1h

Yield About 3 dozen

Number Of Ingredients 14

1 cup/225 grams unsalted butter (2 sticks), softened
1 cup/200 grams granulated sugar
1/4 cup/60 milliliters molasses
1 large egg
1 3/4 cups plus 2 tablespoons/240 grams all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon ground cloves
1/2 teaspoon fine sea salt
3 3/4 cups/460 grams confectioners' sugar
1 teaspoon vanilla extract
3 tablespoons heavy cream or milk, more as needed
1 to 2 tablespoons Irish whiskey, optional

Steps:

  • Heat oven to 375 degrees. Line several baking sheets with parchment paper or nonstick liners.
  • Using an electric mixer, beat 12 tablespoons butter with the granulated sugar, molasses and egg until fluffy, about 2 minutes. Slowly beat in flour, baking soda, spices and salt.
  • Shape dough into walnut-size balls and place 2 inches apart on baking sheets. Bake until firm, about 10 to 12 minutes. Let cool on wire racks.
  • To make the icing, beat remaining 4 tablespoons butter with the confectioners' sugar until smooth. (Go slowly so you don't create a sugar storm.) Beat in the vanilla and enough cream or milk, and whiskey (if using), to make a spreadable frosting. Slather on fully cooled cookies.

SPICY CHEESE "COOKIES"

Spicy Cheese

These are SO good and SO easy, I don't know why I don't make them more often. These are savory, NOT sweet, but the method is more like making cookies than anything else, hence the name...

Provided by Meredith K.

Categories     Cheese

Time 30m

Yield 60 cookies, 30 serving(s)

Number Of Ingredients 5

1 cup butter or 1 cup margarine
8 ounces extra-sharp cheddar cheese, grated (Use orange for these, even if you normally buy white cheddar.)
2 cups flour
1/2 teaspoon cayenne (more to taste)
pecan halves (You want pretty ones ( save the broken ones for something else.)

Steps:

  • Preheat oven to 350°.
  • Cream together butter/margarine and the grated cheese.
  • Add flour and cayenne; mix until thoroughly blended.
  • Roll into marble-sized balls and place on ungreased cookie sheet. These barely spread at all, so fairly close spacing is OK.
  • Press a pecan half onto the top of each dough ball to flatten to about 3/8 inch think.
  • Bake 15 - 17 minutes.
  • Cool completely before eating!

SPICY MEXICAN COOKIES (CHOCOLATE)

Spicy Mexican Cookies (Chocolate) image

If you're looking for a chocolate cookie with a real kick, look no further. These cookies are a perfect marriage of chocolate and spicy. They are firm, but chewy-melt-in-your-mouth. For comparison, I lean toward "medium" heat when it comes to salsa. This recipe is adapted from an excellent food blog called Baking Bites.

Provided by A.B. Hall

Categories     Dessert

Time 50m

Yield 4 dozen, 48 serving(s)

Number Of Ingredients 10

1 1/2 cups unbleached all-purpose flour
3/4 cup cocoa powder
3/4 teaspoon cinnamon
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups butter, room temperature
1 cup sugar
1 1/2 teaspoons vanilla extract
1 egg

Steps:

  • In a medium bowl whisk together the flour, cocoa, cinnamon, cayenne, salt and pepper.
  • In a large bowl, use an electric mixer to cream the butter and sugar. Add the egg and vanilla and mix until light and fluffy.
  • Slowly add the dry ingredients until they are fully blended into the dough and no traces of the flour mix remain.
  • Divide the dough in two and roll each half into a log that's 9 inches long. Wrap each log tightly in plastic wrap and place in the freezer overnight or a minimum eight hours (if you're not interested in baking the whole batch at once, the dough will keep up to six weeks in the freezer).
  • Having been frozen, the dough will require a small amount of effort to cut through. With a sharp knife, cut 1/3" cookies from the dough. Bake at 375° F for 8-10 minutes or until edges are firm. Allow cookies to cool 30 seconds to a minute then transfer to a wire rack to cool.
