ROASTED SQUASH AND APPLE TART

1 butternut squash, peeled
3 tablespoons olive oil, divided
Salt and pepper
1/4 teaspoon ground clove
1 tablespoon brown sugar
3 apples, peeled
7 large shallots
1/2 tablespoon chopped fresh thyme leaves
1 puff pastry, cut into 6 equal rectangles
4 ounces blue cheese, crumbled
2 recipe Syrah Reduction, recipe follows
1 bottle syrah
4 sprigs thyme
1 shallot, slices
1 tablespoon black pepper
1 tablespoon white pepper
Freshly cracked black pepper

Steps:

  • Butternut Squash:
  • Preheat oven to 350 degrees F.
  • Cut sides of squash to make a rectangular shape. Slice squash into 6 (2 by 4-inch) rectangles. Toss the squash in 1 tablespoon of olive oil, salt, pepper, to taste, ground clove, and brown sugar. Bake in oven until tender, approximately 15 to 25 minutes.
  • Apple: Slice the apples into 6 (2 by 4-inch) rectangles. Heat 1 tablespoon oil in a saute pan over medium-high heat and add apples, salt and pepper. Saute until tender, being careful not to overcook.
  • Shallot Compote: Peel 7 large shallots and toss in 1 tablespoon of oil, salt and pepper, to taste. Place in a roasting pan and cover with aluminum foil. Roast for approximately 30 to 45 minutes at 350 degrees F, or until tender. Remove aluminum foil and continue cooking for 10 minutes. In a food processor or blender, add shallots with chopped fresh thyme and season, to taste, with salt and pepper.
  • To Assemble: Place each squash rectangle on top of a piece of puff pastry. Do the same with the apples. Place an equal amount of blue cheese on top of the squash. Place the puff pastry in the oven until the squash and apple are warm, and the blue cheese melted. Place the shallot compote on top of the blue cheese and garnish the plate with the sauce.
  • Reduce ingredients in pot until syrupy. Finish with fresh cracked black pepper.;

1 1/4 cups all-purpose flour
Pinch salt
8 tablespoons (1 stick) cold unsalted butter, diced
1 large egg, lightly beaten
1 large baking apple, such as Rome Beauty or Cortland
1 small or 1/2 medium butternut squash (about 3/4 pounds), halved, seeded, and skin on
1 small yellow onion, peeled, root end trimmed but intact
3 tablespoons unsalted butter, melted
2 teaspoons chopped fresh rosemary leaves
2 teaspoons chopped fresh thyme leaves
Kosher salt and freshly ground black pepper
2 tablespoons whole-grain mustard
1/3 cup crumbled Stilton or other blue cheese (about 1 1/2 ounces)

Steps:

  • For the dough: Pulse the flour and salt together in a food processor. Add the butter and pulse about 10 times until the mixture resembles coarse cornmeal with a few bean-size bits of butter in it. Add the egg and pulse 1 to 2 times more; don't let the dough form a mass around the blade. If the dough seems very dry, add up to 1 tablespoon of cold water, 1 teaspoon at a time, and pulsing briefly. Remove the blade and bring the dough together by hand. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate at least 1 hour.
  • For the filling: Halve and core the apple. Cut each 1/2 into 8 wedges and put them in a large bowl. Slice the squash and cut the onion into wedges so that both are as thick as the apple wedges, and add them to the apples. Add the butter, rosemary, and thyme and toss gently to combine. Season with salt and pepper and toss again.
  • Preheat the oven to 400 degrees F.
  • Roll the dough on a lightly floured surface into a 12-inch disk. Transfer the dough to a baking sheet and brush with mustard. Starting 2 inches from the edge, casually alternate pieces of apple, squash, and onion in overlapping circles¿if you have extra pieces of one or another, tuck them in where you can or double them up until to use all the filling. Fold and pleat the dough over the edge of the filling. Bake until the crust is brown and the apples, squash, and onions are tender and caramelized, about 55 minutes. Scatter the cheese over the filling and bake until melted, about 5 minutes more. Cool the galette briefly on a wire rack. Cut into wedges and serve.

1 1/2 teaspoons olive oil, plus about

1 small onion
1 1/2 tablespoons unsalted butter
1 large egg and 1/2 large egg yolk (1/2 tablespoon)
1/3 cup heavy cream
3/4 cup grated Italian fontina cheese (about 2 1/2 ounces)
1/3 cup freshly grated Parmesan cheese (about 1 ounce)
1/4 cup crumbled mild soft goat cheese (about 1 ounce)
1 1/2 teaspoons minced fresh herbs, such as rosemary, thyme, and marjoram leaves
1/2 teaspoon salt
Freshly ground black pepper
1/3 cup fine fresh bread crumbs
Special equipment: 11-inch round fluted tart pan with removable bottom

Steps:

  • On a lightly floured surface, roll out the dough into a 12-inch round about 1/8 inch thick. Fit the dough into an 11-inch tart pan with a removable fluted rim. Freeze the shell 15 minutes.
  • Preheat the oven to 375°F. Line shell with foil and fill with pie weights or raw rice. Bake the shell in the middle of the oven until the edge is pale golden, about 20 minutes. Carefully remove the foil and weights and bake 10 minutes more, or until the bottom is golden. Leave oven on. Cool shell in pan on a rack.
  • Halve the squash and scoop out the seeds. Lightly brush each cut side with about 1 teaspoon oil and roast the squash on a baking sheet, cut sides down, in the middle of the oven 40 minutes or until soft.
  • While squash is roasting, thinly slice the onion and cook in a heavy skillet in 1/2 tablespoon butter and the remaining 1 1/2 teaspoons oil over moderate heat, stirring occasionally, until soft and golden brown, about 20 minutes.
  • Cool the squash and scoop out the flesh. In a food processor, purée the squash. Add the whole egg, egg yolk, and cream and blend well. Transfer the mixture to a large bowl and stir in the onion, cheeses, herbs, salt, and pepper to taste. Pour the filling into the shell, smoothing the top.
  • In a small skillet, melt the remaining tablespoon butter and stir in the bread crumbs until combined well. Sprinkle the bread crumb mixture evenly over the filling. Bake the tart in the middle of the oven 40 minutes, or until filling is set. Cool the tart in the pan on a rack 10 minutes and then carefully remove rim. Serve.

1/4 cup KRAFT Balsamic Vinaigrette Dressing
2 Tbsp. brown sugar
1/2 tsp. dried rosemary leaves
2 apples, cut into 8 wedges each
1 red onion, cut into 8 wedges

Steps:

  • Heat oven to 400ºF.
  • Pierce squash with sharp knife; place on microwaveable plate. Microwave on HIGH 2 min.; cool 2 min. Meanwhile, mix dressing, sugar and rosemary until blended.
  • Cut squash lengthwise in half; remove and discard seeds. Cut each half into 4 wedges; place in large bowl. Add apples and onions; mix lightly. Add dressing mixture; toss to evenly coat. Spread onto foil-covered rimmed baking sheet.

1 teaspoon salt
1 pinch cinnamon
1 butternut squash - peeled, seeded and sliced
4 apples - peeled, cored and sliced
½ sweet onion, thinly sliced
1 cup chicken stock
1 cup shredded sharp Cheddar cheese
3 slices bacon, cooked and crumbled

Steps:

  • Preheat oven to 350. Spray 9- x 11-inch glass baking pan with cooking spray.
  • Place flour, salt, and cinnamon into a large plastic bag. Add squash, apples, and onions; shake until lightly dusted.
  • In glass dish, layer 1/2 of squash, apples, and sweet onion. Pour 1/2 cup chicken stock over the top, then sprinkle 1/2 of cheese. Layer with remaining squash, apple, and onions. Pour remaining chicken stock over the top, and cover with foil.
  • Bake in preheated oven for 40 minutes.

2 cups coarsely grated buttercup or kabocha squash
1/3 cup maple syrup or honey
1/3 cup heavy cream
1/2 cup dried cranberries
1 tablespoon minced crystallized ginger
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon salt
2 eggs
1 partially baked 9-inch tart shell

Steps:

  • Preheat oven to 350 degrees. Combine squash, maple syrup or honey, cream, cranberries, ginger, allspice, cloves and salt. Mix thoroughly. Taste, and adjust seasoning, adding more spice if you like. Add eggs, and mix well again so ingredients are completely combined. Pour into prepared tart shell. 110g margarine, cubed
200g plain flour
50ml water
1/2 butternut squash, peeled and cubed (about 400g)
1 tbsp olive oil
4 tbsp caramelized onions or onion chutney
200ml Calcium or Organic Rice Dream
2 eggs
sea salt and freshly ground black pepper
30g pine nuts

Steps:

  • Make the pastry by rubbing the margarine into the flour using your fingertips, until the mixture resembles breadcrumbs. Pour in the water and, using a round-bladed knife, quickly bring everything together into a dough. Chill until required
  • Preheat the oven to 200C/180C fan/gas mark 6
  • Place the butternut squash in a roasting tin with the olive oil and some seasoning, then roast for about 20 minutes until the squash is tender and starting to caramelize
  • Roll out the pastry and use it to line a quiche tin, prick the base and bake blind for 15 minutes
  • Spread the onions over the pastry case then scatter over the roasted squash
  • Whisk together the Rice Dream with the eggs and a generous amount of seasoning
  • Pour into the tart case and top everything with the pine nuts
  • Bake for 25-30 minutes until set and golden
  • Serve with a crunchy green salad

This is a lovely thick and healthy soup. A good way to add fruit and vegetables to your diet. Add garlic if wanted. I used to fry the onion, and garlic when I used it, in a little olive oil before adding the other ingredients, but I found it makes no real difference to the flavour. Serve with crusty bread and butter or cream cheese.

1 small onion, chopped

  • Bring to the boil then reduce the heat to a simmer and cover.

1 1/2 lbs onions, halved lengthwise and sliced thin
2 cloves garlic, minced
1/4 teaspoon dried thyme, crumbled
3/4 teaspoon dried sage, crumbled
1/4 cup heavy cream
1 large apple
1/2 lb squash, sliced thin
1/4 cup cold unsalted butter, sliced thin

Steps:

  • Make crust: Preheat oven to 400 degrees F (220C).
  • Roll out dough 1/8 inch thick on a lightly-floured surface and fit it into a 9 ½ inch square flan form set on a baking sheet, leaving a ¼ inch overhang.
  • Fold overhang inward onto the sides of the shell and press firmly against the flan form.
  • Prick shell lightly with fork and chill for 30 minutes or freeze for 15.
  • Line pastry with foil and fill with pie weights.
  • Bake in lower third of oven for 15 minutes.
  • Remove weights and foil and bake shell a further 5-8 minutes, or until golden.
  • Let cool.
  • Make filling: In a large skillet, heat oil over moderately-high heat until hot but not smoking.
  • Stir in onions, garlic and season to taste.
  • Cook mixture, covered, over low heat, stirring occasionally, for 20-25 minutes, or until onions are softened.
  • Add sage, thyme and cream, bring to boil, and simmer, stirring occasionally, for 3-5 minutes, or until thickened.
  • Let onion mixture cool.
  • (may be made 1 day ahead) Spread onion evenly into pastry shell.
  • Peel and halve apple lengthwise, core, and slice very thin crosswise.
  • Arrange apple and squash slices decoratively, overlapping, covering onion.
  • Season with salt and top with butter.
  • Preheat oven to 375 degrees F (190C).
  • Bake in upper third for 15 minutes.
  • Cover tart with foil and bake for 30 minutes more, or until squash is tender.
  • Let tart cool for 20 minutes before removing from flan form.
  • Serve warm or at room temperature.
