For the crust, you can use graham crackers instead of the biscuits. In that case, add to the crust mixture 3-4 tablespoons of granulated sugar. This helps in binding the ingredients together. I process the cookies in a food processor until they're finely ground to a powder. To make strawberry puree, process strawberries in a food processor until pureed, then strain through a fine mesh strainer to remove the seeds. I use it to get a filling that's pink in color, but you can leave it out if you prefer. I use a tart pan with removable bottom for all my tarts.

200 g (2 cups) finely ground digestive biscuits (read above for graham cracker crust)
7 tablespoons (100 g/3.5 oz) unsalted butter, melted
115 g/4 oz (2/3 cup) coarsely chopped white chocolate
2 tablespoons strawberry puree (, optional)
1 cup (240 ml) heavy cream
3/4 cup strawberry jam
whipped cream
fresh strawberries

Steps:

  • To make the crust: In a medium bowl, mix together crushed biscuits and melted butter, and mix until combined and moistened. Press the mixture onto the bottom and up the sides of a 9-inch (23cm) tart pan. Place it in the fridge for 1 hour or in the freezer for 30 minutes to firm up before adding the filling.
  • To make the filling: Melt chocolate over bain marie or in the microwave in 30-second intervals. White chocolate is very sensitive to heat and can separate so keep an eye on it. Add strawberry puree and mix until smooth and combined. Let cool slightly before adding to the whipped cream.
  • Using an electric mixer fitted with the whisk attachment, whisk heavy cream until soft peaks form (they should hold their shape but have a soft texture). Using a spatula, gently fold half of the chocolate mixture into the whipped cream, then fold in the other half. Pour mixture over chilled crust and freeze just until set, about 30 minutes (if you place it in the fridge instead of freezer, chill for longer, until set).
  • To make the jam glaze: warm the jam in the microwave, then strain the mixture through a fine mesh strainer to remove the seeds. Gently spread or pour while it's still slightly warm and runny over the tart and tilt the pan to run the glaze all over the top until it touches the crust.
  • Garnish with whipped cream and fresh strawberries, if you like.
  • Tart will keep, covered well, for up to 5 days in the fridge.

An airy (2-ingredient!) white chocolate mousse filling in a buttery graham cracker crust piled high with fresh strawberries.

2 tbsp granulated sugar
1/4 cup salted butter (melted)
1 1/3 whipping cream (chilled)
6 1/2 oz good quality white chocolate (coarsely chopped)
1 package (1 lb Driscoll's strawberries, halved (or large berries quartered))
2 tbsp strawberry jam

Steps:

  • Preheat oven to 350ºF. In a medium bowl, stir together graham cracker crumbs with sugar, then add melted butter and stir until thoroughly combined. Press the mixture into a 9" tart pan with removable bottom and bake 10 minutes. Cool completely on a wire rack.
  • Meanwhile, make the filling. Combine the white chocolate and 1/3 cup of the whipping cream in a medium microwave-safe bowl. Microwave on 50% power for one minute, stir, then microwave again in 30-second intervals until chocolate is about 75% melted; stir to melt the rest. Cool the chocolate mixture to room temperature on the counter (do not refrigerate or it will cool unevenly and harden at the edges).
  • Whip the remaining cream with electric mixer to stiff peaks. Fold 1/3 of the whipped cream into the cooled chocolate (by gently cutting it down through the centre with a spatula and scooping back up and over until fully incorporated). This lightens the mixture so you don't deflate the whipped cream. Gently fold in the remaining whipped cream.
  • Scrape the filling into the cooled crust and smooth the top. Refrigerate until set, 2-3 hours, then top with the strawberries. Melt the jam in a small saucepan or in the microwave, then brush on top. Serve immediately or return the tart to the refrigerator to set the jam, about 30 minutes.

1 1/4 cups unbleached all purpose flour
1/4 cup sugar
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch pieces
1 large egg yolk
1 tablespoon (or more) ice water
Mousse
6 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
1 1/4 cups chilled whipping cream
1/2 teaspoon vanilla extract
2 large egg whites
1/8 teaspoon cream of tartar
1/3 cup seedless strawberry jam
1 tablespoon fresh lemon juice
1 16-ounce basket strawberries, hulled, thinly sliced lengthwise

Steps:

  • For crust:
  • Blend flour, sugar, and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Whisk egg yolk and 1 tablespoon ice water in small bowl to blend; add to processor and process until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Roll out dough on floured surface to 13-inch round. Transfer dough to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1/2 inch. Fold overhang in and press onto sides, forming double-thick sides. Pierce crust all over with fork. Freeze crust 30 minutes.
  • Preheat oven to 375°F. Line crust with foil; fill with dried beans or pie weights. Bake until crust sides are light brown, about 25 minutes. Remove foil and beans; bake until crust is cooked through and golden brown, about 20 minutes longer. Cool crust completely in pan on rack.
  • For mousse:
  • Combine white chocolate and 1/4 cup whipping cream in large metal bowl. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water) and stir until chocolate is melted and smooth. Remove bowl from over water; cool chocolate mixture until lukewarm, about 15 minutes.
  • Beat remaining 1 cup whipping cream and vanilla in large bowl until peaks form. Using clean dry beaters, beat egg whites with cream of tartar in medium bowl until stiff but not dry. Fold whites into chocolate mixture, then fold in whipped cream. Transfer mixture to cooled crust; smooth top. Chill overnight.
  • Combine jam and lemon juice in small saucepan; bring to simmer, stirring over medium heat until jam melts. Remove from heat. Arrange sliced strawberries in concentric circles atop tart. Brush berries with melted jam mixture. Chill tart up to 2 hours and serve.

1/2 teaspoon salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
3 egg yolks
3 ounces imported milk chocolate (such as Lindt or Droste), finely chopped
Filling
3 tablespoons crème de cassis liqueur
1 teaspoon unflavored gelatin
1 1/4 cups chilled whipping cream
7 ounces imported white chocolate (such as Lindt or Droste), chopped
1 1/2-pint basket fresh raspberries
2 1-pint baskets strawberries, halved
2 ounces imported white chocolate for curls (optional)

Steps:

  • For Crust:
  • Combine flour, sugar and salt in large bowl. Add butter and cut in using fingertips or pastry blender until mixture resembles coarse meal. Beat egg yolks to blend in small bowl. Pour yolks over flour mixture and stir with fork to combine. Gather dough into ball; flatten into disk. Wrap dough in plastic and refrigerate 30 minutes. (Dough can be prepared 3 days ahead. Keep refrigerated. Let dough soften slightly at room temperature before continuing.)
  • Preheat oven to 375°F. Roll out dough between sheets of waxed paper to 14-inch round (scant 1/4 inch thick). Peel off top sheet of waxed paper. Using second sheet of paper as aid, invert dough into 11-inch-diameter tart pan with removable bottom. Carefully press into pan. Trim and finish edges, patching any holes with scraps. Freeze until firm about 15 minutes.
  • Line crust with aluminum foil and fill with dried beans or pie weights. Bake until sides are set, about 23 minutes. Remove beans and foil and continue baking until crust is golden brown, piercing bottom with toothpick if crust bubbles, about 12 minutes. Remove from oven. Immediately sprinkle chocolate over crust. Let stand until chocolate melts, about 4 minutes. Using back of spoon, carefully spread chocolate over bottom and up sides of crust. Cool.
  • For Filling:
  • Measure 1 tablespoon crème de cassis liqueur into heavy small saucepan; sprinkle unflavored gelatin over and let stand 5 minutes to soften. Add 3/4 cup whipping cream and stir over low heat until gelatin dissolves. Add 7 ounces white chocolate and stir until melted and smooth. Transfer to medium bowl. Refrigerate until cool but not set, stirring occasionally, about 30 minutes.
  • Whip remaining 1/2 cup whipping cream in medium bowl until soft peaks form. Add remaining 2 tablespoons crème de cassis and whip until stiff peaks form. Fold whipped cream into white chocolate mixture. Fold in raspberries. Spoon filling into crust. Refrigerate until beginning to set, about 30 minutes. Arrange strawberries atop filling, cut sides down and points toward edge. To form optional white chocolate curls, slide vegetable peeler across white chocolate. Garnish tart with chocolate curls. (Tart can be prepared 6 hours ahead. Refrigerate.)

Add egg yolk and 1 tablespoon of ice water to the processor and pulse just until most of the mixture forms moist clumps, adding more water, 1 teaspoon at a time, as needed if the dough is too dry. Dump the dough into 9-inch-diameter tart pan with removable bottom. Press the dough evenly over the bottom and up the sides of the tart pan. Pierce crust all over with a fork and freeze the crust for 30 minutes.
  • Preheat the oven to 375 degrees. Cover the chilled tart crust with foil and fill with pie weights or dried beans. Bake foil-covered crust in preheated oven for 25 minutes. Remove foil and weights or beans and bake uncovered an addition 8-12 minutes or until edges are golden and the center of the crust is just baked (it won't have a lot of color). Remove from oven and place on a wire rack to cool completely.
  • Meanwhile, make the mousse; Place the chopped white chocolate and 1/4 cup heavy whipping cream in a heatproof bowl set over a pan of simmering water (don't let the bottom of the bowl come in contacting the water.) and stir until the chocolate is melted and the mixture is smooth. Remove the bowl and set aside. Cool for 15 minutes.
  • In a medium bowl, using an electric mixer, beat the remaining 1 cup of whipping cream and vanilla until firm peaks form (firm but not overbeaten). Set aside.
